PISTACHIO ECLAIR DESSERT
This yummy dessert, sent in by Lisa Givens of Austin, Texas, whips up minutes and can be chilled until ready to serve. "It's tasty and easy to fix," she notes. "I've often brought it to family gatherings and office parties, and it's always the first to go."

- In a large bowl, whisk milk and pudding mixes for 2 minutes. Fold in whipped topping. , In a 13-in. x 9-in. dish, layer a third of the graham crackers and half of the pudding mixture. Repeat layers. Top with remaining graham crackers. Refrigerate for at least 1 hour., Spoon frosting into a microwave-safe bowl. Cover and microwave on high for 15-20 seconds or until softened, stirring once. Spread over graham crackers. Cover and refrigerate for at least 20 minutes or until frosting is set.

- While you're preparing your dessert, preheat the oven to 350 degrees Fahrenheit.
- In a large bowl, mix up the melted butter and cracker crumbs until everything is well combined.
- Next, put the mixture in a 9 x 13 baking pan and gently press it down around the edges, corners, and sides of the pan.
- You will bake this crust until it's golden brown, and it smells like it's been toasted. That should take around 15 minutes. Take the crust out of the oven to let it sit and cool.
- The next step is to mix up the pudding, ice cream, and the milk into a large bowl. Make sure the mixture is well-blended.
- Now pour it into the crust, spreading it evenly around the pan.

I remember a version of this dessert from my teenage years as "Better than Robert Redford" but I think it's time to update the name a bit. ;) It *is* pretty darn tasty, after all.

Steps:
- Preheat oven to 350 degrees F and grease a 13"x9" pan.
- Combine crust ingredients (if you like, you can add 1/2 cup chopped pistachio nuts to the crust).
- Press crust mixture into the greased pan and bake at 350 degrees for 7 minutes.
- Remove from oven, set aside, and let cool completely.
- In a bowl, combine the softened cream cheese and powdered sugar until creamy.
- Fold in half of the dessert topping (Cool Whip) and carefully spread over the cooled crust.
- In another bowl, with an electric mixer beat together the pudding mix and milk at medium speed until thick (5-7 minutes).
- Pour slowly and carefully over cheese layer, using a spatula to spread without mixing with the cream cheese mixture.
- Spread the remaining Cool Whip on top and decorate as you wish with chopped pistachios, chocolate shavings, etc.
- Refrigerate for at least two hours or over night before serving.
- Makes 10 to 12 servings.
- You can also include a layer of crushed pineapple in the dessert.
