We set out to make copycat KFC chicken, and it was easier than we thought to make fried chicken that tasted as good as what you'll find at KFC.

2 cups all-purpose flour
2 teaspoons salt
1-1/2 teaspoons dried thyme leaves
1-1/2 teaspoons dried basil leaves
1 teaspoon dried oregano leaves
1 tablespoon celery salt
1 tablespoon ground black pepper
1 tablespoon ground yellow mustard
1/4 cup paprika
2 tablespoons garlic salt
1 tablespoon ground ginger
3 tablespoons ground white pepper
1 cup buttermilk
1 egg, beaten
1 chicken, cut up into eight pieces
Neutral oil for frying, like canola or peanut oil
MSG seasoning, like Ajinomoto or Accent

Steps:

  • In a large bowl, combine the flour with the herbs and spices and set aside.
  • Meanwhile, in another large bowl, whisk together the buttermilk and egg, mixing until they're well combined.
  • Add the chicken to the buttermilk bowl and toss to coat. Cover the bowl lightly with plastic wrap or a lid and let it sit for 30 minutes, or as long as overnight. If marinade times exceed 30 minutes, place the bowl in the refrigerator.
  • Meanwhile, preheat the oven to 175 degrees Fahrenheit. Line a baking sheet with aluminum foil. Set an oven-safe wire cooling rack inside the sheet and set aside.
  • In a large Dutch oven, heat about 3 inches of oil. If you're using an electric tabletop fryer, fill the unit to its MAX line.
  • Preheat the oil to 350 degrees over medium-high heat, using a deep-frying thermometer to check the temperature. When the oil reaches 350 degrees, reduce the heat to medium-low.
  • Remove a chicken piece from the buttermilk, allowing any excess liquid to drip off. Place the piece in the flour mixture and press down firmly, allowing the flour to adhere on all sides. Shake off any excess flour and carefully drop the chicken into the hot oil. Continue dredging chicken until the fryer is full but not overcrowded; you should be able to fry three to four pieces at a time.
  • Cook the chicken for about 12 minutes, turning halfway through, until the crust turns an appealing golden brown color.
  • Transfer the chicken pieces to the prepared baking sheet and place it in the oven.
  • Allow the oil to return to temperature before adding more chicken. Repeat the dredging and frying process with the remaining pieces of chicken.
  • When all the chicken is fried, let the pieces sit in the oven until each reaches an internal temperature of 165 degrees.
  • Sprinkle each piece of chicken with a few shakes of MSG before serving. If you're unsure about food additives like MSG, feel free to skip the extra seasoning.

Steps:

  • Preheat fryer to 350°F. Thoroughly mix together all spices.
  • Combine spices with flour, brown sugar and salt.
  • Dip chicken pieces in egg white to lightly coat them, then transfer to flour mixture. Turn a few times and make sure the flour mix is really stuck to the chicken. Repeat with all the chicken pieces.
  • Let chicken pieces rest for 5 minutes so crust has a chance to dry a bit.
  • Fry chicken in batches. Breasts and wings should take 12-14 minutes, and legs and thighs will need a few more minutes. Chicken pieces are done when a meat thermometer inserted into the thickest part reads 165°F.
  • Let chicken drain on a few paper towels when it comes out of the fryer. Serve hot.

  • CAREFULLY drop each piece breaded chicken one at a time, gently into the deep-fryer basket without crowding (if a standard size home fryer is used, add no more than 2-3 pieces at a time); (if stovetop frying, gently place breaded chicken pieces into hot oil using tongs, turning once halfway through frying duration).
  • FRY chicken between 15-18 minutes until golden brown and fully cooked, depending on chicken portions/sizes (juices should run clear when chicken is done); BLOT chicken lightly to absorb excess oil; PLACE cooked chicken into a large resealable container to steam (the steam will soften the breading for added Original Recipe authenticity. If you prefer crisp breading, skip this procedure).
  • MAINTAIN frying fat temperature for each new batch and repeat the same cooking/steaming procedures for the remaining chicken.
  • REHEAT chicken if necessary before serving in a microwave oven, using a reduced-power setting, as if reheating 2 frozen pastries, pausing in intervals to turn chicken for even heating if necessary.

