Although we live in a suburban area, we are lucky to have plenty of farms nearby where we can purchase fresh corn. But, when it's out of season, I substitute canned or frozen corn in this favorite recipe. -Anne Frederick, New Hartford, New York

Number Of Ingredients 10

1-1/2 cups yellow cornmeal
1/4 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
1-1/2 cups buttermilk
2 tablespoons butter, melted
1-1/2 cups fresh or frozen corn
Optional: sour cream, 6 bacon strips cooked and crumbed and 2 Tbsp minced chives

Steps:

  • In a bowl, combine the first 5 ingredients; make a well in the center. In another bowl, beat the egg, buttermilk and butter; pour into well and stir just until blended. Gently stir in corn; do not overmix. Cover and let stand for 5 minutes. , Pour batter by 1/4 cupfuls onto a greased cast-iron skillet or griddle over medium-high heat. Turn when bubbles form on the top, 2-3 minutes. Cook until second side is golden brown. Top with the sour cream, bacon and chives if desired.

½ cup butter, softened
⅓ cup masa harina
¼ cup water
1 ½ cups frozen whole-kernel corn, thawed
¼ cup cornmeal
⅓ cup white sugar
2 tablespoons heavy whipping cream
¼ teaspoon salt
½ teaspoon baking powder

Steps:

  • In a medium bowl beat butter until it is creamy. Add the Mexican corn flour and water and beat until well mixed.
  • Using a food processor, process thawed corn, but leave chunky. Stir into the butter mixture.
  • In a separate bowl, mix cornmeal, sugar, cream, salt, and baking powder. Add to corn flour mixture and stir to combine. Pour batter into an ungreased 8x8 inch baking pan. Smooth batter and cover with aluminum foil. Place pan into a 9x13 inch baking dish that is filled a third of the way with water.
  • Bake in a preheated 350 degree oven F (175 degrees C) oven for 50 to 60 minutes. Allow to cool for 10 minutes. Use an ice cream scoop for easy removal from pan.

¼ cup butter, softened
½ cup corn flour
⅓ cup water
1 (10 ounce) package frozen corn kernels, thawed
½ cup white sugar
¼ cup cornmeal
⅛ cup heavy cream
⅓ teaspoon baking powder
¼ cup chopped fresh parsley
¼ cup chili powder

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8 x 8 inch pan.
  • In a large bowl beat butter until smooth. Stir in flour and beat on low, adding water.
  • Chop corn in food processor or blender. Stir into butter mixture.
  • In a medium bowl combine sugar, cornmeal, cream, baking powder, parsley and chili powder; add to butter mixture. Pour batter into prepared pan.
  • Bake in preheated oven for 1 hour. Let stand 15 minutes before cutting.

A Southern Living recipe that I'm gonna try as soon as I can get to the store and get some fresh corn. I've always made corn cakes with canned corn but I know fresh will be much better. Posting b/c I am very good at losing (misplacing) recipes I cut out of magazines. :)

Number Of Ingredients 10

2 1/2 cups fresh corn kernels (about 5 ears)
3 large eggs
3/4 cup milk
3 tablespoons butter, melted
3/4 cup all-purpose flour
3/4 cup cornmeal (yellow or white)
8 ounces fresh mozzarella cheese, grated
2 tablespoons chopped fresh chives
1 teaspoon salt
1 teaspoon fresh ground pepper

Steps:

  • In a food processor, pulse corn, eggs, milk, and butter 3 to 4 times or until corn is coarsely chopped.
  • In a large bowl, mix flour, cornmeal, cheese, chives, salt, and pepper.
  • Stir in corn mixture just until dry ingredients are moistened; do NOT overstir or beat.
  • Spoon 2T batter onto a hot, lightly greased skillet or griddle to form 2" cakes; do NOT spread or flatten cakes.
  • Cook 3 to 4 minutes or until tops of corn cakes are covered with bubbles and edges look cooked.
  • Turn corn cakes over and cook for 2-3 additional minutes.

