Gluten-free Condensed Cream of Chicken Soup image

It only takes about five minutes to make your own gluten-free condensed cream of chicken soup! This easy homemade substitute for canned condensed soup is a great recipe to have in your back pocket! Use it in all of your favorite casserole recipes! This recipe is easy to customize with flavor swaps for cream of celery or cream of mushroom. Also, find substitutions for dairy-free and grain-free versions!

3 Tablespoons butter
3 Tablespoons sweet rice flour or potato starch
3/4 cup chicken stock
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Melt butter in a small saucepan over med-low heat.
  • Sprinkle sweet rice flour over the butter. Season with salt and pepper. Whisk and let bubble for 2 minutes.
  • Gradually whisk in the chicken broth and milk.
  • Allow the mixture to cook and bubble until very thick, whisking frequently, about 5 minutes.
  • Remove from heat. Use in recipe or store in the refrigerator for up to 3 days.

Number Of Ingredients 8

1 cup 2% evaporated milk
2 tablespoons cornstarch
1 tablespoon vegetable oil
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon white pepper
1 pinch sugar
3/4 cup fresh mushrooms, sliced

Steps:

  • Put all ingredients except the mushrooms in a blender or food processor and pulse until smooth.
  • Add mushrooms and pulse 2-3 times until mushrooms are chopped.
  • Pour into a 2-quart Pyrex bowl and microwave on HIGH for 3 minutes, whisking well after two minutes and again at the end of cooking time. If not thick enough, add 30 seconds and whisk again OR.
  • Pour into a 2-quart saucepan & cook on medium high while whisking until desired thickness.

¾ cup whole milk
3 tablespoons cornstarch

Steps:

  • Stir chicken stock, milk, and cornstarch together in a small saucepan until cornstarch is dissolved. Cook over medium heat, stirring constantly, until bubbling, about 5 minutes. Reduce heat to medium-low; continue to cook and stir until mixture is very thick, about 5 minutes. Remove from heat.

Add butter then, once melted, sprinkle in flour and whisk to combine. Cook while whisking for 1 minute then slowly add splashes of chicken broth while whisking to create a smooth sauce. Add milk and seasonings then turn heat up to medium-high and bring soup to a bubble while stirring constantly. Turn heat back down to medium then simmer while stirring until soup is fairly thick, 3-4 minutes. Remove saucepan from heat then set aside to cool slightly. Can be done several days ahead of time.
  • For the Cream of Mushroom Soup: Heat extra virgin olive oil in a small saucepan over medium-high heat then add mushrooms and shallots. Saute until the mushrooms release their liquid, the liquid cooks off, and the mushrooms become tender, 5-7 minutes. Scrape mushroom and shallot mixture into a bowl then set aside.
  • Lower the heat to medium then melt butter in saucepan. Sprinkle in flour then whisk to combine and cook while whisking for 1 minute. Slowly add splashes of chicken or vegetable broth while whisking to create a smooth sauce then add milk and seasonings. Turn heat up to medium-high and bring soup to a bubble while stirring constantly then turn heat back down to medium and simmer while stirring until soup is fairly thick, 3-4 minutes. Remove saucepan from heat then stir in cooked mushrooms and set aside to cool slightly. Can be done several days ahead of time.
