4 egg whites
1/2 tsp. cream of tartar
1 cup sugar
1 cup BAKER'S ANGEL FLAKE Coconut, divided
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup cold milk
1 cup thawed COOL WHIP Whipped Topping
1 cup pastel candy-coated chocolate-covered almonds

Steps:

  • Heat oven to 250ºF.
  • Beat egg whites and cream of tartar in medium bowl with mixer on high speed 5 min. or until mixture forms soft peaks. Add sugar, 1 Tbsp. at a time, beating constantly after each addition until stiff peaks form. Beat additional 3 min. or until mixture is glossy. Gently stir in half the coconut.
  • Spoon egg white mixture into 10 mounds on each of 2 parchment-covered baking sheets. Use back of spoon to shape each into 2-1/2-inch round, then make depression in center of each mound to resemble nest. Sprinkle remaining coconut around edges; press gently into egg white mixture to secure.
  • Bake 50 min. to 1 hour or until meringues are dry and coconut is golden brown. Cool completely on baking sheets. Meanwhile, beat pudding mix and milk with whisk 2 min. (Pudding will be thick.) Stir in COOL WHIP. Refrigerate until ready to use.
  • Spoon pudding mixture into meringue nests just before serving; top with almonds.

1 cup egg whites (approximately 8 eggs separated, reserving the yolks for another use)
1 teaspoon lemon juice
1 1/2 cups superfine sugar
1/4 cup shredded coconut
3 tablespoons butter
2 pears, peeled, cored, 1/2 - inch dice
2 apples, peeled, cored, 1/2 -inch dice
1/2 cup dried, figs, sliced
1/2 cup dried apricots, sliced
1/4 cup raisins
1/4 cup maple syrup
1/4 cup orange liquor
1/2 cup sliced almonds

Steps:

  • Preheat oven to 250 degrees.
  • In the bowl of stand mixer, combine egg whites and lemon juice. Whip the whites to soft peaks, adding 1 cup of sugar while whipping. Continue to whip to stiff, but not dry, peaks while adding remaining sugar and coconut.
  • Place mixture in a pastry bag with a star tip. On a parchment lined cookie sheet, pipe out 3-inch circles or ovals. Bake for 1 hour, turn off oven and leave meringues in oven to dry for 6 hours or overnight.
  • Heat butter in skillet. Add pears and apples and saute just until fruit begins to caramelize. Add figs, apricots and raisins. Add syrup and liquor and cook for 2 minutes more. Add almonds. Cool slightly and serve in meringue shells.

2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks, lightly beaten
1 cup sweetened shredded coconut, finely chopped
2 tablespoons butter
1/2 teaspoon vanilla extract
MERINGUE:
3 large egg white, room temperature
1/4 teaspoon cream of tartar
6 tablespoons sugar
1/2 cup sweetened shredded coconut

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 350°., In a small heavy saucepan, mix sugar, cornstarch and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Gently stir in chopped coconut, butter and vanilla until butter is melted., For meringue, in a small bowl, beat egg whites and cream of tartar on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until soft glossy peaks form., Transfer hot filling to crust. Spread meringue evenly over filling, sealing to edge of crust. Sprinkle with flaked coconut. Bake until meringue is golden, 12-15 minutes. Cool 1 hour on a wire rack. Refrigerate at least 3 hours before serving.

1/4 teaspoon cream of tartar
1/4 teaspoon coconut extract
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract

Steps:

  • Beat together egg whites, cream of tartar, coconut, almond, and vanilla extracts, and salt.
  • Gradually beat in sugar 2 tablespoons at a time.

an unbaked 9-inch pie shell
3 jumbo egg yolks
a 15-ounce can cream of coconut such as Coco Lopez
1/2 cup well-shaken buttermilk
a 7-ounce package sweetened flaked coconut (about 2 2/3 cups)
For meringue
4 jumbo egg whites
2/3 teaspoon cream of tartar
1/2 cup sugar

Steps:

  • Prebake pie shell according to package instructions and cool completely.
  • Preheat oven to 350°F.
  • In a bowl whisk together yolks, cream of coconut, and buttermilk and stir in coconut. Pour filling into shell and bake in middle of oven 35 minutes, or until filling is set. Remove pie from oven and keep oven on.
  • Make meringue immediately:
  • In a large bowl with an electric mixer beat whites with cream of tartar until they hold soft peaks. Gradually beat in sugar and beat until meringue holds stiff, glossy peaks. 2 2/3 cups sugar
4 large whole eggs
4 large egg whites
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees. Butter two 9-by-9-by-2-inch cake pans; line bottoms with parchment paper. Butter parchment and dust with flour, tapping out excess; set aside.
  • Whisk together flour, baking powder, and salt in a large bowl. Place shredded coconut in bowl of a food processor; pulse until finely chopped. Stir chopped coconut into flour mixture until combined; set aside.
  • Beat together butter and sugar in bowl of an electric mixer fitted with the paddle attachment until light and fluffy, about 4 minutes, scraping down side of bowl as needed. Add whole eggs, egg whites, and vanilla; beat until fluffy and combined. With mixer on low, add flour mixture, alternating with coconut milk, beginning and ending with flour mixture, mixing well after each addition.
  • Divide batter evenly between prepared pans; smooth with an offset spatula. Bake, rotating pans halfway through, until cakes are golden brown and a cake tester inserted into center comes out clean, about 45 to 50 minutes.
  • Transfer pans to a wire rack to cool 30 minutes. Invert cakes onto rack; peel off parchment paper. Reinvert cakes and let them cool completely, top sides up, then wrap individually in plastic wrap. Transfer to freezer for 15 to 20 minutes.
  • Using a serrated knife, trim tops of cake layers to make them level. Place one layer on a cake plate; spread top with 1 1/2 cups meringue. Top with remaining layer, cut side up. Using offset spatula, spread remaining frosting over entire cake, swirling to cover in a decorative fashion. Sprinkle entire cake with coconut curls, bending and curling as desired. Cake can be kept refrigerated, covered with a cake dome, up to 3 days.

1 ½ cups coconut milk
2 eggs, beaten
¾ cup white sugar

¼ teaspoon cream of tartar
