SPINACH STUFFED TWICE BAKED POTATOES
You know how when there are times that you start throwing things together,and they work ? Well, this recipe is one of those times.If you try this recipe I sure hope you enjoy it. Steps:
- Preheat oven to 375 degrees.
- When oven is preheated,bake potatoes for 1 hour or until fork tender.
- After potatoes have cooled off enough to handle,split in half and remove potato pulp,leaving a 1/4 inch thick shell.
- In a large bowl,mix together potato pulp, butter,salt,pepper,spinach,and cheese.
- Place empty potato shells into a greased 2 quart baking dish,and divide potato/spinach mixture evenly into shells.
- Bake for another 20 to 25 minutes or until cheese is melted and tops are lightly browned.

ULTIMATE TWICE BAKED POTATOES
I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bake potatoes in preheated oven for 1 hour.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
- Bake for another 15 minutes.

I first had this at an in-laws! I'm not sure where she got the recipe, but I'm assuming it was from Company's Coming. I omit the green peppers as they don't agree with me. Great with fresh fruit. It has also been called "Christmas Morning Wife Saver".

Steps:
- Using a greased 9" x 13" baking pan, put enough slices of bread to cover bottom of dish.
- Cover bread with thin slices of ham, grated cheese, onions and green pepper.
- Then cover with remaining bread.
- In a large bowl beat eggs, salt, pepper, dry mustard, Worcestershire, Tabasco and milk.
- Pour over bread.
- Cover and refrigerate overnight.
- In the morning, melt 1/2 cup butter or margarine and drizzle over the top.
- Cover with crushed Corn Flakes.
- Bake uncovered in 350 F oven for 1 hour.

TWICE BAKED STUFFED POTATOES
Steps:
- Bake potatoes until very soft. Lay potato length ways and cut off top as to make a bowl. Use ice cream scoop or melon baller to scoop out meat of potato; leave enough so the shell will not collapse.
- Put all of potato meat in large mixing bowl and add 3/4 of cheese and 3/4 of sour cream. Combine all other ingredients, mash by hand until mixed.
- Fill in 5 of the shells until heaping. If there is enough you can fill all 6 of the shells. Then top with remaining cheese and put into oven at 350 just to warm through. Then top with sour cream and sliced green onion and enjoy.

- Start by pre-heating your oven to 400 degrees F. Poke fork holes all over the sweet potato (you don't have to go crazy, try 4 per side). Place the sweet potatoes on a baking sheet and drizzle with olive oil. Bake until fork tender, about 1 hour.
- While the sweet potatoes are cooking, chop up the corned beef and Swiss cheese into little squares and toss it in a bowl with the chopped red onion and green onion. Set aside.
- When the sweet potatoes are done, allow them to rest until cool enough to handle. Make a slit along the length of the top of the sweet potato to open it up, and scoop the insides out into the bowl with the corned beef. Be careful not to poke through the skin of the potato! I usually leave about 1/4 of an inch of insides.
