1 cup all-purpose flour
1 cup cornmeal
2 teaspoons baking powder
1 teaspoon salt
2 large eggs, room temperature
1 cup buttermilk
1/4 cup canola oil
DRESSING:
1 tablespoon canola oil
1 medium onion, chopped
2 celery ribs, chopped
3 large eggs
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
3 teaspoons poultry seasoning
1 teaspoon pepper
1/2 teaspoon salt
2 cups chicken broth

Steps:

  • Preheat oven to 400°. In a large bowl, whisk flour, cornmeal, baking powder and salt. In another bowl, whisk eggs and buttermilk. Pour oil into an 8-in. ovenproof skillet; place skillet in oven 4 minutes., Meanwhile, add buttermilk mixture to flour mixture; stir just until moistened., Carefully tilt and rotate skillet to coat bottom with oil; add batter. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., Reduce oven setting to 350°. For dressing, in a large skillet, heat oil over medium-high heat. Add onion and celery; cook and stir 4-6 minutes or until tender. Remove from heat. Coarsely crumble cornbread into skillet; toss to combine. In a small bowl, whisk eggs, condensed soup and seasonings; stir into bread mixture. Stir in broth., Transfer to a greased 13x9-in. baking dish. Bake 45-55 minutes or until lightly browned.

BASIC CORNBREAD RECIPE
1 cup self-rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs (lightly beaten)
2 Tablespoons vegetable oil
SOUTHERN DRESSING RECIPE
Cornbread (9x9 inch pan (my grandmother always uses day old cornbread))
3 pieces of toast (crumbled (or stale bread))
1 cup onions (diced (about half of a large onion))
1 cup of celery (diced (about 3 stalks))
1 cup of green bell peppers diced (about 1 medium green bell pepper. You could also add in some red bell pepper as well if you'd like)
1 cooked chicken breast or cooked chicken thighs (shredded)
2 eggs
3-4 cups of chicken or turkey broth
1 teaspoon poultry seasoning
1 teaspoon sage
1 teaspoon black pepper

Steps:

  • Preheat the oven to 350 F.
  • To make the cornbread, in a bowl,whisk together the cornmeal & flour.
  • Add in the buttermilk, eggs & oil.
  • Stir just until combined. Do not over work the batter.
  • Pour into a greased, 9 x9 baking dish.
  • Bake for about 20-25 minutes or until done.
  • Let cool.
  • Once cooled break up the cornbread and toast it in the oven to dry it out. *See note*
  • Set aside.
  • To make the dressing, add the dried cornbread and crumbled toast into a large bowl. Set aside.
  • In a saucepan, sauté onions, celery and green bell peppers in a little bit of butter or olive oil until tender.
  • Add the sautéed veggies into the cornbread mixture.
  • Add shredded chicken into the cornbread mixture.
  • Stir together to combine.
  • Add in the broth a little at a time. (Add in just enough to make everything thick & a little soupy.)
  • Stir in poultry seasoning, sage, and black pepper.
  • Give it a taste and add more seasonings if desired.. It should taste exactly the way you want your dressing to taste like.
  • When you are content with the taste, go ahead and stir in the eggs.
  • Pour into a buttered 9 X 13 casserole pan.
  • Bake for 45 minutes or until set.

Cornbread (enough to fill a 9x13)
1 sleeve ritz or saltine crackers
3 medium eggs (lightly beaten)
1 large yellow onion (diced)
5 cloves garlic (minced)
5 sage leaves (OR 2 1/2 tsp ground sage)
2 tbsp olive oil
4-6 cups chicken broth
14 oz cream of chicken
2 tsp seasoning salt
1 tsp coarse black pepper
1 tsp thyme leaves
3 stalks celery (chopped)

Steps:

  • Start chopping, and dicing all of the vegetables such as the celery, onions, and garlic. Also chop up the fresh sage.
  • Next, drizzle the olive oil into a large pan, then place the pan over medium heat.
  • Once the oil is nice and hot add in the onions, celery, and garlic. Cook until nice and tender.
  • Now toss in the fresh sage. Continue to cook for 2 minutes. Turn the heat off.
  • Crumble the cornbread into a large mixing bowl, along with the crackers.
  • Now add in the cooked vegetables. Fold the ingredients until everything is well combined.
  • Now pour in the broth followed by the cream of chicken soup.
  • Add in the eggs, and mix everything until well combined.
  • Sprinkle in the seasoning salt, thyme and pepper.
  • Now mix until well combined.
  • Preheat the the oven to 350 F.
  • Lightly oil a 9x13 bake dish, then pour in the dressing mixture.
  • Bake the dressing uncovered for about 45 minutes.
  • Serve and enjoy!

