1 medium green pepper
1 medium sweet red pepper
1 medium sweet yellow pepper
1 package (14 ounces) smoked turkey kielbasa, sliced
2 large potatoes, cut into wedges
1 medium onion, chopped
4 teaspoons lemon juice
4 teaspoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon pepper
Lemon wedges, optional

Steps:

  • Cut peppers into 1-in. pieces; place in a large bowl. Toss with the next 7 ingredients. Divide mixture among 4 double thicknesses of heavy-duty foil (about 18x12 in.). Fold foil around mixture, sealing tightly., Grill, covered, over medium heat until potatoes are tender, 30-35 minutes. Open foil carefully to allow steam to escape. If desired, serve with lemon wedges.

This simple but tasty meat square is a Scottish classic and is perfect packed inside a morning roll or as part of a full Scottish breakfast Unlike a traditional sausage, a Scottish square sausage has no casing which means it's easy to make at home, hence why we thought it was about time we came up with our own Lorne sausage recipe.

450g (1lb) minced beef
450g (1lb) minced pork
250g (1.5 cups) breadcrumbs (not fresh)
1 tsp ground black pepper
1 tsp salt ( add to taste)
1.5 tsp coriander
0.5 tsp nutmeg
0.5 tsp mace
120ml (1/2 cup) cold water

Steps:

  • Line your loaf tin, or whatever you're using to make the square sausage, with clingfilm, with enough hanging over the edges to wrap over the opening once you've put the sausage meat in it.
  • Add all the ingredients to a bowl and use your hands to thoroughly combine.
  • Squash the sausage meat into the loaf tin as densely as possible. If you have any leftover you can set aside to make meat patties out of it!
  • Wrap the clingfilm over the top so it's fully covered and place in the freezer for 2 hours, or until firm enough to slice.* Alternatively, leave it in the refrigerator for 24 hours until it is firm.
  • Remove the sausage from the tin using the clingfilm to lift it out and then cut into 1cm slices.
  • You can use it immediately, put it in the fridge to be used within the next 2 days, or put pieces of baking paper between slices and place them in a container to fully freeze and pull out to use as you wish.
  • Cook in a frying pan for a few minutes each slide or grill and then serve in a morning roll with your choice of sauce, or as part of a full Scottish breakfast!

No need to buy expensive veggie sausages anymore! These Homemade Vegan Sausages are easy to make and delicious. Thanks to two tricks, they are not tough and rubbery like seitan often is.

1/2 tablespoon canola oil
1/2 large white onion (chopped)
1 garlic clove (chopped)
1/2 teaspoon cumin seeds
1/2 teaspoon fennel seeds
1/4 cup cooked chickpeas
1 tablespoon tomato paste
1/8 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon smoked paprika
1 tablespoon soy sauce
1/4 cup sparkling water
3/4 cup vital wheat gluten

Steps:

  • In a large pan with canola oil, sautée the chopped onion and garlic cloves until soft. Add the cumin and fennel seeds. Let it cook for another minute until the spices are toasted.
  • In a food processor, add the chickpeas, onion-garlic-spices mixture, tomato paste, salt, thyme, smoked paprika, soy sauce, and sparkling water. Pulse until it's saucy. Then add the vital wheat gluten and pulse again until it comes together in a ball.
  • Prepare a large pot (filled with a couple of inches of water) with a steaming basket and bring it to high heat.
  • Divide the seitan into 4 equal chunks. Roll and press the seitan into a sausage shape. Roll each sausage in parchment paper and aluminum foil (roll it tightly). Twist the ends so that the seitan is completely covered in foil. Add the seitan sausages into the steaming basket and let them steam for about 40 minutes, flipping them after 20 minutes.
  • Let them cool off a bit before removing the aluminum foil and parchment paper.
  • You can use them in various recipes (Hot Dogs, Corn Dogs, serve them with mashed potatoes etc.). To warm them up, cook them in a pan or contact griller. You can store them in the fridge for 3-4 days.

  • Remove casing from sausages (cut a slice down the side) and discard. Add loose sausage to a medium bowl. Add herbs and bread crumbs. Add water and using your hands, blend together until the water seems absorbed in the mixture. Roughly form into a round and score round into 8 wedges. Set aside.
  • Starting with one roll of thawed puff pastry (approx 10x10-inches), use a sharp knife or pizza cutter to cut into 4 pieces approximately 5x5-inches). Brush a 1-inch-ish strip3 of Dijon mustard down the centre of each square. Scoop out 1/8 of the sausage mixture and form into a log 5 inches long (you want the sausage log to extend right to the end of the pastry). Place log on top of Dijon mustard. Brush the left side of the square with egg wash, then gently fold the right side over the sausage to meet the egg brushed edge and press to seal (or use a fork). Place on prepared baking sheet, with the sealed edge facing in towards the pan (fat side on the outside). This helps the filled side brown all the way around.
  • Repeat with remaining 3 squares, then repeat it all with the second sheet of puff pastry, for a total of 8 sausage rolls.

  • Add beans, olives and brine, agave, spices, tomato paste, sriracha if using, and broth (basically everything except the vital wheat gluten and tofu (if using) to your food processor and blend until mostly smooth. Some black specs of the bean skin may remain and that’s OK. Now add the vital wheat gluten and pulse until mostly combined. If using the tofu crumbles, add them in now and pulse a few times. Your dough may still be a little powdery. We’ll fix that. Add the dough to a medium bowl. Press it into one lump. If it looks a little powdery still, wet your hands and smooth the areas. Don’t knead the dough.
  • Set up a station with some prepared sheets of aluminum foil (I recommend 18” wide heavy duty aluminum foil). Each sheet should be about the size of a half sheet pan, about 13” by 18”. A little less or more is fine, but I like to be able to roll the sausage a few times to keep it from coming apart later. This recipe makes about 8-10 sausages, so prep at least 8 sheets.
  • If you care about making all your sausages the same size, weigh the lump of seitan on a food scale and divide it into equal portions for however many sausages you want to have. So, if you have 1600 grams of seitan and you want to make 8 sausages (these will be large and thick, like brats), each portion should weigh 200 grams. This is a step I did not do the first few times I tested the recipe. My vegan sausages were still delicious, just kinda all different lengths and thickness. If you’d like them all to be the same size, I recommend doing this extra step (it really doesn’t take much time at all).
  • Start by laying out your first sheet of foil and taking your first portion of seitan. Using your hands, form it roughly into a sausage shape. Place it in the bottom center of your foil sheet and press it and form it till it produces a sausage shape. Use a measuring tape or ruler to make sure your sausage is the length you’d like--I found just over 7” is the perfect length for a standard brat bun, but it’s up to you. If you did the above step in portioning out your seitan, you’ll find that each sausage should end up the same thickness if you’re measuring the length of each link as well.
