8 ounces cooked corned beef, diced
1 white onion, finely chopped
1 bell pepper, finely chopped
2 medium baking potatoes, peeled and shredded (about 2 cups)
4 tablespoons unsalted butter
4 large eggs
Kosher salt and freshly ground pepper
4 slices cheddar cheese (about 2 ounces)

Steps:

  • Heat the oil in a medium skillet over high heat. Add the corned beef and cook, stirring with a wooden spoon, until it releases some fat and browns slightly, about 3 minutes. Stir in the onion, bell pepper and potatoes and cook, undisturbed, until brown and crisp on the bottom, about 6 minutes. Continue cooking, turning the hash as it browns evenly, about 15 more minutes.
  • Meanwhile, heat the butter in a nonstick skillet over medium-high heat. Fry the eggs sunny-side up or over easy; season with salt and pepper.
  • Place the cheese slices on top of the hash, reduce the heat and let sit until the cheese melts, about 1 minute. To serve, top each portion of hash with a fried egg.

1 corned beef brisket with spice packet (3 to 4 pounds), trimmed
6 to 8 small red potatoes
3 medium carrots, cut into 2-inch pieces
3 celery ribs, cut into 2-inch pieces
2 tablespoons chopped celery leaves
2 turnips, peeled and cut into wedges
1 medium head cabbage, cut into 6 to 8 wedges
1/2 pound fresh green beans
3 to 4 ears fresh corn, halved

Steps:

  • Place corned beef and enclosed seasoning packet in an 8-qt. Dutch oven. Cover with water and bring to a boil. Reduce heat; cover and simmer for 2 hours or until meat is tender. Add potatoes, carrots, celery, celery leaves and turnips; return to a boil. Reduce heat; cover and simmer for 20 minutes. Add cabbage, beans and corn; return to a boil. Reduce heat; cover and simmer 15-20 minutes or until vegetables are tender.

Leftover Corned Beef Hash With Root Vegetables image

1 lb potatoes (any type)
3 large carrots
3 parsnips
2 large shallots
2 t olive oil (herb flavored is good if you've got it)
1 T minced fresh rosemary (divided)
1 t garlic powder
Kosher salt
Fresh ground pepper
Cooking spray
12 oz. cooked and diced corned beef
4 eggs (optional)

Steps:

  • Preheat oven to 375 degrees F. Wash and peel carrots and parsnips, cut into approximately ½ inch dice. Peel potatoes, if desired (I prefer to leave the skins on), cut into ½ inch dice. Peel and dice shallots.
  • Cover a rimmed baking sheet with foil. Place vegetables on baking sheet. Drizzle 2 T olive oil on vegetables. Using your hands, work oil through vegetables to evenly coat. Sprinkle garlic powder, half the minced rosemary, and salt and pepper to taste over vegetable mixture, then use hands to mix again. (Note: Corned beef is fairly salty, so be sparing when adding salt to vegetables.
  • Spread vegetables onto baking sheet in a single layer. Place baking sheet in preheated oven. Cook for 30 minutes, until vegetables are cooked through and beginning to brown, stirring twice during cooking.
  • Remove vegetables from oven and set aside. Spray a 9×13 baking dish lightly with cooking spray. Add cooked vegetables to dish, along with the corned beef. Mix with a spoon to distribute meat evenly among the vegetables.
  • * Optional Eggs. If you're baking eggs along with the hash, make four indentations in the hash, crack egg into the well before continuing the bake. (After 12 minutes in the oven, the whites will be cooked and the yolks will be runny.) You can also use a poached egg, fried egg, or skip this step and serve without the egg.
  • Place hash in oven and cook for 10 to 12 minutes. Remove from oven, sprinkle remaining rosemary over hash, and serve.