1/2 loaf White bread
1/2 medium onion
2 tbsp. butter or turkey fat (skimmed from the pan drippings)
1 lb. Buttermilk Cornbread (about 3/4 recipe)
3/4 lb. saltine crackers
3 hard-boiled large eggs
4 c. turkey pan juices, chicken broth, or low-sodium canned broth
Salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F. Grease a 9 x 13 x 2-inch baking dish.
  • Place the bread cubes on a large baking sheet and toast in the oven for 30 minutes, turning once after 15 minutes, until lightly brown. Set aside to cool. Raise the oven temperature to 450 degrees F.
  • In a medium skillet, saute the onion in butter until translucent and softened but not browned, about 5 minutes. In a very large bowl, crumble the cornbread, toasted bread cubes, and cracker crumbs. Add the onion and eggs and toss with a fork until mixed. Add 3 cups of the broth and mix well, adding more as needed to make a very moist but not soupy dressing. Season with salt and pepper to taste. Bake in the prepared pan for 15 minutes, or until lightly browned.

1 ¼ cup yellow cornmeal (stone ground)
¾ cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoons baking soda
¼ teaspoon salt
2 eggs (slightly beaten)
1 cup buttermilk
6 tablespoons butter (melted)
2 tablespoons unsalted butter
1 cup celery (diced)
1 cup onions (diced)
½ cup green bell peppers (diced)
½ cup red bell peppers (diced)
4 chicken thighs or chicken breast (cooked & chopped (seasoned with seasoned salt & pepper before cooking))
3 slices bread (toasted and crumbled)
1 tablespoon poultry seasoning
1 tablespoon sage
1 teaspoon black pepper
3-4 cups chicken broth
2 eggs (slightly beaten)
salt (if needed)

Steps:

  • Preheat oven to 425 F. Grease an 8 x 8 dish and set it aside.
  • In a large bowl whisk together cornmeal, flour, baking powder, baking soda, and salt.
  • Make a well in the center and add beaten eggs and buttermilk.
  • Gently stir dry and wet ingredients together just until combined.
  • Stir in the melted butter.
  • Spread batter evenly into prepared dish.
  • Bake for 20-25 minutes.
  • Let cool completely. Cover and let cornbread sit a couple of days before proceeding with the dressing. Or crumble the cornbread up and toast it in the oven to dry it out in order to use it the same day for dressing.
  • Preheat oven to 350 F. Grease a 9x13 pan. Set aside.
  • In a large bowl, crumble up the cornbread and set aside.
  • In a large skillet, melt the butter.
  • Add the celery, onions, green bell pepper, and red bell pepper.
  • Saute until tender.
  • Stir the vegetables into the cornbread.
  • Stir in the prepared chicken thighs and breadcrumbs.
  • Stir in enough chicken broth to make the mixture really wet and slightly soupy. (I usually need about 3 1/2 cups)
  • Add poultry seasoning, sage, and black pepper.
  • Taste the mixture and adjust the seasonings if needed. It should taste exactly how you prefer your dressing to taste.
  • Once satisfied with the taste, add eggs.
  • Spread mixture evenly into prepared dish.
  • Bake for 45-55 minutes.
  • Remove from oven and let cool.
  • Serve.

1 (16 ounce) package dry corn bread mix
2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock
2 tablespoons dried sage
salt and pepper to taste

Steps:

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
  • In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
  • Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

1/3 cup butter or 1/3 cup margarine
1/2 cup chopped celery
3/4 cup chopped onion
6 cups crumbled cornbread (not sweet)
4 slices bread, toasted and torn into small pieces (2 1/2 cups)
1 teaspoon dried sage
1/2 teaspoon pepper
3 cups hot chicken broth
salt, to taste
butter

Steps:

  • Heat oven to 450 degrees . Grease 13x9-inch (3-quart) baking dish or pan. Melt butter in medium skillet over medium-high heat. Add celery and onion; cook until tender, stirring occasionally.
  • In large bowl, combine celery mixture, crumbled cornbread, bread pieces, sage and pepper; mix well. Add hot broth and mix well. Taste and add salt and more sage if needed.
  • Pour into greased baking dish. Dot top with small pieces of butter. Bake at 450 degrees for 30 minutes or until golden brown.
  • Note: Broth made from boiling a baking hen will be best but canned will work.

3 teaspoons baking powder
3/4 teaspoon salt
9 eggs

1/4 cup cooking oil or 1/4 cup melted shortening
3 tablespoons bacon grease
2 slices white bread (1 cup)
1 1/2 cups onions, diced
3/4 cup celery, diced
1/4 lb pork sausage (optional)

4 (15 ounce) cans chicken broth (or broth from one boiled chicken deluted with water until 60oz.)

  • Let bacon grease get hot in baking pan while making cornbread mixture and oven is heating.
  • Sift together flour, cornmeal,baking powder and salt.

  • Lay white bread on top.
  • Leave uncovered drying for 2 days to a week.
  • Cornbread and white bread can be dried in warm oven if your limited on time,but results aren't as good.
  • Boil three of the eggs and dice.
  • Crumble sausage in fry pan with butter or margarine, add onion and celery and cook until sausage isn't pink and celery is slightly tender.
  • Make sure cornbread and bread are crumbled into small pieces and add sausage mixture without draining fat.
  • Add diced boiled eggs,sage,poultry seasoning.
  • Add four beaten eggs,chicken broth and water.
  • Stir well.
  • I use my hands to make sure it is mixed well.
  • Taste and add salt and pepper as desired.
  • Bake at 400 until top is slightly brown usually about an hour.
  • Do not over cook-- if you like it moist water can be added while cooking.
  • YUMMMMM.
