BEST-EVER CUCUMBER DILL SALAD
Just experimenting one day and came up with a yummy, fresh twist on an old recipe.

Steps:
- Place cucumber slices in a colander. Generously sprinkle salt over cucumber; let sit until water starts to bead on the slices, about 10 minutes. Drain water from cucumber slices.
- Whisk sour cream, vinegar, yogurt, mayonnaise, lime juice, sugar, and dill together in a large bowl until dressing is smooth. Mix cucumber, onion, and celery into dressing until evenly coated; season with salt and pepper.

Steps:
- Whisk together the vinegar, mustard, salt, and sugar; and then whisk in the oil in a slow stream.
- Halve the cucumbers lengthwise and remove the seeds with a small spoon, cut the halves crosswise into 1/4" or 1/8" slices.
- Toss the cucumbers and dill with the vinaigrette.
- Serve and enjoy!

- Combine sliced cucumbers and salt in a large bowl and let sweat for 1 hour. Drain liquid and toss cucumbers with onion slices.
- Combine white vinegar and water in a saucepan over medium-low heat. Stir in sugar until dissolved and simmer until liquid turns clear, 3 to 5 minutes. Pour dressing over cucumbers and onions and stir in dill.
- Cover and refrigerate for 1 hour.

Steps:
- 1. Toss sliced onions with 1 TBLS Rice Vinegar, set aside
- 2. Place peeled, sliced, seeded cucumbers in a colander and toss with 1/4 tsp of salt, let drain 10 minutes then pat dry.
- 3. in a large bowl mix onions and cucumbers with olive oil, remaining (2 TBLS) of vinegar and dill. Season (salt and pepper) garnish (sesame seeds) and chill until served ( about 30 minutes is preferable, but is optional)