2 sprigs parsley
1 tablespoon peppercorn
1 teaspoon mustard seeds
1 teaspoon whole cloves (or use allspice berry)
1 bay leaf
cheesecloth
kitchen twine
4 lbs corned beef brisket
cold water, to cover brisket
1/4 cup apple cider vinegar (this is to tenderize the meat)
1 (15 ounce) jar white pearl onions
3 small turnips, peeled and quartered
3 new potatoes, peeled and quartered
18 baby carrots
1 head cabbage, cut up into large pieces
1 cup apple cider juice (not vinegar)
fresh parsley, chopped
whole pickled beet (Greenwood Brand)

Steps:

  • GARNI: Prepare the bouquet garni: Place seasonings into middle of cheesecloth and tie with twine. Set aside.
  • BEEF: The method of tying up the brisket is optional for presentation, if not rolling, be sure and place brisket fat side up in the pot. TO ROLL, roll up the brisket fat side out into a cylinder shape and tie securely with twine. Place tied beef into a pot. Cover with cold water, add cider vinegar (the vinegar helps tenderize the meat), and bring to a boil. Remove the scum off the surface as it appears. Reduce the heat and simmer for 10 minutes. If the liquid is salty after 10 minutes, start again with boiling water. Add bouquet garni. Simmer for 2-3 hours skimming any scum as it appears on the surface.
  • VEGETABLES: Transfer beef to a large clean pot. Strain the liquid, cool slightly, and remove any oil/grease. Add onions, turnips, potatoes, carrots and cabbage, and apple cider to the pot containing the brisket. Cover with strained liquid and cook at a simmer for 1 hour more, or until very tender (you can pierce beef easily with a skewer).
  • SERVE: Remove the meat from the poaching liquid , cut the trussing strings and carve the meat into generous slices. Place them on a warmed platter. Arrange the cooked garnish vegetables around the meat. Sprinkle with chopped fresh parsley and serve with the beets.

1 teaspoon dry mustard
Pinch cayenne pepper
2 tablespoons water
1 cup (1/2 pound) unsalted butter, melted
1/2 lemon, juiced
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 onion, chopped
2 cups chopped corned beef
2 cups chopped Herbed Root Vegetables, recipe follows
2 tablespoons chopped fresh chives, plus more for garnish
4 eggs
2 tablespoons white vinegar
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 pound new potatoes, scrubbed
1 pound baby carrots, trimmed and scrubbed
1 pound baby turnips, trimmed and scrubbed
1 pound baby parsnips, trimmed and scrubbed
Kosher salt and freshly ground black pepper
Herb Butter:
1/2 pound unsalted butter, softened
1/2 cup mixed chopped fresh herbs like thyme, mint, chives, parsley, or chervil

Steps:

  • Make the hollandaise: Put the egg yolks, mustard, cayenne, and water into a blender. Blend this together and then slowly start pouring in the warm butter with the blender running. Stop the machine when all the butter has been incorporated. Taste and adjust the seasoning with lemon juice, salt, and pepper. Thin the hollandaise with a little water if it is too thick. Keep warm while you fry the hash and poach the eggs.
  • Fry the hash: Heat the oil and butter in a nonstick skillet over medium heat, add the onion, and cook until soft, about 5 minutes. Add the corned beef, vegetables,and chives; cook until the bottom is brown and crisp, about 5 to 10 minutes.
  • Poach the eggs: Meanwhile, fill a large skillet with water, bring it to a boil, and add the vinegar and a large pinch of salt. Reduce the heat until the water is just barely bubbling. Crack each egg into a small bowl and carefully slide the egg into the water. Cook until the eggs are set, about 3 1/2 to 4 minutes. Remove the eggs with a slotted spoon and dab the bottom with paper towels to dry them off.
  • Serve: Place 1/4 of the hash onto a warm plate or shallow bowl. Top with a poached egg and a couple of tablespoons of hollandaise; garnish with chives.
  • Put the olive oil and butter into a large pot over medium-high heat. Add the vegetables and toss to coat them well with the fat; season with salt and pepper. Add 1 cup water and bring to a boil. Lower the heat to a simmer, cover the pot, and cook until the vegetables are tender, about 20 minutes.
  • Meanwhile, make the Herb Butter by combining the soft butter and herbs together; season with some salt and pepper.
  • To serve, spread some Herb Butter in the bottom of a bowl. Add the hot vegetables and dot with more Herb Butter. Moisten with some of the cooking liquid and serve.