4 boneless chicken thighs (I recommend using chicken thighs for the best result, but you can also use chicken breasts)
1 cup buttermilk
2 ½ tablespoons hot sauce (optional)
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 cup all-purpose flour
2 ½ tablespoons cornstarch
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon white pepper
1/2 teaspoon cayenne pepper
1/4 tablespoon salt
1/4 tablespoon paprika
vegetable oil
1/2 cup mayonnaise
4 tablespoons ketchup
2 tablespoons vinegar
2 tablespoons mustard sauce
4 burger buns ((sesame seed hamburger buns))
1/2 bunch green leaf lettuce
butter (optional)

Steps:

  • Marinate the chicken: In a large mixing bowl, add buttermilk, hot sauce, salt and pepper. Mix well and add chicken. Cover with plastic wrap and marinate the chicken in the refrigerator for 3-4 hours.
  • Make the dredging mix: In a large mixing bowl, combine flour, cornstarch, garlic powder, oregano, white pepper, cayenne pepper, paprika and salt. Mix well and set aside.
  • Fry the chicken: When ready to cook, place a large pot or saucepan over medium-high heat and add 2 inches of oil. Heat the oil to 350˚F (177˚C)
  • Working one at a time, remove each piece from the marinade. Shake to remove excess, and then place it in the dredging mix and coat thoroughly. Tap off the excess.
  • Slowly lower the breaded chicken pieces into the oil. You'll notice that the temperature will drop slightly, so adjust the heat so that the temperature will stay between 300-350˚F. (Make sure not to crowd the pan).
  • Fry each piece for about 10-14 minutes, turning each piece every 2 minutes, until the chicken reaches an internal temperature of 165˚F
  • Remove the chicken from the oil and place on a cooling rack. Let them rest for 10 minutes.
  • Make the burger sauce: In a medium bowl, whisk together all the sauce ingredients.
  • Assemble Zinger Burger: Toast the buns on a skillet or grill until golden brown. Then spread softened butter on the cut-side of the buns.
  • Place the bottom bun on a plate. Then spread some burger sauce. Place the crispy chicken on top, add lettuce, and drizzle more burger sauce.
  • Add the top bun on top. Serve hot with French fries and salad.

Steps:

  • Add the spices to a small food processor until they're all uniform in size and the thyme, basil and oregano aren't larger in size anymore.
  • Add the flour in a bowl with all the herbs and spices and mix with a whisk.
  • In a second larger bowl add the buttermilk and egg together and whisk until combined.
  • Add the chicken to the buttermilk mixture for 20-30 minutes.
  • Remove chicken from the buttermilk soak and let any excess buttermilk drip off.
  • Dredge the chicken pieces in the flour mixture on all sides, then shake off the excess coating.
  • Let it rest on a cookie sheet for 20-30 minutes.
  • Add oil to a deep fryer or a large pot that is at least 5 inches high so that the chicken can be fully submerged.
  • Heat the oil to 350 degrees and fry in small batches for 15-18 minutes.
  • Remove the chicken from the oil and add to a drying rack on top of a clean cookie sheet.
  • If you add it to a paper towel or newspaper the bottom of the chicken will steam from the heat and become soft.

3 chicken breasts
¼ cup mayonnaise
1 teaspoon cayenne powder
¼ teaspoon cumin
¼ teaspoon onion powder
2 ¼ teaspoons paprika, divided
1 ¼ teaspoons garlic salt, divided
¼ teaspoon white or rice vinegar
2 egg whites
2 tablespoons vodka or other clear liquor
1 ½ tablespoons salt, divided
¾ cup flour
¼ cup cornstarch
½ teaspoon black pepper
1 ½ teaspoons white pepper
¼ teaspoon thyme
¼ teaspoon basil
¼ teaspoon oregano
½ teaspoon celery salt
1 teaspoon ground ginger
vegetable oil
3 challah or brioche buns
dill pickle hamburger slices

Steps:

