COCONUT MANGO LASSI



Coconut Mango Lassi image

A creamy yogurt-based drink enjoyed throughout India, this hydrating mango lassi is infused with coconut cream and coconut water for added satisfaction.

Number Of Ingredients 5

2 1/2 cups coconut water
1 (15-ounce) can sliced mango in light syrup, drained, or 1 ripe mango, peeled and chopped, 2 cups, plus mango slices, optional garnish
1/2 cup plain lowfat yogurt
1/4 cup cream of coconut
1 tablespoon fresh lime juice

Steps:

  • In a blender, add 1 1/2 cups of the coconut water, mango, yogurt, cream of coconut and lime juice and puree until smooth. Transfer to large pitcher and stir in the remaining 1 cup of coconut water. Refrigerate until ready to serve. Pour into glasses and garnish with mango slices, if desired. Cook's Note: For a sweeter lassi, add 1 to 2 tablespoons of sugar, to taste.

Mango Lassi With Coconut Water image

This is my variation on a classic. The coconut water is what elevates this above a basic mango lassi.

1 whole mango
300 ml coconut water
30 ml greek strained yogurt (2% or higher)
30 ml cream of coconut

Steps:

  • Slice and peel mango and toss in a blender.
  • Add in coconut water (I use a single serving drink box of Zico but if I'm feeling more adventurous I will open a Thai young coconut and pour that water - one young coconut has about 300 ml in it).
  • Add the yogurt (I use Fage 2%) and the coconut cream (Coconut cream is sold in cans in the grocery store for use in pina coladas).
  • Blend until smooth (in my blender 20 seconds).
  • Serve in a tall glass or in the empty coconut with a straw.
