JIMMY'S MEXICAN PIZZA
Jimmy's specially seasoned ground beef, refried beans, salsa and cheese layered in a deep dish style. A tasty and easy Mexican-style pizza with a flour tortilla crust I whipped up because I had the stuff to make it!!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Coat 2 pie plates with non-stick cooking spray.
- Place beef, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt and pepper.
- Lay one tortilla in each pie plate, and cover with a layer of refried beans. Spread half of the seasoned ground beef over each one, and then cover with a second tortilla. Bake for 10 minutes in the preheated oven.
- Remove the plates from the oven, and let cool slightly. Spread half of the salsa over each top tortilla. Cover each pizza with half of the Cheddar and Monterey Jack cheeses. Place half of the tomatoes, half of the green onions, and half of the jalapeno slices onto each one.
- Return the pizzas to the oven, and bake for 5 to 10 more minutes, until the cheese is melted. Remove from the oven, and let cool slightly before slicing each one into 4 pieces.

MEXICAN PIZZA
Steps:
- Set up the grill for direct cooking over medium heat. Oil the grate when ready to start cooking.
- In a small bowl, stir to combine the sour cream and salsa; set aside.
- Brown the ground beef in a skillet. Set aside to cool.
- Lay out 2 wraps or tortillas. Divide the cheese and sprinkle over wraps. Top with remaining wraps; set aside. In a microwave-safe bowl, cook beans on high setting for 4 to 6 minutes in the microwave, or until done. Place the cheese-filled wraps on the hot oiled grill and cook for 2 minutes; turn over. Divide the black beans and spread on top of the wrap. Top with the reserved cooked beef and diced onions. Close the grill and cook for 2 more minutes.
- Remove the pizzas from grill and top with lettuce, tomatoes, and drizzle with the sour cream salsa mixture. Serve hot, garnished with nacho rings.
- INDOOR: Preheat oven to 400 degrees F. Complete above steps through microwaving the beans. In a skillet large enough to fit the wraps, heat 2 tablespoons of vegetable oil over medium heat. When the oil is hot, carefully fry both sides of wraps for 1 to 2 minutes, or until golden brown, turning with a large spatula. Transfer wraps to a baking sheet. Spread each wrap with the heated black beans and top with reserved ground beef and diced onions. Place in oven and bake for 5 minutes. Remove from oven and garnish as directed.
REALLY DEEP DISH PIZZA
Bit like a pizza casserole but this has a crust so theoretically you could pick it up and eat it like regular pizza, but half of the toppings would probably slide off. The toppings listed are mostly suggestions try it this way or using your favorite toppings instead.

Steps:
- In a measuring cup or small bowl, dissolve sugar and yeast in water.
- Combine flour, parmesan and salt in a large bowl and make a well in the center.
- Pour yeast mixture and oil in well and stir into dry ingredients until dough forms; let rise 5 minutes.
- Preheat oven to 350°F.
- Heat olive oil over medium heat, add hamburger, onions and garlic, season with chili powder and sauté until onions are tender and meat is browned, about 10 minutes.
- Grease a 9x12-inch cake pan, and press dough into pan.
- Pour 1/2 of sauce onto dough, layer 1/2 of all remaining ingredients, top with remaining sauce, then layer on all remaining ingredients (the cake pan will be full at this point).
- Bake at 350°F for 20-25 minutes until the cheese is lightly browned.
DEEP-DISH MEXICAN CORNBREAD PIZZA

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix cornbread mix, milk, and eggs together in a bowl. Pour into a lightly greased, nonstick oven-proof skillet.
- Bake in the preheated oven until center is set, about 15 minutes.
- Meanwhile, cook and stir ground beef in a skillet until hot and crumbly, 5 to 7 minutes. Add onion, bell pepper, and garlic; saute until onion is translucent. Add 1 can of tomatoes, chili powder, cumin, oregano, and red pepper flakes. Stir in frozen corn.
- Mix refried beans and remaining can of tomatoes in a separate bowl. Spread over the baked cornbread. Top with the beef mixture and cover with Cheddar cheese.

- Put yeast, sugar, salt, and dry milk in a large bowl. Add water and stir to mix well. Allow to sit for two minutes. Add oil and stir again. Add flour and stir until dough forms and flour is absorbed.
- Turn out on to a flat surface and knead for about 10 minutes. Divide dough into three balls. In three 9" cake pans, put 3 Tbl. of oil in each making sure it is spread evenly. Using a rolling pin, roll out each dough ball to about a 9" circle. Place in cake pans.
- Spray the outer edge of dough with cooking spray. Cover with a plate. Place in warm area and allow to rise for 1 to 1 1/2 hours.
- Combine tomato sauce, oregano, marjoram, basil and garlic salt.
- Preheat oven to 475 degrees F.
- Spoon 1/3 cup sauce on dough and spread to within 1" of edge. Distribute 1/4 c. shredded mozzarella cheese on sauce. Place toppings of your choice in this order: pepperoni or ham, vegetables, meats (cooked ground sausage or beef). Top with 1/2 c. mozzarella cheese (or as much as you prefer). Cook until cheese is bubbling and outer crust is brown (between 10-15 minutes).

