VEGETARIAN NEAT LOAF

Number Of Ingredients 6

4 eggs, beaten ( I do these first so I can check for egg shells - not that I would EVER drop any shells in the bowl).
1 (16 ounce) carton cottage cheese - use any variety you'd like.
1?4 cup vegetable oil or olive oil
1 (1 ounce) envelope ANY dry onion soup mix - Lipton works GREAT and is always easy to find. I must of stocked up last year because my supply is endless. Want some?
1 cup finely chopped walnuts - or leave our if you don't like nuts, but they add a lovely texture to the overall loaf.
1 white or yellow onion chopped finely

Steps:

  • 2-2 1?2 cups corn flakes (I use Corn Flakes but Special K also works great. If you use Corn Flakes, your loaf will be lighter. If you want a darker color, user Special K)
  • Grease or spray one glass bread loaf pan. Glass works better than metal for this loaf. But, use metal if that is all you have.
  • Pack the mixture in the pan and pat down. You don't want big air gaps inside.
  • Bake at 350 degrees for 65 minutes. When you take it out of the oven you shoudn't see any wet spots of pools of liquid on top. It should be firm (springy) to the touch. If it's still soft, put back in for another 5-10 minutes.

320g ready-rolled shortcrust pastry
plain flour, to dust
50g butter
125g golden syrup
25g light brown soft sugar
100g cornflakes
125g strawberry or raspberry jam
custard, to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Unroll the pastry and briefly roll out on a lightly floured work surface until it's large enough to fit a 23cm loose-bottomed tart tin. Use the rolling pin to lift the pastry over the tin, then press into the corners and sides so the excess pastry hangs over the rim. Trim this away, leaving just a small amount of excess hanging over the rim.
  • Line the pastry with baking parchment and fill with baking beans or uncooked rice. Bake for 15 mins. Remove the parchment and beans, then bake for another 5-10 mins until just golden. Remove from the oven and trim any excess pastry from the edges using a serrated knife.
  • Heat the butter, syrup and sugar in a small pan with a pinch of salt, stirring frequently, until melted and smooth. Fold in the cornflakes to coat in the butter mixture.
  • Spoon the jam into the cooked pastry base, then level the surface. Tip the cornflake mixture over the jam and gently press down until all of the jam is covered with a layer of the mixture. Return the tart to the oven and bake for another 5 mins until the cornflakes are golden and toasted. Leave to cool until just warm before slicing and serving with custard.

1 cup milk
2 tablespoons Worcestershire sauce
1 teaspoon sea salt
1 teaspoon black pepper (fresh ground)
1 teaspoon celery seed
1/4 cup onion (chopped)
2 cups corn flakes
1 1/2 lbs ground beef
1/2 lb ground pork
1/4 cup ketchup

Steps:

  • Mix; egg, milk worcestershire sauce, salt, pepper & celery seed together, add corn flakes, mix well.
  • Add ground beef and pork, mix well.
  • Pack mixture into a 9x5x3 loaf pan, cover with ketchup and bake at 350 for 1 hours.

100 g butter, chopped
1/2 cup brown sugar
2 tablespoons maple syrup
3/4 cup corn flakes, lightly crushed
1/2 roasted peanuts, chopped
cake mix
125 g butter
3/4 cup brown sugar
2 eggs
1 1/2 cups self raising flour
1 teaspoon ground cinnamon
1/2 cup buttermilk
2 tablespoons maple syrup

Steps:

  • Grease 14 cms x 21 cms loaf pan, line base and sides with baking paper.
  • Combine butter, sugar and syrup in bowl, mix well.
  • Spread over base of pan, sprinkle with cornflakes and nuts.
  • CAKE MIX.
  • Beat all cake batter ingredients in a medium bowl with electric mixer on low speed till combined well and smooth.
  • Spread this mix over cornflake mixture in pan.
  • Cook at 180 C for 55 minutes.
  • Let stand in tin 10 minutes before turning out.

I got this from a co-worker a couple of years ago. THIS IS THE ONLY MEATLOAF MY HUSBAND WILL EAT!! It's the only one I make now- it really is THAT good. I think the nutmeg plays a big part in the taste...a little secret ingredient. Sometimes I double the sauce part, or else I half the meat mixture and keep the sauce part the same.

2 eggs
1 cup corn flakes, crushed
1 onion, chopped
2 teaspoons pepper
2 tablespoons parsley, minced
1/2 cup ketchup
1/3 cup brown sugar, packed
2 tablespoons cider vinegar
1 1/2 teaspoons brown mustard
1/2 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • Prepare sauce (ketchup, brown sugar, vinegar, mustard, and nutmeg) in a bowl and set aside.
  • Combine remaining ingredients with hands until evenly mixed.
  • Work in half of the sauce with the meatloaf. Place the meatloaf in a loaf pan and shape it.
  • Pour the remaining sauce on top and bake for 50 minutes, or until center is no longer pink.

1 lb ground beef
1 lb ground turkey
5 cups corn flakes, crushed to make 2 cups
1/2 cup white onion, diced
1/2 cup red onion, diced
2 eggs
1 (7 1/2 ounce) can chipotle chiles in adobo, diced (seeds removed if desired, adobo sauce reserved)
iceberg lettuce
cooking spray
reserved adobo sauce
1/3 cup catsup
1/4 cup corn flakes, left whole

Steps:

  • Pre-heat oven to 350°F.
  • In a large bowl combine ground beef, turkey, corn flakes, onion, & eggs.
  • Add peppers, reserving the abobo sauce in the can.
  • Mix well until ingredients are well incorperated and press into sprayed loaf pan. You can also shape it into a loaf and place in a shallow baking pan. Whatever you prefer.
  • Bake 1 hour.
  • While it's baking, combine adobo & ketchup.
  • After 1 hour spread adobo mixture over the top of the meatloaf. Top with the whole corn flakes.
  • Bake another 20 minutes.
  • Remove and set to cool. Slice and serve hot on an iceberg lettuce bed, or slice up and refrigerate for sandwiches.
