CINNAMON CHIP SCONES



Cinnamon Chip Scones image

These sweet cinnamon scones are buttery and moist with crisp crumbly edges and soft flaky centers. Read through the recipe before beginning. You can skip the chilling for 15 minutes prior to baking, but I highly recommend it to prevent the scones from over-spreading. Feel free to replace the coffee icing with vanilla icing.

2 cups (250g) all-purpose flour (spoon & leveled), plus more for hands and work surface
2 and 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup (1 stick; 115g) unsalted butter, frozen
1/2 cup (120ml) heavy cream (plus 2 Tbsp for brushing)
1/2 cup (100g) packed light or dark brown sugar
1 large egg
1 and 1/2 teaspoons pure vanilla extract
1 and 1/4 cups (225g) cinnamon chips
for topping: coarse sugar
1 cup (120g) confectioners' sugar
3 Tablespoons strong black coffee
1/4 teaspoon pure vanilla extract

Steps:

  • Whisk flour, baking powder, cinnamon, and salt together in a large bowl. Grate the frozen butter using a box grater. Add it to the flour mixture and combine with a pastry cutter, two forks, or your fingers until the mixture comes together in pea-sized crumbs. See video above for a closer look at the texture. Place in the refrigerator or freezer as you mix the wet ingredients together.
  • Whisk 1/2 cup heavy cream, brown sugar, egg, and vanilla extract together in a small bowl. Drizzle over the flour mixture, add the cinnamon chips, then mix together until everything appears moistened.
  • Pour onto the counter and, with floured hands, work dough into a ball as best you can. Dough will be sticky. If it's too sticky, add a little more flour. If it seems too dry, add 1-2 more Tablespoons heavy cream. Press into an 8-inch disc and, with a sharp knife or bench scraper, cut into 8 wedges.
  • Brush scones with remaining heavy cream and for extra crunch, sprinkle with coarse sugar. (You can do this before or after refrigerating in the next step.)
  • Place scones on a plate or lined baking sheet (if your fridge has space!) and refrigerate for at least 15 minutes.
  • Meanwhile, preheat oven to 400°F (204°C).
  • Line a large baking sheet with parchment paper or silicone baking mat. After refrigerating, arrange scones 2-3 inches apart on the prepared baking sheet(s).
  • Bake for 22-25 minutes or until golden brown around the edges and lightly browned on top. Remove from the oven and cool for a few minutes as you prepare the icing.
  • Whisk the icing ingredients together. Drizzle over warm scones.
  • Leftover iced or un-iced scones keep well at room temperature for 2 days or in the refrigerator for 5 days.

1 egg white, lightly whisked
2 tsp sugar
2½ cups flour
½ cup of sugar

½ cup cold butter, cut into 1-inch pieces
1 cup vanilla yogurt
1 egg
2 tsp vanilla extract
¼ cup brown sugar
2 tbsp flour

2 tbsp cold butter, cut into small pieces

Steps:

  • To make the scone filling, combine brown sugar, flour, coffee and cinnamon in a medium bowl. Stir to combine.
  • Add butter, and incorporate until you get coarse crumbs and set aside.
  • To make the scones, preheat oven to 375ºF. Line a baking sheet with parchment paper.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • Cut in butter with your fingers until it resembles pea-size crumbs.
  • In a small bowl, whisk yogurt, egg and vanilla extract. Add this to the flour mixture and stir with a wooden spoon until moistened.
  • Dump onto a lightly floured surface and knead 5 to 6 times.
  • Divide the dough in half, and pat each half into an 8-inch circle.
  • Sprinkle cinnamon-coffee filling over one circle and place remaining dough circle over top.
  • Pinch edges gently together. Cut into 8 wedges and place each wedge on a prepared baking sheet.
  • Brush wedges with egg white and sprinkle with sugar. Bake for 20-25 minutes, until tops are golden.
  • For the glaze, whisk together powdered sugar, ground coffee, and coffee in a small bowl. Drizzle over cooled scones.

2 cups all-purpose flour (for best results, sift or spoon the flour into the measuring cup)
1/3 cup sugar (white)
1 tablespoon baking powder
2 teaspoons ground cinnamon

4 ounces butter (cold)
1 large egg (whisked)
1 teaspoon vanilla extract
1/4 to 1/2 cup milk (or buttermilk or half-and-half)

Steps:

  • Heat the oven to 400 F.
  • In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  • Use a pastry cutter to cut in the butter. The mixture is done when it resembles coarse cornmeal.
  • Add the whisked egg and vanilla extract. Do not stir yet.
  • With minimal stirring, mix in just enough milk, buttermilk or half-and-half to make the dough stick together. It will be crumbly and there should still be a little bit of dry flour left in the mixing bowl.
  • Turn the dough out onto a heavily floured cutting board.
  • Knead the dough slightly. When it is done, it should be easy to handle and smooth.
  • Gently pat the dough into two (1-inch thick) discs.
  • Cut each disc into 6 pieces.
  • Transfer the scones to a buttered or parchment-lined baking sheet and bake in the heated oven for 15 to 20 minutes or until lightly golden. Optional: Turn pan halfway through baking.
  • Cool on the baking sheet.