DIRTY YOUR DEEP DISH PAN...PIZZA!
Brought to you for the Zaar World Tour II by the Dirty Pan Gang. If you want EASY...just use a purchased pizza crust, add toppings and heat per directions on crust packaging. But...the crust can make or break a great pizza!! So for something fabulous and different...try a homemade DEEP DISH CRUST. The crust recipe is brought to you from "The Best New Recipes" by the Editors of Cooks Illustrated...(*see end of description for notes). All you need is two 10 inch cake pans and a baking sheet (or a pizza stone). The toppings represent everyone on our team...but we won't be offended if you omit or change a topping. Topping amounts are guesstimates, you may want to add more or less to your taste. The tomato sauce should not be too heavily applied (but not too thin either), the pesto and ricotta (if used) should be kind of placed in dollops on the pizza, not spread over the whole thing. We hope you dirty your deep dish pan and make our pizza!! *If you actually have a deep dish pizza pan, dough will make one 14 inch pizza. Changes fo 14 inch pizza include rolling the dough to 12 inch round and increasing the initial baking time on the lowest rack to 15 minutes. The amount of oil used to grease the pan may seem excessive, but in addition to preventing sticking, the oil helps the crust brown nicely. *The role of the potato - boiled potato in the dough results in a moister, more tender, sweeter, and softer dough than one just made with flour. - CRUST:.
- Bring 1 quart water and the potato to a boil in a small saucepan over medium-high heat; cook until tender 10 - 15 minutes. Drain the potato and and cool until it can be handled.
- Press potato through a potato ricer or grate on the large holes of a box grater.
- Measure 1 1/3 cups lightly packed potato; discard the remaining potato.
- Adjust an oven rack to the highest position and the other rack to the lowest position; heat the oven to 200 degrees. Once the temperature reaches 200 degrees, maintain the heat for 10 minutes then turn off the heat.
- Combine the flour, yeast, and salt in a food processor. With the motor running, add the water and process until the dough comes together in a shaggy ball.
- Add the potato and process for several seconds, then add 2 tablespoons of the oil and process several more seconds, until the dough is smooth and slightly sticky.
- Transfer the dough to a lightly oiled medium bowl, turn to coat with oil and cover the bowl tightly with plastic wrap. Place in the warmed oven until the dough is soft and spongy and doubled in size, 30 - 35 minutes.
- Oil the bottom of two 10-inch cake pans with 2 tablespoons of oil each.
- Turn the dough onto a clean, dry work surface; divide it in half.
- Pat each half into a 9-inch round.
- Transfer the round to the oiled pans, cover with plastic wrap, and let rest until the dough longer resists shaping, about 10 minutes.
- Place a pizza stone or rimless baking sheet on the lowest oven rack and preheat the oven to 500 degrees.
- Uncover the dough and pull it into the edges and up the side of the pans to form a 1 inch high lip. Cover with plastic wrap and let rise in a warm, draft-free spot until doubled in size, about 30 minutes.
- Uncover the dough and prick generously with a fork.
- Reduce the oven temperature to 425 degrees and bake on the heated stone or baking sheet (on the lowest rack) until the crust is dry and lightly browned, about 5 - 10 minutes.
- Add the toppings.
- Bake on the stone or baking sheet until the cheese melts, 10 - 15 minutes.
- Move the pizza to the top rack and bake until the cheese is golden brown in spots about 5 minutes longer.
- To make sure the crust is done, use a spatula to lift up the crust - it should be nicely browned underneath.
- Let cool 5 minutes, then holding the pizza pan at an angle with one hand, use a wide spatula to slide the pizza from the pan to a cutting board. Cut into wedges and serve.

- Preheat oven 425 degrees. In medium bowl combine Bisquick, cornmeal and water; mix well. With floured hands, pat dough on bottom and up sides of greased 15x10 jelly roll pan. Bake 10 minutes; remove from oven. Brown meat with onion, bouillon and tomato sauce. Add chili powder. Cook until bouillon is dissolved. Spread beans evenly over baked crust. Spoon meat mixture evenly over beans. Top with cheese. Bake 10 minutes. Garnish with tomato, lettuce, olives and chives. (Makes 8-10 servings.)
MEXICAN MEAT-ZZA: MEXICAN DEEP-DISH PAN PIZZA COURTESY RACHAEL RAY
Steps:
- 1. Preheat oven to 400 degrees F.
- 2. Mix together muffin mix, eggs, melted butter, milk and corn kernels. Wipe a nonstick skillet with a little oil and pour in the muffin mix. Use a large skillet, 10 to 12 inch. Choose a pan with oven safe handle or, protect with foil. Place pan in oven and bake 12 to 15 minutes in center of the oven until light golden.
- 3. Brown the meat over medium high heat in a second skillet in oil, 2 turns of the pan. Add onions and seasoning and cook meat 5 minutes more.
- 4. Remove cornbread from oven and top with toppings. Add pan back to oven and cook 5 minutes more to melt cheese. Garnish with cilantro, optional. Cut into 8 wedges and serve the deep dish pan pizza from the skillet. Pass taco sauce at the table.