IRISH-AMERICAN CORNED BEEF HASH



Irish-American Corned Beef Hash image

This recipe is a mashup of several really good corned beef hash recipes I've had over the years. Interestingly, corned beef hash is not an Irish dish but an Irish-American one. Corned beef has been made by the Irish for centuries but mainly for export by the British landowners. It was not eaten by the traditional folk of the Island due to high cost until they emigrated to American and found corned beef to be cheaper than bacon. The corned beef replaced bacon in hash recipes around this time. The cheap cost of corned beef also made the New England Boiled Dinner, consisting of corned beef, cabbage, and root vegetables such as carrots, turnips, and potatoes, extremely popular across New England and Atlantic Canada.

5 cups cooked corned beef, finely diced shredded
7 cups root vegetables, finely diced shredded (potatoes, parsnips, sweet potatoes, turnips, rutabagas or a mixture)

  • Heat oil in a heavy large skillet over medium heat. Add the corned beef mixture, pressing to cover the bottom of the pan. Cook, without stirring, until golden brown and most of the liquid evaporates, about 15 minutes. Turn hash over. Cook until bottom is golden brown, about 10 minutes longer.

2 tbsp vegetable oil
1 onion, roughly chopped
340g can corned beef, cut into cubes
2 tbsp Worcestershire sauce
baked beans and a little curly parsley, roughly chopped, to serve (optional)

Steps:

  • Put the potatoes in a pan, cover with cold water and bring to the boil. Cook for about 6-7 mins, then drain.
  • Heat the oil in a non-stick frying pan and cook the onion for 3-4 mins over a medium heat. Add the potatoes and corned beef, and push down with a spatula to crisp up, cooking for about 5 mins. Turn the mixture over, trying not to break up the meat and potatoes too much, then add the Worcestershire sauce. Cook for another 5 mins, pushing down to crisp the base again. Season a little, then serve with baked beans and a sprinkling of parsley, if you like.

Steps:

  • In a very large pot, combine the water, kosher salt, brown sugar, pink curing salt, garlic, ginger, cinnamon stick, bay leaves, mustard seeds, peppercorns, allspice berries, juniper berries, and cloves. Stir and bring to a boil over high heat.
  • Once the brine is boiling, remove from the heat and add the ice to bring the temperature below 45˚F (7˚C).
  • Place the brisket in a large plastic storage container with a lid. Pour the cooled brine over the meat. Cover and brine the beef in the refrigerator for 5-7 days, flipping once a day.
  • Once the brisket is brined, remove the beef from the liquid and transfer to a pot large enough for it to sit flat on the bottom. Add the onion, celery, carrot, ginger beer, and beer. Bring to a boil over high heat, then reduce the heat to low, cover, and gently simmer for 2½-3 hours, or until the meat is fork-tender. Remove the meat from the pot and let cool. If making corned beef and cabbage, reserve the cooking liquid. Otherwise, discard.
  • Thinly slice the brisket against the grain for sandwiches or corned beef and cabbage, or dice for corned beef hash.
  • Melt the butter in a large cast-iron skillet over medium heat. Add the potatoes and onion and season with salt and pepper. Cook for about 5 minutes, until lightly browned.
  • Add the corned beef, garlic, paprika, and Worcestershire sauce. Cook for another 1-2 minutes, until the beef is warmed through and slightly crisped. Remove the pan from the heat.
  • Serve the hash with the eggs and garnish with chives.

However, I have recently made a half ham so added the ham instead of going without. Worked out well, still had the corned beef flavor and a few hints of the sweet ham.

1 tablespoon olive oil
1 large onion, chopped
1 clove garlic, minced
1 cup chopped cooked corned beef
