APPLE CRISP - PERFECT AND EASY
I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

APPLE COMFORT
Years ago, we were without electricity for nine days during an ice storm, but I was able run the slow cooker from our generator. The situation called for a treat, and this has been a favorite ever since.

COMFORT ME WITH APPLE CRISP
So, let me ask you this question...why can dessert not be a meal? It is a valid question and one that deserves an answer. Who really wants to eat dessert after a meal with several courses? Can the dessert not be the meal in its own right? I say YES and here's a recipe to prove it. There's nothing more comforting than the smell of apples and spices baking. This is a generous crisp - for 2-3 people to eat well and contentedly pat their well-fed bellies. Be sure to serve warm - not hot - with a scoop of a very good vanilla ice cream. You will be well-fed. Need no other sustenance. The apples will have comforted you and you can happily be on your way...

Steps:
- Preheat oven to 375 degrees F (190 degrees C) and place rack in the center of the oven. Generously butter 2 individual gratin dishes or, if you want to make this as one crisp, a pie dish.
- For Topping: Place all the ingredients, except pecans, in a food processor and process until the mixture is crumbly (looks like coarse meal) and there are no large pieces of butter visible. (This can also be done by rubbing with your fingertips.) Stir in the pecans. Set aside (I popped it in the fridge to keep the butter cold) while you prepare the filling.
- For Filling: Gently combine the apples with the raisins, brown sugar, lemon juice, zest, flour, vanilla extract and spices. Transfer to your prepared baking dish(es) Scatter the topping evenly over the apples.
- Bake for approximately 35-45 minutes (depending on how tender you like your apples) or until the topping is golden brown and the apples are fragrant and bubbling. Remove from oven and place on a wire rack to cool for about 30 minutes before serving.
- Serve with a premium-grade vanilla ice cream.

APPLE CRISP
This warm dessert can quickly satisfy sweet tooth cravings, especially if you forgo peeling the apples, which adds a nice chewiness to the crunchy toasted topping and juicy, saucy apples. Choose a variety of apples, then adjust the amounts of sugar and lemon juice to strike the right tangy balance for the filling. Or customize your crisp by using your favorite spices and nuts. The dessert tastes particularly comforting hot out of the oven, with the caramelized apple juices bubbling around the nutty cookie-like clusters, but it's just as good cold for breakfast the next day.

Steps:
- Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
- Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
- If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
- Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.
