SOUR CREAM COFFEE CAKE WITH CINNAMON-WALNUT SWIRL

Sour Cream Coffee Cake with Cinnamon-Walnut Swirl image

From Zingerman's Bakehouse, a rich and buttery sour cream coffee cake with a sublime cinnamon-nut swirl.

Categories     Breakfast & Brunch

Time 1h40m

Yield 16

Number Of Ingredients 11

1 heaping cup walnut halves, roughly chopped
3 tablespoons packed light brown sugar
2 teaspoons cinnamon
2⅓ cups all-purpose flour, spooned into measuring cup and leveled-off
½ teaspoon baking soda
1 teaspoon salt
2 cups granulated sugar
2 sticks (1 cup) unsalted butter, room temperature
3 large eggs
1 (8 oz) container full fat sour cream
1½ teaspoons vanilla extract

Steps:

  • Make the Cinnamon-Walnut Swirl: Preheat the oven to 325°F and set an oven rack in the middle position. Toast the walnuts on a rimmed baking sheet until they're fragrant and golden brown, 10 to 15 minutes. Transfer the walnuts to a plate to cool. In a small bowl, mix together the walnuts, brown sugar, and cinnamon. Set aside.
  • Reduce the oven temperature to 300°F. Spray a 9- or 10-in Bundt pan with nonstick cooking spray and dust with flour. Tap out any excess flour. Alternatively, spray the pan with a nonstick spray with flour in it, such as Baker's Joy or Pam with Flour.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment or beaters, combine the sugar and butter. Beat on medium speed until pale and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition until the mixture is homogenous. On low speed, mix in the sour cream and vanilla. The batter will look a little curdled at this point; that's okay. Scrape down the sides and bottom of the bowl to make sure all of the ingredients are evenly incorporated.
  • Gradually add the flour mixture and mix on low speed until the batter is smooth and homogeneous.
  • Scoop ⅓ of the batter into the prepared pan. (It won't seem like enough, especially if you're using a 10-in Bundt -- that's okay. Just do your best to smooth it into an even layer with a spatula or back of a spoon.) Sprinkle half of the cinnamon-walnut mixture evenly over the batter. Cover with another ⅓ of the remaining batter, using a spoon or spatula to spread the batter evenly over the pan and to the edges. Sprinkle the remaining nut mixture evenly over the batter and cover with the remaining batter, spreading it evenly over the nut mixture.
  • Bake for 65 to 75 minutes, until the cake is golden and a cake tester comes out clean. Cool the cake in the pan for 15 minutes. Do not let the cake cool in the pan for much longer than this or the brown sugar in the streusel might stick to the sides of the pan and make it difficult to release the cake. Place a wire rack on top of the Bundt pan and then invert the pan to release the cake. Let the cake cool completely before serving. The cake will keep well in an airtight container at room temperature for up to a week.
  • Freezer-Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, double-wrap it securely with aluminum foil or plastic freezer wrap, or place it in heavy-duty freezer bag. Thaw overnight on the countertop before serving.

Time 1h55m

Yield Makes one 9-inch cake

Number Of Ingredients 17

1 3/4 cups all-purpose flour
1 cup packed light-brown sugar
1 1/4 teaspoons ground cinnamon
Coarse salt
1 1/2 sticks cold unsalted butter, cut into small pieces
1 1/2 cups coarsely chopped toasted pecans
1 stick unsalted butter, room temperature, plus more for pan
2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
Coarse salt
1 cup granulated sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
1 cup sour cream
1 cup confectioners' sugar
2 tablespoons whole milk

Steps:

  • Make the streusel topping: Mix together flour, 3/4 cup brown sugar, 1 teaspoon cinnamon, and 1 teaspoon salt. Cut in butter using a pastry cutter or rub in with your fingers until small to medium clumps form. Mix in 1/2 cup pecans. Refrigerate until ready to use.
  • Make the streusel center: Mix together remaining 1/4 cup brown sugar, 1/4 teaspoon cinnamon, and 1 cup pecans.
  • Preheat oven to 350 degrees. Make the cake: Butter a 9-inch tube pan with a removable bottom. Sift flour, baking powder, baking soda, and 1/2 teaspoon salt into a bowl.
  • Beat butter and granulated sugar with a mixer on medium speed until pale and fluffy, about 2 minutes. Beat in eggs, 1 at a time, then vanilla. Beat in flour mixture in 3 additions, alternating with sour cream, beginning and ending with flour. Continue to beat until well combined.
  • Spoon half the batter into pan. Sprinkle streusel center mixture evenly over batter. Top with remaining batter, and spread evenly using an offset spatula. Sprinkle streusel topping mixture evenly over batter.
  • Bake until cake is golden brown and a toothpick inserted into the center comes out clean, about 55 minutes. Transfer pan to a wire rack, and let cool completely. Remove cake from pan, and transfer to parchment.
  • Make the glaze: Mix together confectioners' sugar and milk. Drizzle over cake, and let drip down sides. Let set for 5 minutes before serving.

