This cozy casserole is sure to please--biscuits and gravy, eggs, and corned beef hash in one easy dish!

Non-stick cooking spray
1 (16 ounce) can refrigerated biscuit dough
1 cup shredded Cheddar cheese, divided
6 eggs
½ cup milk
4 teaspoons salt
½ teaspoon ground black pepper
1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
4 cups prepared country-style gravy

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with non-stick cooking spray.
  • Cut biscuits into quarters; arrange them to cover bottom of prepared baking pan. Bake in preheated oven until biscuits have started to cook but are not done, about 5 minutes. Sprinkle with 1/3 cup shredded Cheddar cheese.
  • Whisk eggs, milk, salt, and black pepper together in a mixing bowl.
  • Place a non-stick skillet over medium to medium-high heat. Spoon in the corned beef hash. Cook and stir until hot and beginning to crisp up, 5 to 8 minutes. Remove from heat. Pour in egg mixture and continue to stir until eggs have started to cook but are not set, about 30 seconds.
  • Spread egg and hash mixture evenly over biscuits. Sprinkle with remaining Cheddar cheese. Spread prepared country gravy over the top and bake until cooked through, about 45 minutes.

I created this recipe to be "total comfort food". It is very easy to make and incorporates all the components of a one dish meal... and it's Yummy too!

16 ounces frozen chopped spinach, thawed and drained
2 (4 ounce) cod fish fillets (I used Swai) or 2 (4 ounce) tilapia fillets (I used Swai)
1 cup prepared jarred alfredo sauce
24 ounces Simply Potatoes Traditional Mashed Potatoes
grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 9 x 12 baking dish. Place spinach in bottom of dish, place fish on top of the spinach, and cover with Alfredo Sauce. Top with the potatos and sprinkle with parmesan cheese to taste.
  • Bake for 30 to 45 minutes until golden brown and bubbly.

1 (1 1/4 lb) package Simply Potatoes Diced Potatoes with Onion
1 (1 lb) box Velveeta cheese, cubed
1/4 cup hormel real bacon bits (or crumbled fried bacon)
1 cup mayonnaise (or more to taste)
1/2 cup sweet relish (or more to taste)

Steps:

  • Mix ingredients together. Bake in greased dish at 325 degrees for approximately 30 minutes, until cheese melted and heated through.