  • Pour buttermilk over the chicken breasts in a deep bowl or Tupperware container. Mix to submerge the chicken. Cover with plastic wrap or a lid, and place in fridge for 4 hours.
  • Make the spicy sauce by combining mayonnaise, cayenne powder, cumin, onion powder, 1/4 teaspoon of paprika, 1/4 teaspoon of garlic salt, and white or rice vinegar together in a small bowl. Then, set aside.
  • After 4 hours, remove the chicken from the brine, and put it on a plate to bring to room temperature. Be sure to keep the brine aside, as you will be using it in the next step.
  • While you're waiting for the chicken to reach room temp, whisk the egg whites, vodka, and 1 tablespoon of salt into the remaining brine mixture.
  • In a large bowl, whisk together the flour, cornstarch, and remaining spices.
  • Pour vegetable oil into a heavy pot or Dutch oven until it's around 2 to 3 inches high. Turn the heat on high.
  • Prepare a wire rack above a sheet pan lined with paper towels for the fried chicken, or just use the pan without a rack.
  • Arrange the chicken, flour mixture, and brine mixture near the stove to easily dredge the chicken before frying.
  • When the chicken has reached room temperature, dip each chicken piece in the buttermilk mixture and then in the flour-spice mixture to create a thick and satisfying crust. Flip and coat the other side. If you have enough flour mixture left, repeat this step.
  • Set the chicken aside until the oil reaches 325 F. With a fork, submerge the chicken in the hot oil. The bubbles should surround the chicken rapidly, but not make pops and splatters of oil. Continue to maintain this temperature on medium-low heat for about 5 to 10 minutes on each side. When done, the coating of the chicken should be golden-brown and the internal temperature at the thickest point around 165 F.
  • Fry chicken breasts one by one, and let them dry on paper towels when done.
  • Stir the spicy sauce again before spreading on one or both sides of a bun. Place three pickles on one half, and top with chicken breast. Then, enjoy!

  • Add the lard to a Dutch oven or pressure fryer and heat to 365 F. Be sure to follow the manufacturer's directions if using a pressure fryer.
  • Using a utensil, lower 4 pieces of the chicken into the hot oil, and if using a pressure fryer, lock the lid in place. Be careful not to burn yourself with the hot oil.
  • Allow to fry for 8 to 10 minutes, until the chicken turns golden brown and thoroughly cooks.
  • If using a pressure fryer, release the pressure according to the manufacturer's directions. Then, remove the finished chicken to paper towels or a metal rack to drain.
  • Repeat with the remaining 2 pieces of chicken.

1 1/2 cups milk, divided
1 cup peanut oil
1 large egg
1/2 cup all-purpose flour
1 tablespoon confectioners' sugar
Kosher salt and freshly ground black pepper, to taste
4 hamburger buns, split
1 head green leaf lettuce, leaves separated
1 beefsteak tomato, sliced
Dill pickle slices

Steps:

  • Place a chicken breast on a cutting board. With your hand flat on top of it, carefully slice the chicken in half horizontally. Trim excess fat as needed. In a large shallow baking dish, combine chicken, pickle juice and 1/2 cup milk; marinate for at least 30 minutes. Drain well. Heat peanut oil in a large skillet over medium high heat. In another large shallow baking dish, whisk together remaining 1 cup milk and egg. Stir in chicken to coat and drain excess milk mixture. In a gallon size Ziploc bag or large bowl, combine chicken, flour and confectioners' sugar; season with salt and pepper, to taste. This new sandwich has been trashed by the real lovers of the original chicken little and we are all asking the question, why can't they merely bring back the original? So, in the meantime, I actually have tried to copy this sandwich in my kitchen and try and satisfy my cravings for this old fashioned love. It's not precisely just like the classic, and i did add pickles, cause I do love the mix it offers the sandwich, however trust me, this can be a lot better than the new wannabe KFC "chicken little". How to make KFC Chicken Littles as the Original : Buy the softest dinner rolls you can find in your bakery or your supermarket. Toast the bun slightly on the stove first. Don't skimp on the mayonnaise, it needs a decent lather. You need to flash fry the chicken before you bake it. It needs an additional soft crunch instead of an extra crisp coating. Pickles are optional, chose according to your liking. If you wish to make this sandwich even more like the classic, you can purchase chicken patties in the frozen section of your supermarket. How to make KFC Chicken Littles Recipe (Copycat) Cut the chicken breasts into 3" pieces. Pounding with a kitchen mallet or if you don't have one, use rolling pin to ensure even cooking and tenderness. Heat the oil to about 400F using a fry safe pot. Prepare the sandwiches while the chicken is baking. Toast each side on the roll slightly using a skillet on medium heat, sprayed with nonstick oil spray. When buns are cooled a bit, add generously mayonnaise to each side of the rolls, place four pickle slices (if you like) on every bottom half of the bun. Place a piece of warm tasty chicken on every sandwich and enjoy! 3 boneless chicken breasts (around half a kg)
1 tspn of pepper

