SPICY PORK TOFU

2 cups chopped napa cabbage
1/2 tablespoon salt
Canola oil to cook
1/2 pound ground pork
2 tablespoons minced ginger
1 1/2 tablespoons minced garlic
2 tablespoons thin soy sauce
3 tablespoons sesame oil
10 slices of tofu (2-inch by 1-inch)

Steps:

  • Sprinkle cabbage with the 1/2 tablespoon of salt and let stand for 30 minutes. Place the cabbage on a clean dish towel or cheese cloth and squeeze out any water. The dryer the cabbage, the better. In a hot wok that's been coated with canola oil add the ground pork. Stir-fry until nearly cooked through. Add ginger, garlic and salt; cook for another two minutes. Deglaze with soy sauce, add napa cabbage and sesame oil, continue cooking until the cabbage is wilted. Check seasoning.
  • Plating: Spoon contents of wok over the tofu on a large serving platter, serve family style.

1 tablespoon vegetable oil
1/4 lb boneless pork shoulder, sliced 1/4 inch thick across the grain
2 cloves garlic, minced
1 small onion, thinly sliced
3 tablespoons korean sweet-spicy red chili paste (kochujang)
4 cups beef stock or 4 cups low sodium chicken broth
3 medium zucchini, sliced crosswise 1/3 inch thick
15 ounces soft tofu, cut into 1-inch dice
2 scallions, thinly sliced
1 hot red peppers or 1 hot green pepper, thinly sliced (preferably Korean)
salt
fresh ground pepper
steamed rice, for serving

Steps:

  • Heat the oil in a medium saucepan.
  • Add the pork, garlic and onion and season with salt and pepepr.
  • Cook over high heat, stirring occasionally, until the pork is no longer pink, about 4 minutes.
  • Add the chili paste and cook, stirring, for 2 minutes.
  • Add the stock and bring to a boil.
  • Cover and cook over low heat for 15 minutes.
  • Add the zucchini to the saucepan and cook over moderate heat until almost tender, about 2 minutes.
  • Add the tofu and simmer for 2 minutes longer.
  • Add the scallions and fresh chile and simmer for 1 minute longer.
  • Ladle into bowls and serve with steamed white rice on the side.

A Spanish-influenced stew with slow-cooked belly pork, a cheap cut with great flavour and soft texture

1 tbsp olive oil
700g skinless, boneless pork belly, cut into large bite-sized chunks
100g cooking chorizo, sliced into thin rounds
1 large onion, chopped
1 large carrot, finely chopped
1 tsp fennel seed
small pinch dried chilli flakes
2 garlic cloves
4 bay leaves, fresh are best
sprig of thyme
large pinch golden caster sugar
1 tbsp tomato purée
50ml sherry vinegar or good quality red wine vinegar
400g tin chopped tomato
400g tin chickpea, drained and rinsed
fresh chopped parsley

Steps:

  • 1 Heat the oven to 160C/140C fan/gas 3. Heat the oil in a casserole dish with a lid and spend a good 10 mins browning the pork on all sides. If your casserole dish isn't wide enough to fit the pork in a single layer then brown it in batches. Scoop the pork out and set aside then add the chorizo and sizzle for a minute. Add the vegetables, fennel seeds, chilli flakes, garlic and herbs and cook for about 5 mins until the vegetables are soft and just starting to colour. Sprinkle over the sugar and stir in the tomato purée then splash in the vinegar and bubble for a moment. Tip in the tomatoes and a can of water. Stir the pork and juices into the sauce, season with salt and pepper and bring to a simmer.
  • Cover the dish with a lid and place in the oven for 1 hr 45 mins, checking occasionally and if the sauce becomes too thick add a splash more water. Remove the pan from the oven and stir in the chickpeas and return to the oven for 15 mins. Remove again and leave to cool slightly so it's not scorching hot then stir through the parsley. Taste for seasoning and serve with crusty bread or boiled potatoes.

