Coquito is a Puerto Rican eggnog like drink prepared with coconut milk that is traditionally served on Nochebuena (Christmas Eve).

Number Of Ingredients 8

14 oz (1 can) sweet condensed milk
12 oz (1 can) evaporated milk
13.5 oz (1 can) coconut milk
15 oz (1 can) cream of coconut
1 teaspoon cinnamon
1 teaspoon nutmeg
2 teaspoons vanilla extract
2 1/2 cups light rum

Steps:

  • In a blender, combine condense milk, evaporated milk, coconut milk and coconut cream.
  • Add the cinnamon, nutmeg and vanilla.
  • Finally, add the rum. Blend until all is well combined.
  • Pour into a glass bottles, seal tightly and refrigerate.
  • Serve cold in small drink glasses and garnish with a sprinkle of cinnamon or nutmeg. Shake well before serving.

Number Of Ingredients 2

to make about 1 quart.. 1-1/4 cups of coconut cream, you can get in grocery store in mixed drinks section. 3/4 evapprated milk, 2 egg yolks 1 teaspoon vanilla extract, 1 cup dark rum, 1cup medium dark rum, such as appleton states or mount gay,
2 tablespoons cointreau or other orange- floavored liqueur freshly grated nutmeg

Steps:

  • 1. Combine the coconut cream,evaporated milk,egg yolks and the vanilla in the jar of a blender, and blend at high speed for 30 seconds, or until the mixture is smooth. Add the dark rum,medium rum and Cointreau, and blend for a few seconds longer, Refrigerate the coqui for 4 hrs. or until very chilled.
  • 2. To serve, pour the coqui into chilled parfait or punch glasses and sprinkle the top lightly with the nutmeg.

nutmeg Freshly grated
1 c Dark rum
1 1/4 c Coconut cream
2 tb Cointreau orange liqueur
2 Egg yolks
1 c Medium-dark rum Appleton
1 ts Vanilla extract

Steps:

  • Coconut cream is made by pureeing 1 1/4 cups coarsely chopped fresh coconut with 1 1/4 cups light cream, then straining through cheesecloth. Combine the coconut cream, evaporated milk, egg yolks and vanilla in the jar of an electric blender, and blend at high speed for 30 seconds, or until the mixture is smooth. Add the dark rum, medium-dark rum and Cointreau, and blend for a few seconds longer. Refrigerate the coqui for 4 hours, or until it is thoroughly chilled. To serve, pour the coqui into chilled parfait or punch glasses and sprinkle the top lightly with nutmeg. Very yummy creamy tropical coconut eggnog made with spices and white rum. It is always requested at my holiday gatherings. (And sometimes gets selfishly hidden in the fridge by the hostess.) Serve in glass cups and sprinkle with more cinnamon if desired. Feliz Navidad!

2 egg yolks, beaten
1 (12 fluid ounce) can evaporated milk
1 (14 ounce) can cream of coconut
1 (14 ounce) can sweetened condensed milk
½ cup white rum
½ cup water
¼ teaspoon ground cloves
½ teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • In the top of a double boiler, combine egg yolks and evaporated milk. Stirring constantly, cook over lightly simmering water until mixture reaches a temperature of 160 degrees F (71 degrees C). The mixture should be thick enough to coat the back of a spoon.
  • Transfer mixture to a blender, and add cream of coconut, sweetened condensed milk, rum, water, cloves, cinnamon, and vanilla. Blend for about 30 seconds. Pour into glass bottles and chill overnight.
