PULLED PORK EGG ROLLS

Categories     appetizer

Time 3h50m

Yield 8 to 12 egg rolls

Number Of Ingredients 17

2-pound pork butt, cut into 4 pieces
Salt and freshly ground black pepper
1/2 red onion, diced
3/4 cup white vinegar
1 bottle BBQ sauce
1/3 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon sugar
1 teaspoon celery salt
1/2 teaspoon garlic salt
1 teaspoon freshly ground black pepper
1 bag pre-shredded coleslaw mix
1/2 red onion, halved
4 cups vegetable oil
3 eggs
3 tablespoons milk
12 egg roll wrappers

Steps:

  • For the pork: Preheat the oven to 300 degrees F.
  • Season the pork with salt and pepper. Place in a braising pan and add the onion, vinegar, and BBQ sauce. Toss well. Braise for 3 hours, covered, until fork tender. Remove meat with a slotted spoon and "pull" with forks until shredded. Add braising liquid, to taste. Cool.
  • For the slaw: Mix the mayonnaise, vinegar, sugar, celery salt, garlic salt, and pepper in a large bowl. Add the vegetables and mix thoroughly. Let sit 10 to 15 minutes before serving.
  • For the egg rolls: In large saucepan, heat the vegetable oil to 350 degrees F. Add enough oil to keep the egg rolls from touching the bottom of the pan.
  • In a shallow bowl, beat the eggs and milk together and set aside.
  • With the corner of the wrappers facing you, place approximately 1/12th of the pulled pork on each wrapper. Place a dollop of coleslaw on top. Fold the corner over the filling, and then fold the outside corners in, making a roll a 4 to 5-inches wide. Roll firmly, being careful to not tear wrapper, and seal the final end with egg wash.
  • Dredge the roll in egg wash, allow excess to drain off, and submerge the roll in the hot oil. Fry until golden brown. Drain on paper towels and cut on an angle, if desired.

PORK-STUFFED COLLARD GREENS

Pork-Stuffed Collard Greens image

This is adapted from a recipe by Sunny Anderson of the Food Network. She first tasted a similar dish in Hawai'i, but uses collard leaves for a more southern/African flair. I changed the seasonings to be more Hawaiian/Pacific, and the preparation method to make it easier. You can grind your own semi-frozen boneless pork in a food processor if you can't find it pre-ground at the store. Different and tasty, plus carb-friendly!

Categories     Collard Greens

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 12

1 lb ground pork (not sausage)
collard greens (1 large bunch)
1/2 teaspoon sea salt
1 teaspoon tamari soy sauce
2 teaspoons chili powder
2 teaspoons onion powder
2 teaspoons smoked paprika (or regular paprika plus few drops liquid smoke)
1 1/2 teaspoons crushed red pepper flakes
1 teaspoon garlic powder
1/4 teaspoon ground nutmeg
1/4 teaspoon blackstrap molasses
1 1/2 cups chicken stock

Steps:

  • Mix pork, soy sauce and all spices together in large bowl. Form into 4 oblong patties. Set aside.

STUFFED COLLARD GREENS ROLLS RECIPE BY TASTY

Stuffed Collard Greens Rolls Recipe by Tasty image

Here's what you need: collard green, chicken broth, Gourmet Garden™ Jalapeño Stir-In Paste, jasmine rice, bacon, medium yellow onion, paprika, garlic powder, shredded chicken, kosher salt, apple cider vinegar

Provided by Tayo Ola

Categories     Appetizers

Yield 12 rolls

Number Of Ingredients 11

2 bunches collard green, large leaves preffered
1 ½ cups chicken broth
2 tablespoons Gourmet Garden™ Jalapeño Stir-In Paste
1 cup jasmine rice, rinsed well
4 strips bacon
½ medium yellow onion, diced
1 teaspoon paprika
1 teaspoon garlic powder
2 cups shredded chicken
½ teaspoon kosher salt
½ teaspoon apple cider vinegar

Steps:

  • Bring a large pot of water to boil. Prepare an ice bath in a large bowl and set nearby.
  • While the water comes to a boil, prepare the collard greens. Working 1 leaf at a time, cut out the stem, stopping halfway up the leaf so that the whole leaf stays intact.
  • Blanch the greens in the boiling water for 2 minutes, then plunge the leaves in the ice bath to stop the cooking. Drain and lightly squeeze out any excess water. Pat the leaves dry with paper towels.
  • In a large high-walled skillet, whisk together the chicken broth and Gourmet Garden™ Jalapeño Stir-in Paste. Add the rice, cover, and bring to a simmer. Reduce the heat to low and simmer for 10-14 minutes, or until liquid is absorbed and rice is tender. Fluff the rice with a fork, then transfer to a medium bowl. Wipe out the pan.
  • Add bacon strips to the same pan over medium heat and cook for 5 minutes, until browned. Flip and cook on the other side for 3 minutes more, until brown and crispy. Remove the bacon from the pan, leaving any rendered fat behind, and drain on paper towels. Once cool enough to handle, chop the bacon.
  • Add the onion, paprika, and garlic powder, and cook over medium heat, stirring occasionally, for 8-10 minutes, until softened and golden brown. Add the rice, chopped bacon, chicken, salt, and apple cider vinegar. Stir well, then cook for 5 minutes, until heated through. Remove the pan from the heat.
  • Lay a collard green on a cutting board, overlapping the two sides in the center to remove the gap where the stem was. Scoop a heaping ¼ cup of the rice mixture just above the bottom of the leaf. Fold the bottom over the filling, fold in the sides, then roll up tightly, tucking in the sides of the leaf as you go. Repeat with the remaining filling and collard greens.
  • Enjoy!

  • To make the pulled pork, rub the pork shoulder with a generous amount of the BBQ rub. I like to use one that has a smoke flavor to get more of that authentic smoked taste. Place the rubbed shoulder in the crock of a 5 to 6-quart slow cooker and pour 1 cup of chicken broth around the edges, being cautious not to wash the rub off. Cover and cook on low for 6 to 8 hours or until the meat shreds easily with a fork (about 190°F). Remove from the slow cooker. Once it is cool enough to handle, use two large forks to shred the meat.
  • Make the sauce by combining the mayo, creole mustard, horseradish, garlic, black pepper, and vinegar in a medium bowl. Mix until well combined. Store the sauce in the refrigerator to allow all the flavors to develop.
  • To make the egg rolls, place about 2 tablespoons of pulled pork in the center of an egg roll wrapper. Top with about 1 1/2 tablespoons of drained collard greens. • To fry them, heat 3 to 4 inches of vegetable oil in a Dutch oven or deep, heavy-bottomed skillet. Once the oil has reached about 350°F, carefully place 3 to 4 egg rolls into the oil.
