1 cup butterscotch chips, divided
8 cups hot brewed coffee
1/2 cup half-and-half cream
5 to 8 tablespoons sugar
Whipped cream in a can

Steps:

  • In a microwave, melt 1/2 cup butterscotch chips; stir until smooth. Cut a small hole in the corner of a pastry or plastic bag; insert a #4 round tip. Fill with melted chips. Pipe eight garnishes onto a waxed paper-lined baking sheet. Refrigerate until set, about 10 minutes., In a large pitcher, stir coffee and remaining butterscotch chips until chips are melted. Stir in cream and sugar. Pour into mugs. Top each serving with whipped cream and a butterscotch garnish.

1 1/4 cups packed light brown sugar
2/3 cup light corn syrup
1/4 cup unsalted butter
1 cup heavy cream
2 teaspoons vanilla extract

Steps:

  • Combine the sugar, corn syrup, butter, and 3/4 cup of the cream in a heavy-bottomed saucepan. Bring to a boil, stirring, over medium heat. Turn the heat to medium-low. Place a candy thermometer in the pan. Boil the sugar, without stirring, until the mixture reaches 234 degrees F., (the soft ball stage).
  • Remove pan from the heat, and carefully add the remaining cream and vanilla. Cool slightly. Serve the sauce warm.
  • To store the butterscotch sauce, pour it into a heatproof jar. Cover with the lid and refrigerate for up to 2 week. To serve, loosen the cover on the jar and set jar in small pot of simmering water until heated through. Serve.

4 tablespoons unsalted butter
1/2 cup dark brown sugar
1/2 cup light brown sugar
2 teaspoons corn syrup
1/4 teaspoon fine sea salt

2 teaspoons dark rum

Steps:

  • Pour cream into a large saucepan, and bring to a simmer over low heat. Pull saucepan almost off burner, and reduce cream until thickened and measures about 2 1/2 cups, whisking frequently, 30 minutes. Pour hot cream into 4-cup glass measurer, and set aside.
  • In the same saucepan, melt butter over low heat until foamy. Add sugars and corn syrup, and stir with wooden spoon until melted and bubbly, about 1 minute. Pour cream into saucepan, whisking constantly, until sugars have dissolved completely and sauce is smooth, about 1 minute. Remove pan from heat. Add salt, vanilla and rum. Serve warm. To reheat sauce, warm in a saucepan over low heat, stirring constantly. Do not boil.

8 oz (1 cup) water (preferably filtered)
6 oz (just shy of 1 cup) granulated sugar
2 oz (about 1/4 cup) dark brown sugar
1 oz (2 Tablespoons) water (preferably filtered)
1/2 teaspoon kosher salt (I use Morton's)
1 oz (2 Tablespoons) unsalted butter
1/4 teaspoon vanilla extract

Steps:

  • Put the cup of water and granulated sugar in a heavy-bottomed saucepan.
  • Bring to a boil, stirring a couple of times to make sure all the sugar dissolves.
  • Allow the mixture to boil for just a few seconds, and then remove it from the heat.
  • Leave the syrup in the pan and keep it convenient to the stove.
  • In a heavy-bottomed saucepan that is taller than you think you'll need, combine the dark brown sugar, the ounce of water, butter, and salt.
  • Stir a couple of times, and then put the lid on the pan.
  • Heat over medium heat until all the butter has melted and the sugar is dissolved.
  • Remove the lid and cook the mixture together until it reaches 300-310F on an instant-read thermometer.
  • Carefully pour about half the simple syrup into the butterscotch, stirring well. Mixture will bubble up a Very Lot, and the butterscotch may harden.
  • Once the bubbling has calmed down, add the rest of the simple syrup and whisk over low heat until the butterscotch is completely melted.
  • Whisk in the vanilla off the heat.
  • Allow the syrup to cool and then store in an airtight container in the fridge for up to 2 weeks.
  • Warm the syrup before serving and then stir well to incorporate any butter that is floating on top.

1/4 cup light corn syrup

1 teaspoon cider vinegar
1/2 cup heavy cream
2 teaspoons vanilla

  • In a 1 1/2-quart heavy saucepan bring sugar, corn syrup, and water to a boil over moderate heat, stirring until sugar is dissolved. Boil mixture, without stirring but swirling pan occasionally, until a golden caramel. Remove pan from heat and add butter, vinegar, and a pinch salt, swirling pan until butter is melted. 2 pods cardamom
1 stick cinnamon
1 1/2 tablespoons molasses
1/4 cup white wine
1 cup chicken broth
1 shot espresso
1/2 cup sour cream
1 tablespoon butter

Steps:

  • Put the coffee beans, cardamom and cinnamon in a small saucepan and place over low heat. Shake the pan and lightly toast the coffee beans and spices, about 10 minutes. Add the molasses and cook until it bubbles intensely and thickly coats the beans. Pour in the white wine and chicken broth and bring to a simmer. Reduce by one-third. Strain the sauce into another saucepan, then whisk in the espresso, sour cream and butter. Cook for a minute or two. (Don't let it boil.) Season to taste with salt and pepper. When ready to serve, reheat gently and, if you have one, buzz it with an immersion blender to make it frothy.
