Creamy Coconut Curry with Shrimp image

My mother gave this recipe to me and it is great for an impressive dinner party. Fresh shrimp in a wonderful creamy coconut curry sauce served over rice. Top with chopped green onion, minced red bell pepper, chopped roasted peanuts, or toasted flaked coconut, if you like.

1 tablespoon butter
1 pound large shrimp, peeled and deveined
1 cup chopped onion
1 cup chopped red bell pepper
3 tablespoons all-purpose flour
1 tablespoon curry powder
¼ teaspoon freshly ground black pepper
⅛ teaspoon salt, or more to taste
1 cup chicken broth
1 cup coconut milk
hot cooked rice

Steps:

  • Melt butter in a large skillet over medium heat. Add shrimp and saute until they just turn pink, 3 to 5 minutes. Remove shrimp from the skillet and set aside.
  • Add onion and bell pepper to the skillet and cook until crisp-tender, 3 to 5 minutes. Whisk in flour, curry powder, pepper, and salt. Cook, whisking constantly, for 1 minute.
  • Gradually whisk in chicken broth and coconut milk; continue cooking over medium heat until mixture is thickened and bubbly. Stir in cooked shrimp and cook over medium heat, stirring constantly, until shrimp are thoroughly heated. Serve curry immediately over rice.

18 uncooked jumbo shrimp (about 1 pound)
1/3 cup cornstarch
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
3 large egg whites
2 cups sweetened shredded coconut
Oil for deep-fat frying
APRICOT-PINEAPPLE SALSA:
1 cup diced pineapple
1/2 cup finely chopped red onion
1/2 cup apricot preserves
1/2 cup minced fresh cilantro
2 tablespoons lime juice
1 jalapeno pepper, seeded and chopped
Salt and pepper to taste
Lime wedges, optional

Steps:

  • Peel and devein shrimp, leaving tails intact. Make a slit down inner curve of each shrimp, starting with the tail; press lightly to flatten. In a shallow dish, combine the cornstarch, salt and cayenne; set aside. In a bowl, beat egg whites until stiff peaks form. Place the coconut in another shallow dish. Coat shrimp with cornstarch mixture; dip into egg whites, then coat with coconut., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, for 1 to 1-1/2 minutes on each side or until golden brown. Drain on paper towels., In a bowl, combine salsa ingredients. Serve with shrimp and, if desired, lime wedges.

1 lb jumbo shrimp, with tails veins removed, slit open butterfly-style, 24 shrimp 2 per person
4 ounces pineapple pepper chutney
4 ounces cream cheese
1 teaspoon minced candied ginger
1/2 cup toasted coconut, divided
hot pepper sauce
1/4 cup sliced scallions or 1/4 cup chives, divided

Steps:

  • Boil shrimp in very well seasoned (Old Bay seasoning or salt and pepper) water for 4 minutes. Dip in ice cold water bath then remove shells but leave the tail.
  • Cut the butterfly deeper so you can overfill the cream cheese mixture.
  • In a small bowl of a food processor, pulse the cream cheese, chutney, ginger and pepper sauce to taste till combined add ½ the scallions and ½ the coconut and pulse just to combine.
  • Generously scoop the mixture into each of the shrimp.
  • Mix the remained of the scallions and the coconut. Then roll the filled part of the shrimp into the scallion/coconut mixture.
  • Chill for 1 hour. Arrange on a serving platter. Walla! All I have to say is your taste buds will be happy! ;).

1 1/2 cups cornstarch, divided
2 cups plain breadcrumbs
2 cups sweetened flaked coconut
1 cup Coco Lopez (cream of coconut)
2 tablespoons powdered sugar
1 lb of raw shellled deveined and butterflied shrimp
1/3 cup sour cream
1/3 cup crushed pineapple (drained)
1/2 cup Coco Lopez

Steps:

  • *Caution when making this recipe make sure that the oil is not too hot, for the shrimp will burn on the outside and be raw inside.
  • In a large plate, place 1 cup corn starch and set aside.
  • In a bowl combine 1 cup pina colada mix and powdered sugar and stir until well combined.
  • In another large plate, combine bread crumbs, 1/2 cup cornstarch and coconut whisk around to blend together.
  • Dip and coat each shrimp in the cornstarch. Then dip and coat each shrimp in the pina colada mix, then dip and coat it in the bread crumb mixture. Repeat it one more time, by dipping them in the pina colada mix and then the bread crumb mix.
  • Bring oil to a boil and temperature of 375 degrees. Then place each shrimp in and let boil until golden brown.
  • Do not overcrowd pan to avoid a drop in temperature.
  • Place on colander to drain.
  • Assemble dipping sauce in a small bowl by combining sour cream, coco lopez and pineapple and mix well.Serve and Enjoy!

1 tablespoon olive oil
1 green onion (chopped)
1 tablespoon amaretto liquor
1/2 cup coconut milk
1/4 cup heavy cream
2 tablespoons sugar (or less)
1 teaspoon coconut extract
1 teaspoon vanilla extract

Steps:

  • Step 1: In a wok heat olive oil over medium-high heat. Season shrimp with salt and pepper. Add shrimp and sauté for 2-3 minutes. Add green onions and amaretto liquor. Cooking for another 1-2 minutes until the shrimp begins to caramelize. Step 2: Remove the shrimp from the pan and set aside. Add to the wok- coconut milk, heavy cream, and sugar. Bring to a boil, reduce heat and simmer (stirring occasionally) until the sauce is reduced by half (about 6 minutes). Step 3: Add shrimp back into the wok and add vanilla and coconut extracts. Simmer for another 1-2 minutes and serve over rice. (Makes 4 servings)
