Enjoy these coffee flavored muffins that are made using Betty Crocker® chocolate chip muffin mix.

3/4 cup chocolate milk
1/4 cup vegetable oil
2 tablespoons instant espresso coffee powder or granules
2 eggs
1 box (16.4 oz) Betty Crocker™ chocolate chip muffin mix
1 container (8 oz) mascarpone cheese or 1 package (8 oz) cream cheese, softened
1 tablespoon sugar
1/2 teaspoon instant espresso coffee powder or granules
3 tablespoons coarsely crushed chocolate-covered coffee beans

Steps:

  • Heat oven to 425°F (400°F for dark or nonstick pan). Place jumbo foil baking cup in each of 6 jumbo muffin cups; spray foil cups with cooking spray.
  • In medium bowl, mix chocolate milk, oil, 2 tablespoons coffee powder and the eggs with whisk until blended. Gently stir in muffin mix just until blended (batter may be lumpy). Divide batter evenly among muffin cups, filling each about two-thirds full.
  • Bake 22 to 24 minutes or until browned and tops spring back when touched lightly. Cool 5 minutes (if you did not use foil baking cups, run knife around edges of cups before removing); carefully remove from pan to cooling rack. Cool completely.
  • In medium bowl, mix cheese, sugar and 1/2 teaspoon coffee powder until blended. Spoon about 1 tablespoon cheese mixture on top of each muffin. Sprinkle crushed coffee beans over cheese topping. Store in refrigerator.

It is imperative that you use whole milk and that you carefully fold the ingredients together to have the right consistency for your muffins.

2 ¼ cups all-purpose flour
¾ cup white sugar
3 tablespoons ground cinnamon
1 ¼ tablespoons baking powder

¾ cup whole milk
2 tablespoons whole milk
10 tablespoons unsalted butter, softened
2 large eggs, beaten
½ tablespoon vanilla extract
1 ⅞ cups all-purpose flour
½ cup unsalted butter, melted
¼ cup white sugar
2 tablespoons white sugar
4 ½ tablespoons brown sugar
¾ teaspoon pumpkin pie spice, or more to taste
¼ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix then sift flour, sugar, cinnamon, baking powder, and salt together in a large bowl.
  • Mix milk, butter, eggs, and vanilla extract together in a large bowl with an electric mixer. Carefully fold in flour until combined but slightly lumpy. Pour batter into the prepared muffin tins, leaving a little room at the top for muffins to rise.
  • Combine flour, melted butter, sugar, brown sugar, pumpkin pie spice, and salt for the topping in a bowl; mix until crumbly. Add a generous amount on top of each muffin.
  • Bake in the preheated oven until tops spring back when lightly pressed, 20 to 30 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack to cool completely.

4 ounces cream cheese, cubed
1 tablespoon sugar

MUFFINS:

In another bowl, combine milk and coffee granules until coffee is dissolved. Add the butter, egg and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm with espresso spread.

¼ cup lightly packed brown sugar
1 egg
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.

140g golden caster sugar
140g butter , softened
3 large eggs
140g self-raising flour
2 tbsp instant espresso mixed with 1 tbsp water
few chocolate-coated coffee beans , to decorate (optional)
200g butter , softened
200g icing sugar
2 tsp instant espresso mixed with 1 tbsp water
50g plain chocolate , melted

Steps:

  • Heat oven to 170C/150C fan/gas 3. Line 18 holes in 2 bun tins with fairy cake cases. Beat the sugar with the butter until light and creamy. Beat in the eggs, one by one, adding 1 tbsp flour at the same time. Beat in the rest of the flour along with the espresso. Spoon into the cake cases and bake for 17 mins, swapping the trays after 12 mins. Cool on a wire rack.
  • To make the icing, beat the butter until pale, then gradually beat in the icing sugar, followed by the espresso and the melted chocolate. When the cakes are completely cool, swirl the icing generously on top and decorate with coffee beans, if you like.

1 1/3 cups mashed bananas (about 4 bananas)

Steps:

  • Prheat oven to 400 degrees.
  • Line 2 dozen muffin cups.
  • Stir together flour, baking powder, baking soda and salt. Set aside.
  • Dissolve coffee in the hot water and stir into bananas.
  • Beat together sugar and butter until fluffy.
  • Add egg, then banana mixture.
  • Stir in flour. Mix until well blended.
  • Fold in chocolate chips.
  • Divide into cups.
  • Bake for 25 - 30 minutes.
  • You can put it into 2 loaf pans and bake at 350 degrees for 45-50 minutes until a toothpick comes out clean too!

  • Preheat oven to 350...Line cupcake pans with paper liners for 36 muffins or spray the pans. Or you can use 1 large 5x9 loaf pan and 12 muffins or 3 mini loaf pans with 12 muffins...or divide up how you want to! :o)
  • Sift together flour, soda, cinnamon and salt and set aside. Beat together eggs and sugars on high speed for 3 minutes. Reduce speed and beat in oil, then bananas, sour cream, vanilla and coffee, mixing well. Gently mix in dry ingredients, until just mixed...then stir in nuts.
  • Fill liners 3/4 full and bake 20ish minutes or until toothpick comes out clean. Remove from oven and remove muffins to cooling racks. Bake large loaf 50-60 minutes or until toothpick comes out clean. Mini loafs 30ish minutes or until toothpick comes out clean.
  • Mix together frosting ingredients until smooth and creamy, 2 minutes. Frost cooled muffins or fill them with the cream cheese mixture.
  • *as mentioned in the notes...I also warmed some leftover salted caramel sauce and drizzled it over the top of some of them...made it taste like a bananas foster cappuccino...mmmmmm