4 boneless pork loin chops, about 3/4 inch thick

Steps:

  • Preheat oven to 375 degrees.
  • Lightly spray nonstick skillet with cooking spray.
  • Add corn, cook over medium high heat for 5 minutes or until corn begins to brown.
  • Add potatoes, cook and stir for 5 more minutes or until potatoes begin to brown.
  • Add tomatoes, chili powder, oregano, cumin and red pepper; stir until well mixed.
  • Lightly spray 8x8x2 baking dish with cooking spray. Pour corn mixture into dish.
  • Add oil and pork chops to skillet. Cook pork chops over medium-high heat until brown on one side.
  • Remove pork chops and place browned side up on top of corn mixture.
  • Sprinkle with pepper.
  • Bake uncovered 20 minutes or until meat is barely pink in center.
  • Sprinkle with cheese.
  • Let stand 2-3 minutes.

1 tablespoon olive oil
6 ounces pork tenderloin, halved lengthwise
1/2 teaspoon salt, divided
1/4 teaspoon black pepper, divided
1 large yellow onion, sliced
2 cloves garlic, sliced
2 teaspoons chili powder
3 cups canned hominy (about 3 cans, 15 ounces each), drained
6 cups low-sodium vegetable broth
2 bay leaves
1 small head green cabbage, cut into ribbons
8 radishes, sliced
1/2 medium avocado, sliced
1 jalapeño chile, sliced

Steps:

  • Heat oil in a Dutch oven over medium-high heat. Sprinkle tenderloin with 1/4 teaspoon salt and 1/8 teaspoon pepper and cook until meat no longer sticks to pot, about 2 minutes. Turn and repeat on other side, then remove and slice into 1/4-inch strips. Add onion and garlic to pot; reduce heat to medium-low. Add remaining 1/4 teaspoon salt and 1/8 teaspoon pepper and cook, stirring occasionally, until onion is transparent, 15 to 20 minutes; reduce heat as needed to keep from burning. During last minute of cooking, stir chili powder into onion mixture. Return meat to pot, along with hominy, broth and bay leaves. Bring to a boil, then reduce heat and simmer, uncovered, 20 minutes. Add cabbage, cover and cook another 10 minutes. Remove bay leaves. Divide stew among 4 bowls; serve garnished with radishes, avocado and jalapeño.

This is my Mom's pork noodle casserole. The added sour cream gives it a little twist on the usual version. The added red pepper and corn give it color and flavor. You can add and subtract any vegetables in this versatile recipe. This is one of my favorite comfort food recipes.

2 cups egg noodles
cooking spray
3 tablespoons butter
¼ cup chopped onion
¼ cup chopped celery
¼ cup chopped carrots
¼ cup chopped red bell pepper
2 (10.75 ounce) cans condensed cream of chicken soup
½ cup sour cream, or more to taste
2 cups shredded Cheddar cheese
1 (8 ounce) can whole kernel corn, drained
3 cups cubed cooked pork
1 teaspoon salt
¼ teaspoon ground black pepper
½ cup dry bread crumbs

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Melt the butter in a skillet over medium heat. Stir in the onion, celery, carrots, and red bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the noodles, cream of chicken soup, sour cream, Cheddar cheese, corn, and cooked pork, then season with salt and black pepper. Transfer mixture into the prepared baking dish. Sprinkle bread crumbs on top.
  • Bake in the preheated oven until bubbly, 30 to 35 minutes.

1 cup chopped red bell pepper (about 1 large)

3/4 teaspoon salt
2 cups shredded Italian cheese blend (8 oz)
1/2 cup heavy whipping cream
2 tablespoons thinly sliced fresh basil leaves

Steps:

  • In 8-inch sauté pan, melt butter over medium heat. Add bread crumbs; toast 2 to 3 minutes, stirring frequently, until browned. Transfer to small bowl; set aside.
  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread rice evenly in baking dish. Top evenly with pork, followed by beans, bell pepper and onions. In small bowl, mix broth, Italian seasoning and salt; pour on top. Cover with foil. Bake 40 minutes.
  • Stir cheese and whipping cream into pork mixture. Replace foil; bake 20 to 25 minutes longer or until rice is tender, pork is no longer pink in center and mixture is heated to at least 165°F in center of casserole. Stir; top with toasted bread crumbs and basil.
