ROASTED GARLIC HUMMUS

BEST Roasted Garlic Hummus dip! The perfect flavor combination in this silky-smooth, creamy dip. Sweet and smokey, with just enough zing. Top it with toasted pine nuts and feta for glorious party presentation!

2 heads garlic
Private Reserve Greek extra virgin olive oil
2 1/2 cup cooked chickpeas (or from canned), skins removed, if possible
4 tbsp tahini
3 tbsp fresh lemon juice
2 tbsp water, more as needed
Salt
1 tsp sumac
1/2 tsp cayenne pepper, optional
1 tsp za'atar spice
3 tbsp chopped fresh parsley, for garnish
Toasted pine nuts, for garnish
Crumbled feta cheese, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • Remove the loose papery outside skin from the garlic heads, but keep the cloves intact. Cut about 1/2 inch from top. Place the garlic cloves each in a piece of foil that's large enough to wrap around. Lightly drizzle with olive oil. Close the foil up. Bake in heated oven for 40 to 45 minutes or until the garlic is very soft. Remove from heat and let cool briefly, then peel.
  • In the bowl of a food processor, fitted with a blade, place the roasted garlic, chickpeas, tahini, lemon juice, and water. Sprinkle salt, sumac and cayenne. Blend until smooth. Be sure to add a little more water as needed, until you achieve desired smooth texture. You can also add a little more lemon juice to your taste. Taste and adjust for salt and spices.
  • Spread the roasted garlic hummus in a bowl. Add a generous drizzle of quality extra virgin olive oil. Top with za'atar spice, and if you like, parsley, toasted pine nuts, and crumbled feta.
  • Serve with warm pita bread or toasted crostini and assorted vegetables. Enjoy!

Creamy, lemony layers are brightened by berries in this no-bake cross between tiramisu and trifle. Kids can assemble this treat with very little help.

1/4 cup fresh lemon juice
1/4 cup granulated sugar
12-ounces cream cheese, softened
One 8-ounce jar prepared lemon curd
2 cups heavy cream
22 hard ladyfinger cookies
3 cups mixed raspberries and sliced strawberries
Powdered sugar, for garnish
Whipped cream, for serving

Steps:

  • In a small measuring cup, mix the lemon juice with the sugar and 1/4 cup water until the sugar is dissolved. Set aside.
  • Place the cream cheese, lemon curd and heavy cream in a food processor and process until smooth and a bit fluffy.
  • To assemble the tiramisu, place half the ladyfingers in the bottom of an 8-inch square baking dish, breaking a few to fit, and drizzle with half of the lemon syrup. Top with half the lemon cream and 1 cup mixed berries. Repeat the layers, using the remaining ladyfingers, syrup and lemon cream.
  • Cover with plastic wrap and chill at least 8 hours or overnight. Before serving, top with the remaining 2 cups of berries and dust with powdered sugar. Serve with whipped cream on the side.

1 cup canned artichoke hearts, drained
1/4 cup fat-free vegetable broth
1/4 cup plain fat-free Greek yogurt
1 tablespoon lemon juice
1 1/2 teaspoons crushed garlic
1/2 teaspoon dried parsley flakes, plus more, for optional garnish
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
1/4 teaspoon paprika, plus more, for optional garnish
1 (15-ounce) can chickpeas (garbanzo beans), drained and rinsed

Steps:

  • Put all of the ingredients except for the chickpeas in a blender.
  • Using a potato masher or a fork, thoroughly mash the chickpeas. Transfer to the blender. Puree until smooth, stopping and stirring if blending slows.
  • For best flavor, refrigerate the hummus for several hours. Before serving, garnish with a sprinkle each of paprika and parsley flakes, if you like.

This trifle is impressive for so many reasons, starting with how easy it is. You just bake our basic sheet pan cake and then cut out the rounds to layer; the scraps become your crumble topping. Once assembled, you can see each distinctive layer of lemon pudding, whipped cream, cake and bold-colored berries. The berries also release a sweet liquid as they sit in the lemon-sugar mixture that soaks into the cake and brings the whole thing together in one bright and creamy, tart-sweet dessert.

Nonstick baking spray, for the baking sheet
4 large eggs, cold (see Cook's Note)
1 cup sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1 stick (1/2 cup) unsalted butter, melted and cooled to room temperature
1 tablespoon pure vanilla extract
1 1/2 cups all-purpose flour, sifted (see Cook's Note)
2 cups blackberries
2 cups blueberries
2 cups raspberries
2 cups strawberries, trimmed and quartered
2 tablespoons sugar
1 tablespoon finely grated lemon zest plus 1/4 cup lemon juice (from 1 lemon)
4 cups prepared instant lemon pudding
2 cups whipped cream

Steps:

  • For the cake: Position an oven rack in the center of the oven and preheat to 375 degrees F. Lightly coat an 18-by-13-inch sheet pan with nonstick baking spray. Line the bottom with parchment. Set aside.
  • Beat the eggs, sugar, baking powder and salt in a stand mixer fitted with the whisk attachment on high speed until the mixture is pale and very thick (enough to hold a wake from whisk), about 10 minutes (see Cook's Note). Reduce the speed to medium-high and drizzle in the butter and vanilla until just combined, about 10 seconds. Reduce the speed to low and add the sifted flour all at once. Beat until just combined, about 5 seconds. Gently fold the batter once or twice using a rubber spatula, then scrape it into the prepared sheet pan. Spread it evenly with the spatula, using broad, gentle strokes to keep the batter airy.
  • Bake, rotating the pan halfway through, until the top is lightly golden, 15 to 18 minutes. Cool in the sheet pan for 10 minutes, then invert onto a wire rack and cool completely.
  • For the assembly: Combine the blackberries, blueberries, raspberries, and strawberries with the sugar and lemon zest and juice in a large bowl and lightly toss with a spoon to combine. Set aside for 15 minutes to allow the berries to release some juice.
  • Use a sharp paring knife to cut out 2 rounds and 2 half-rounds from the sheet cake, using the top of the trifle dish as a guide. The 2 half-circles can be combined to create 1 whole circle. This gives you 3 layers of cake. Reserve all the cake scraps.
  • Spread about 1 1/3 cups of the lemon pudding in the bottom of a 4-quart round trifle dish, then top with a cake round, about 2 cups of berries (including some of the juices) and about 1/2 cup of the whipped cream. Repeat the layers 2 more times. Pile the remaining berries on top in the center and spread the remaining whipped cream around the edges. Crumble there rerved scraps of cake with your fingers and sprinkle over the whipped cream.
  • Keep cold in the refrigerator until ready to serve, up to 12 hours.
