BBQ CHICKEN WINGS 3 WAYS RECIPE - TRAEGER GRILLS
Traeger chicken wings tossed in a sweet and spicy Sriracha sauce, a classic buffalo sauce and Traeger chicken Rub for smokin' chicken three ways.

Steps:
- When ready to cook, set temperature to 375℉ and preheat, lid closed for 15 minutes.
- While grill is preheating, dry off chicken wings with a paper towel. Place wings in a large bowl and sprinkle with cornstarch, Traeger Chicken Rub and salt to taste. Mix to coat both sides of the chicken wings.
- Place the wings on the grill and cook for 35 minutes, turning halfway through. Check the internal temperature of the wings at 35 minutes. The internal temperature should be at least 165℉. However, an internal temperature of 175-180℉ will yield a better texture.
- Meanwhile, make the Franks RedHot Sauce: In a small saucepan over medium heat, combine Franks RedHot, mustard and butter. Cook, stirring occasionally, until the butter is melted and the sauce is just warmed through. Set aside and check on your wings.
- Make the Sriracha Wing Sauce: In a small saucepan over medium heat, combine Sriracha, soy sauce, sesame seed oil and honey. Whisk to combine and cook, stirring occasionally, until sauce is just warmed through. Set aside.
- Remove wings from the grill. Place 1/3 in a large bowl and toss with the Franks RedHot sauce. Toss another 1/3 with the Sriracha sauce. Leave the remaining 1/3 of the wings unsauced and season with extra Traeger Chicken Rub if desired. Serve and enjoy!
GRILLED HOT WINGS 3 WAYS
This recipe serves up classic chicken wings in not one, but three different varities. A classic Buffalo sauce sets the pace, while a smoky barbecue sauce and Asian sesame chile sauce take us outside of our comfort zone. It'll be hard to pick your favorite, we guarantee.

- Place a large grill pan over medium-high heat or heat an outdoor grill to high. Brush with olive oil to lightly coat.
- In a large bowl, toss the chicken wings with the 2 tablespoons of olive oil, salt, and pepper. Place the wings on the grill and cook, turning occasionally, until well marked and cooked through, about 10 minutes.
- Place a small saucepan over medium heat and melt the butter. Whisk in the hot sauce and heat through, stirring occasionally. Toss the wings in the Buffalo sauce and garnish with blue cheese, carrots, and celery.
- Place a small saucepan over medium heat and add all of the ingredients except the peanuts and the cilantro. Stir to combine and heat the sauce through, stirring occasionally. Toss with the wings and garnish with the peanuts and cilantro.
- In a small saucepan over medium heat, combine all of the ingredients and heat the sauce through, stirring occasionally. Toss wings in the sauce and serve.

- In a large pot, heat vegetable shortening until a deep-fry thermometer reaches 375 degrees F. Line a sheet tray with a wire rack.
- Using kitchen shears or a sharp knife, separate the chicken wings into the drummettes and wings, discarding the wing tip joint.
- In a large bowl, whisk together eggs, cream, cayenne, 1 tablespoon salt and black pepper. In a paper bag, shake together flour, cornstarch and 1 tablespoon salt. Place chicken in egg mixture and toss well to coat. Place chicken in batches in the bag of flour mixture. Shake well to coat. Set on wire rack to let coating set, 20 minutes.
- Meanwhile make the Honey BBQ Sauce and the Spicy Butter Sauce. In a small saucepan, bring the ingredients for the Honey BBQ Sauce to a simmer over medium-high heat. Reduce heat and cook until sauce has reduced by half, about 12 minutes, stirring frequently. In another saucepan, bring the ingredients for the Spicy Butter Sauce to a simmer. Remove from heat and let basil infuse in butter for at least 15 minutes. Remove basil.
- When oil is at the right temperature, add chicken, working in batches, and fry until cooked through and crispy, about 13 minutes. Season chicken with salt then immediately toss, taking turns with batches, in the Honey BBQ sauce, or the Spicy Butter Sauce or sprinkle with the lemon and lime zest.
- Serve immediately.

- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Melt butter in a skillet over low heat. Stir wing sauce and vinegar into melted butter until fully incorporated and heated through.
- Working in batches, cook chicken wings in hot oil until no longer pink at the bone and the juices run clear, about 10 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Transfer cooked wings to hot sauce mixture and turn to coat completely. Leave wings in sauce for 2 to 3 minutes to soak up flavors. Remove to a serving plate.

When I make hot wings, it is always for mass quantities of boys at my house (the amount of food teenage boys eat can boggle the mind), so I had to come up with a way to make lots of good hot wings - fast.

- Heat oil, either in deep fryer or deep skillet on top of stove.
- I cut that extra, short little wing piece off each chicken wing.
- Fry the wings in hot oil until the skin is crispy and chicken is done.
- Drain on paper towels.
- Get a large tupperware container, drop in enough wings to cover the bottom, pour desired amount of wing sauce over top, put on lid, and shake shake shake until well coated.
- Continue process until all your wings bathed in hot sauce.
- Serve with ranch or blue cheese dressing.
EXTRA CRISPY HOT WINGS
I personally like my Hot Wings deep fried and extra crispy. I came up with this recipe after getting tired of the same ol' messy wings with goopy skin. Substitute with your favorite wing sauce, but I always preferred the tangy taste and slight kick of Crystal Hot Sauce. I usually mix Crystal Hot Sauce with a bit of Crystal Extra Hot or Tabasco.

- Take thawed chicken wing portions and place in ziplock bag.
- Pour hot sauce on wings for desired flavor and heat.
- Shake to coat chicken entirely.
- Marinate for at least 2 hours in the refrigerator.
- Beat eggs in a medium sized bowl.
- Pour flour into the spare ziplock bag.
- Mix Old Bay seasoning thoroughly with flour.
- Add cayenne pepper (red pepper) for extra heat.
- Coat wings with beaten egg and then place in the bag with flour.
- Shake until wings are completely coated with flour.
- Place wings back in the refrigerator for approximately.
- 15 minutes so the flour will stick to the chicken.