1 tablespoon unsweetened cocoa powder
1/4 cup granulated sugar
1 tablespoon espresso powder
1 tablespoon baking powder

6 tablespoons cold unsalted butter, cubed
1/2 cup coarsely chopped chocolate-covered espresso beans, optional
1/3 cup plus 2 tablespoons cold heavy cream
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
1 1/2 ounces semisweet chocolate, melted and cooled
1 tablespoon turbinado sugar
1/3 cup mascarpone cheese
2 tablespoons granulated sugar
1/2 cup heavy cream

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Whisk together the flour, cocoa powder, granulated sugar, espresso powder, baking powder and salt. Add the cold cubed butter and use a pastry blender or your fingertips to blend the butter into the dry ingredients until the mixture looks like damp sand with some larger pea-sized pieces of butter throughout.
  • Make a well in the center of the flour and butter mixture. Reserve 1 tablespoon of the chopped espresso beans, if using, for garnish and sprinkle the remainder around the edge of the flour well. In a small bowl, whisk together the cream, egg and vanilla. Pour the liquid ingredients into the well in the center of the flour mixture. Pour in the melted chocolate. Stir just until all the ingredients are moistened and dough begins to come together; it's okay if the mixture has some light and dark streaks. Turn the dough out onto a lightly floured work surface and gently pat it together into a round about 7 inches in diameter and 3/4 inch thick. Using a sharp knife, cut the dough into 8 equal triangular slices. Sprinkle turbinado sugar over the top of the dough and press gently to adhere.
  • Transfer the scones to the prepared baking sheet. Bake until the scones are slightly firm to the touch and a toothpick inserted into one comes out clean (a few small crumbs clinging to the toothpick are okay), 15 to 20 minutes. Transfer the scones to a wire rack to cool completely.
  • Meanwhile, for serving, beat the mascarpone, granulated sugar and heavy cream with an electric mixer on high speed until soft peaks form. Serve the scones with a dollop of the mascarpone cream and a sprinkle of reserved espresso beans.

2 teaspoons cinnamon
6 tablespoons Splenda granular, sugar substitute
3/4 cup light margarine
2 eggs
1/4 cup strong brewed coffee
1/4 cup milk
1/2 cup golden raisins or 1/2 cup chopped dried apricot
1/2 cup chopped pecans or 1/2 cup walnuts
milk, for toppings (optional)
sugar, for toppings (optional)

Steps:

  • Stir together the flour, cinnamon, and Splenda.
  • Cut the margarine into tablespoon pieces and blend with the pastry blender or two knives into the dry mixture (margarine pieces should be the size of small peas.).
  • Mix together the eggs, coffee, and milk.
  • Stir into the dry mixture to form a soft dough.

  • Use your hands to press the layered dough back down into a long rectangle similar in size to the first one you made, flouring your work surface and dough as needed.
  • Make the filling: In a small bowl, whisk together the melted butter, brown sugar and cinnamon. Drizzle the filling on top of the dough and spread it out using a spoon or silicone spatula to fully cover the top surface of the dough.
  • Cut the dough lengthwise into four equal strips. Pick up a strip and transfer it to the prepared baking sheet, filling-side up. Roll it up tightly, then stand it up on one of its flat sides in the center of the sheet. Pick up another strip, and wrap that strip, filling-side in, around the standing coil starting where the first coil left off. Repeat with the two remaining strips. Gently push the circle of coiled dough down to adhere the strips together and flatten the dough to about 9 inches in diameter. Cover and chill the dough for at least 30 minutes, or up to overnight.
  • Position a rack in the center of the oven and heat the oven to 350 degrees. Cut the chilled roll into 8 wedges, leaving the cut pieces together in a circle instead of pulling them apart.
  • Bake, rotating the pan halfway through, until the scones have puffed and browned around the edges, 20 to 24 minutes.
  • Transfer the sheet to a rack to cool for 20 to 30 minutes before carefully moving the warm scones onto a cutting board or serving platter. (If you don't let them cool first, they will fall apart when you try to move them.) Using a knife, gently slice to separate the 8 individual scones, but don't pull them apart.
  • Make the glaze: In a small bowl or glass measuring cup, whisk together the confectioners' sugar and vanilla with enough milk until the glaze is spreadable. Drizzle it over the scones and serve.