2 tblspns of worcestershire sauce
1 tspn of Mustard powder or all spice powder
2 tblspns of Flour
1 Egg
1 1/2 cups of Breadcrumbs
Soft seeded burger buns
Mayonnaise or KFC Zinger Sauce

Steps:

Then marinate the chicken breasts with the pepper, salt, mustard or all spice powder, and Worcestershire sauce. Leave the chicken over night or at least 4 hours. To prepare the batter, beat together an egg and 2 tablespoons of water, then set this aside. Place the marinated chicken breasts in flour and coat generously. Dip them in to the egg and then in to the breadcrumbs, until well coated. Deep fry the coated chicken breasts in hot oil on a medium to high heat, until the breasts are golden brown and crispy. Slice the buns in half and lightly toast, then stack the final burger, with the lettuce at the top, then the chicken and finally the mayonnaise or KFC zinger sauce. 1 tsp. chili powder
1 tsp. garlic granules
1 tsp. paprika
4 chicken breasts
1 egg (beaten)
50g cornflour
Low-calorie cooking spray
4 sesame seed burger buns
Handful lettuce leaves
2 tomatoes (sliced)
Sauce of choice

Steps:

  • First, preheat your oven to 350 degrees Fareniheit. Then place the tortilla crisps, chili powder, garlic granules, and paprika in a zip-lock food bag and use a rolling pin to smash the mixture into fine crumbs. Next, set up a station to prepare your chicken breasts - you should line up three shallow bowls or slightly rounded plates. In the first, you should have cornflour, in the second you should have the beaten egg, and you should empty out the tortilla mix into the third. Prepare your chicken breasts by patting them dry with a piece of kitchen towel. Then use tongs to place the first one in the cornflour mix - making sure to cover it fully. Then move on to dip the coated chicken breast into the egg wash, then finally the spicy tortilla mix. Repeat for the remaining chicken breasts. Place each coated chicken breast on a baking tray and a spray with low-calorie cooking spray. Bake for 25 minutes, then carefully remove the tray from the oven and turn each chicken breast over. Spray the other side of each one with some more low-calorie spray and then bake for a further 20 minutes. Meanwhile, prepare your burger buns by cutting them in half. Add a generous amount of sauce to the bottom bun, then place a few salad leaves and slices of tomato on top. Once the zingy chicken fillets are completely cooked through and golden, place them on top of the tomatoes and lettuce. Then add another squirt of sauce or low-sugar ketchup and complete the burger with the top of the bun.

1 whole frying chicken, cut up and marinated
6 -8 cups shortening (for cooking)
1 egg, beaten
1 cup milk
2 cups all-purpose flour
2 1/2 teaspoons salt
3/4 teaspoon pepper
3/4 teaspoon msg
1/8 teaspoon paprika
1/8 teaspoon garlic powder
1/8 teaspoon baking powder

Steps:

  • Trim any excess skin and fat from the chicken pieces.
  • Preheat the shortening in a deep-fryer to 350 degrees.
  • Combine the beaten egg and milk in a medium bowl.
  • In another medium bowl, combine the remaining coating ingredients (flour, salt, pepper and MSG).
  • When the chicken has marinated, transfer each piece to paper towels so that excess liquid can drain off.
  • Working with one piece at a time, first dip in egg and milk then coat the chicken with the dry flour mixture, then the egg and milk mixture again, and then back into the flour.
  • Be sure that each piece is coated very generously.
  • Stack the chicken on a plate or cookie sheet until each piece has been coated.
  • Drop the chicken, one piece at a time into the hot shortening.
  • Fry half of the chicken at a time (4 pieces) for 12-15 minutes, or until it is golden brown.
  • You should be sure to stir the chicken around halfway through the cooking time so that each piece cooks evenly.
  • Remove the chicken to a rack or towels to drain for about 5 minutes before eating.
