A spicy bean and corn mixture tops these slow cooker pork chops that are perfect for a busy weeknight dinner.

6 pork rib chops, cut 3/4-inch thick (about 2-1/2 lb.)
1 15 ounce can Mexican-style or Tex-Mex-style chili beans
1.25 cup bottled salsa
1 cup fresh* or frozen whole kernel corn
2 cup hot cooked rice
Snipped fresh cilantro (optional)

Steps:

  • Trim excess fat from chops. Place chops in the bottom of a 3-1/2- or 4-quart crockery cooker. Add chili beans and salsa. Cover; cook on high-heat setting for 2-1/2 hours or low-heat setting for 5 hours. When that step is complete, turn to high-heat setting, if necessary. Stir in corn. Cover and cook 30 minutes longer on high-heat setting. Serve over rice. Sprinkle with cilantro, if desired. Makes 6 servings.

This recipe came out of necessity! I love to cook but hate to grocery shop, and one day I found myself with nothing but some pork chops, canned black beans and canned tomatoes. This is the dish I came up with, and my husband loved it.-Vicki L. Blaine, Plymouth, Michigan

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 can (15 ounces) black beans, rinsed and drained
3/4 cup chicken broth
1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
4 bone-in pork loin chops(1/2 inch thick and 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice
2 tablespoons minced fresh cilantro, optional

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Meanwhile, in another skillet, brown pork chops on both sides in remaining oil over medium-high heat. Sprinkle with salt and pepper. Pour tomato mixture over chops. Cover and simmer for 10-15 minutes or until a thermometer reads 160°. Using a slotted spoon, serve over rice. Sprinkle with cilantro if desired. Freeze option: Cool pork chop mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in pork reads 165°, stirring occasionally and adding a little broth or water if necessary. Serve as directed.

2 packages (1 oz each) Old El Paso™ original taco seasoning mix
1 boneless pork shoulder (3 to 4 lb)
6 cups hot cooked white rice
Shredded Colby-Jack cheese, sour cream and lime wedges

Steps:

  • Spray 5-quart slow cooker with cooking spray. In slow cooker, mix tomatoes, beans, chiles, onions, bell pepper and taco seasoning mix. Add pork shoulder; turn to coat.
  • Cover; cook on Low heat setting 8 to 9 hours or until very tender. Remove pork from slow cooker; when cool enough to handle, shred meat with fork. Stir shredded pork back into mixture in slow cooker. Serve with rice; top with remaining ingredients.

2 bone-in pork rib chops, 1/2 inch thick (3/4 lb)
3 teaspoons southwestern seasoning mix
2 tablespoons chopped fresh cilantro
2 teaspoons butter or margarine, melted
1 teaspoon lime juice
2 ears frozen corn-on-the-cob

Steps:

  • Heat gas or charcoal grill for indirect cooking as directed by manufacturer. Sprinkle pork chops with 2 teaspoons of the seasoning mix. Let stand at room temperature no more than 5 minutes.
  • Meanwhile, in small bowl, mix cilantro, melted butter, lime juice and remaining 1 teaspoon seasoning mix. Coat corn with 1 tablespoon cilantro mixture; reserve remaining mixture. Wrap each ear of corn in heavy-duty foil, sealing edges well and leaving room for heat expansion.
  • Place pork on unheated side of two-burner gas grill or over drip pan on charcoal grill. (If using one-burner gas grill, cook over low heat.) Place corn directly over medium heat. Cover grill; cook 10 minutes. Turn pork and corn; cook 7 to 8 minutes longer or until corn is hot, pork is no longer pink and meat thermometer inserted in center of pork reads 160°F. Serve remaining melted butter mixture with corn and pork.

1 teaspoon Taco Seasoning Mix
1/2 cup Salsa
1 cup Corn [frozen]
1 can Pinto Beans [15 oz, drained, rinsed]

Steps:

  • 1. Heat 12-inch nonstick skillet over medium-high heat. Sprinkle pork chops with 1/4 teaspoon of the salt and 1/2 teaspoon of the seasoning. Cook pork chops in skillet 4 to 6 minutes, turning once, until brown.
  • 2. In 3- to 4 1/2- quart slow cooker, mix remaining 1/4 teaspoon salt, remaining 1/2 teaspoon seasoning, the salsa, corn and beans until well blended. Top with pork chops, overlapping as necessary, pressing gently into bean mixture.
  • 3. Cover; cook on Low heat setting 4 to 5 hours.
  • 4. Remove pork chops to serving platter. Cover to keep warm. With fork or potato masher, mash beans slightly until slightly thickened. Serve pork chops over beans. Sprinkle with chopped cilantro.

  • Rinse pork chops and pat dry. Season both sides with salt and pepper and sear in olive oil in a large skillet over medium-high heat. Leave in skillet only until nicely browned on the first side then remove from skillet and set aside. If the chops are too large, do this step in batches.
  • Combine the black beans, green chili tomatoes, corn, onion and all of the spices in a large mixing bowl. Cover bottom of slow cooker with 1/3 of the bean mixture. Place two chops on top with browned side up. Repeat with half of remaining sauce, final two chops, ending with sauce.
  • Turn cooker to high for 2½ hours or low for 5 hours. When chops are done, squeeze lime juice into sauce and garnish each serving with chopped cilantro after spooning vegetable mixture over each chop.