4 cups water
1 fresh poblano chile (about 3 ounces), stemmed, seeded, cut into thick strips
1 small green bell pepper, stemmed, seeded, cut into thick strips
1 1/2 cups (loosely packed) baby spinach leaves
1/4 cup chopped white onion
3 whole cloves
2 garlic cloves, flattened
2 bay leaves
1/4 cup (1/2 stick) butter
3 tablespoons all purpose flour
1 cup whole milk
2 teaspoons powdered chicken bouillon
CORN CAKE
4 cups fresh corn kernels (cut from 4 ears)
4 large eggs
1 cup whole milk
9 tablespoons unsalted butter, melted
2 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon salt

Steps:

  • FOR SAUCE: Bring 4 cups water to boil in large saucepan. Add poblano chile and next 6 ingredients; boil until vegetables are tender, about 10 minutes. Discard bay leaves. Drain, reserving 1/2 cup cooking liquid. Transfer vegetables and 1/2 cup reserved cooking liquid to blender. Blend chile mixture until smooth. Melt butter in heavy medium skillet over medium heat. Add flour; whisk 1 minute. Gradually whisk in milk, then blended chile mixture. Whisk sauce constantly over medium heat until it boils and thickens, about 3 minutes. Whisk in bouillon powder. Season sauce to taste with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate. Bring to simmer before using.) FOR CORN CAKE: Preheat oven to 350 degrees. Line 13x9x2-inch baking pan with foil. Butter and flour foil. Working in 2 batches, puree all ingredients in blender until almost smooth. Transfer batter to prepared pan. Bake until cake is golden brown and tester inserted into center comes out clean, about 1 hour. Invert cake onto platter. Cut into squares and serve warm with sauce.

This citrus-scented cornmeal number is endlessly adaptable - use whatever fat you have on hand, dairy or light, bright flavoring you have on hand - and requires just one bowl. It's wonderful in slices, but extra nice toasted and buttered for breakfast.

1 cup/200 grams granulated sugar
An orange, lime or lemon (optional)
1/2 cup/120 milliliters liquid fat (olive oil, coconut oil, sunflower oil, melted butter, whatever you've got)
2 eggs
1/2 cup/120 milliliters plain yogurt, buttermilk, sour cream, or 1/2 cup whole milk mixed with 1 tablespoon lemon juice
A dash of vanilla or almond extract, or use brandy (optional)
1/4 teaspoon grated nutmeg (optional)
1/4 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon baking powder
1/2 cup/60 grams cornmeal
1 1/4 cup/160 grams all-purpose flour

Steps:

  • Heat oven to 350 degrees, and grease and flour a 9-inch loaf pan. (Or grease and line it with parchment.)
  • In a big bowl, add the sugar, and grate the zest from the orange, lemon or lime into the bowl. If you need a little aromatherapy, work the zest into the sugar with your fingers. (This technique is supposed to infuse the citrus into the sugar.)
  • Add the fat, eggs, and yogurt to the bowl, along with the extract and nutmeg, if you like.
  • Whisk in the salt, baking soda, baking powder and cornmeal. Once smooth, whisk in flour.
  • Scrape the batter into the prepared pan, and bake for 45 minutes to an hour. Let it (mostly) cool in the pan. Then slice off a thick piece, butter it and let yourself be soothed.

4 egg yolks
1/2 cup sugar
1/4 cup water
1 teaspoon vanilla
1 cup cake flour
2 teaspons baking powder
1/4 teaspoon salt

1/4 cup finely chopped almonds
1 (3 1/4 oz) package vanilla regular pudding and pie filling
1 cup chilled whipping cream
Sliced almonds, if desired

Steps:

  • Heat oven to 325@ 1. Beat egg whites until foamy in small mixer bowl. Gradually beat in 1/2 cup sugar; beat until stiff and glossy. 2. Beat egg yolks until light in large mixer bowl. Gradually beat in 1/2 cup sugar, the water and vanilla. Add flour, baking powder and salt. Beat 1/2 minute on low speed, then 2 minutes on high speed. 3. Carefully fold small amount egg yolk mixture into beaten egg whites. Fold egg white mixture into remaining egg yolk mixture. 4. Pour batter into 2 greased and floured layer pans, 9x 1 /2 ". Sprinkle 1 tablespoon sugar and the chopped almonds over the top of one of the layers. 5. Bake 30 minutes; cool. While cake is cooling, prepare vanilla pudding accouring to package directions for pudding. Cool. Beat whipping cream in chilled bowl. Split cake layers and reserve sugared layer for top. Fill threelayers with vanilla pudding. Spread with whipped cream mixture over the pudding layer. Top with sugared layer. Refrigerate no longer than 24 hours. Garnish with sliced almonds around edge of plate. You can also frost with more whipped cream and spread on sides and cover sides with toasted sliced almonds. Really delicious. Enjoy