CINNAMON SWIRL BUNDT COFFEE CAKE

Cinnamon Swirl Bundt Coffee Cake image

A friend of mine gave me this recipe years ago. Sometimes I lower the fat content by using fat-free sour cream or yogurt instead of the sour cream. Enjoy! This can also be made into small loaf cakes which can be frozen easily.

Time 1h20m

Yield 12

Number Of Ingredients 11

¾ cup butter, room temperature
1 ½ cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup sour cream
2 ½ cups all-purpose flour
1 teaspoon baking soda

¼ cup white sugar

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease a 10-inch bundt pan.

  • Combine flour, baking soda, and baking powder. Pour flour mixture into batter alternately with the sour cream, mixing until just incorporated. Fold in walnuts, mixing just enough to evenly combine. Pour half the batter into the prepared pan.
  • Mix the remaining 1/4 cup of white sugar with the cinnamon.
  • Sprinkle cinnamon sugar over the batter in the pan. Drop remaining cake batter in heaping spoonfuls over filling, covering it as best you can.
  • Bake in preheated oven for 8 minutes. Lower heat to 350 degrees F (175 degrees C) and bake for an additional 40 minutes, or until a tester comes out clean.

COFFEE CRèME BUNDT CAKE

Coffee Crème Bundt Cake image

My dad drinks instant coffee that he first "brews" in the microwave and then dilutes with overflowing spoonfuls of condensed milk. As a youthful coffee snob, I turned up my nose and insisted that what he drank wasn't real coffee. But as I've gotten older and become less of a jerk, I've realized that what's cool doesn't matter when it's delicious. My dad's morning cup, super sweet and creamy with just a hint of coffee, is damn good. And now, I always ask him to make me one, too. This glorious coffee-flavored Bundt is more sweet than coffee and has a gooey, condensed milk glaze that you may have to resist eating with a spoon.

Time 2h35m

Yield 10 to 12 servings

Number Of Ingredients 18

2 1/2 sticks (1 1/4 cups) unsalted butter, at room temperature, plus more for pan
2 1/2 cups all-purpose flour, plus more for pan
2 teaspoons freshly ground cardamom
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1/4 teaspoon baking soda
1 tablespoon pure vanilla extract
3 tablespoons instant espresso powder
3/4 cup packed dark brown sugar
3/4 cup granulated sugar
3 large eggs, at room temperature
3/4 cup sour cream
3/4 cup sweetened condensed milk
2 tablespoons unsalted butter
1 large egg yolk
1/2 teaspoon kosher salt
1/4 teaspoon instant espresso powder
2 1/4 ounces walnuts or pecans, chopped (1/2 cup)

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 12-cup Bundt cake pan.
  • In a medium bowl, whisk together the flour, cardamom, baking powder, salt, and baking soda. In a large bowl, combine the vanilla and espresso powder. Add the dark brown sugar, granulated sugar, and butter and beat with an electric mixer on medium speed until fluffy, about 4 minutes. Beat in the eggs, 1 at a time, scraping down the sides of the bowl as necessary, until well combined.
  • Reduce the speed to low and alternate adding the flour mixture and the sour cream, starting and ending with the flour mixture, and mix until just combined. Transfer the batter to the prepared pan and smooth the top. Bake until puffed and set and a skewer inserted into the center comes out with moist crumbs attached, 50 to 55 minutes. Transfer the cake to a wire rack to cool for about 15 minutes, then flip out the cake onto the rack to cool completely.
  • Prepare the glaze: In a small saucepan, heat the condensed milk, butter, egg yolk, salt, and espresso powder over medium-low heat, stirring constantly, until thickened, about 4 minutes. Drizzle the warm glaze over the cooled cake. Top with the walnuts. Serve warm or at room temperature.
