Steps:

  • In cup, combine oregano, lemon peel, 2 teaspoons oil, and salt. Rub both sides of cod fillets with oregano mixture.
  • In 12-inch nonstick skillet, heat 1 tablespoon oil on medium 1 minute. Add cod to skillet, and cook 8 to 10 minutes or just until fish turns opaque throughout, turning over once. Transfer cod to 4 dinner plates.
  • In same skillet, heat remaining 1 tablespoon oil on medium 1 minute. Stir in tomatoes, olives, capers, crushed red pepper, and garlic; cook 6 to 8 minutes or just until tomatoes are heated through and skins split.

Cod Livornese is an Italian seafood dish that is smothered in a flavorful light tomato sauce made with crushed tomatoes, capers, kalamata olives, and garlic. Super easy, delicious, and makes dinner ready in less than 30 minutes!

8-ounce ( 1/2 pound) clean cod
3 garlic cloves - sliced
3 Tbsp. extra virgin olive oil
2 Tbsp. capers
5 to 6 kalamata olives - pitted and sliced
2/3 cup white wine
bunch of freshly chopped parsley, and extra for garnish
1/8 tsp. crushed red pepper flakes
1 cup crushed tomatoes with liquid ( or 1 cup marinara sauce)
sea salt and fresh cracked pepper

Steps:

  • Season cod with some salt and black pepper.
  • In a large 10-inch deep non-stick skillet, heat olive oil on medium heat and toss in the garlic. Saute garlic for about 1 to 2 minutes.
  • Add in the codfish and sear cod for 1 minute. Pour in the white wine, and allow the wine to reduce a little, about 1 to 2 minutes until it softens.
  • Toss in the capers, fresh parsley, kalamata olives, crushed red pepper flakes, and crushed tomatoes.
  • Cover with the lid, and reduce the heat to low. Simmer the sauce with Cod for about 5 to 8 minutes. Codfish should turn opaque and be fully cooked. Taste the tomato sauce, and adjust if needed, season with salt and black pepper to taste.
  • Using a large spatula, carefully transfer fish to a serving plate, spoon sauce over the fish. Garnish with a sprinkle of chopped parsley on top. Serve immediately.
  • Serves 1 to 2

Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
  • Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
  • Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don't worry if some crumbs get into the sauce!)
  • Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.

I love the bold flavors in this recipe! The fish stays nice and moist since you cook it in a sauce. Make the sauce a little runnier if you want to serve it over rice or pasta in addition to the fish. I usually use swordfish, but you can use any firm fish such as cod or halibut.

1/2 cup onion, chopped
1/2 cup white wine
10 large green pimento stuffed olives, sliced
1 1/2 tablespoons garlic, chopped

1/2-1 cup clam juice (or use a seafood broth)
1 (14 1/2 ounce) can diced tomatoes with juice
2 lbs fish steaks

Steps:

  • Heat olive oil and saute chopped onion until translucent.
  • Add wine and boil until reduced by at least half.
  • Add remaining ingredients except for the fish steaks.
  • Simmer for about 15 minutes, until thickened. Cover if you want to keep it "saucy".
  • Add the fish steaks to the sauce and continue cooking about 10-15 minutes, until fish just flakes.

grated zest of one lemon

Steps:

  • 1. Heat oven to 425* 2. Season both sides of fish with salt and pepper, and place in baking dish which has been lightly coated with olive oil. 3. Mix tomatoes, olives, capers, onions, garlic, juice, zest, herbs, salt and pepper; pour over fish, covering completely. 4. Bake in oven for 15-20 minutes 4. Remove from oven and let stand for 5 minutes.
