My Great-Aunt Gladys was from a small mining town in England where pasties were popular. I loved to watch her craft each Cornish pasty, as she made them in different sizes depending on who was eating. Serve with a green salad to make a wonderful meal. -Verna Hainer, Pueblo, Colorado

3 cups all-purpose flour
1-1/2 teaspoons salt
3/4 teaspoon baking powder
1 cup shortening
8 to 10 tablespoons ice water
FILLING:
1 pound beef top round steak, cut into 1/2-inch pieces
1-1/2 cups finely chopped onion
1-1/2 cups cubed peeled potatoes (1/2-inch cubes)
1-1/2 cups chopped peeled turnips (1/2-inch cubes)
1 teaspoon salt
1/4 teaspoon pepper
4 tablespoons butter
1/2 cup evaporated milk, optional
Ketchup

Steps:

  • In a large bowl, mix flour, salt and baking powder; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Cover and refrigerate for 30 minutes., Preheat oven to 375°. In another large bowl, combine beef, onion, potatoes, turnips, salt and pepper. Divide dough into 4 equal portions. On a lightly floured surface, roll 1 portion into a 9-in. circle. Mound 1-1/2 cups filling on half of circle; dot with 1 tablespoon butter. Moisten edges with water; fold dough over filling and press edges with a fork to seal. Place on a parchment-lined rimmed 15x10x1-in. baking pan. Repeat with remaining dough, filling and butter. Cut slits in tops of pasties. Bake 50-60 minutes or until golden brown. (If desired, pour milk into slits halfway through baking time.) Serve with ketchup., Freeze option: Freeze cooled pasties in a freezer container. To use, reheat pasties on a parchment-lined baking sheet in a preheated 375° oven until heated through.

AUTHENTIC CORNISH PASTIES



Authentic Cornish Pasties image

A flaky pastry crust filled with savory meat and vegetables, the Cornish Pasty is English comfort food at its best!

3 1/2 cups (450 grams) all-purpose flour
1 teaspoon salt
5 ounces (140 grams) unsalted butter (, very cold, diced)
5 ounces (140 grams) lard (, very cold)
How to Render Lard ((click link to learn how to make it yourself. It's super easy and much cheaper than store-bought!))
2/3 cup (155 ml) ice cold water
1 pound (450 grams) beef skirt steak or sirloin (, cut into small cubes)
1 pound (450 grams) firm, waxy potato
8 ounces (225 grams) rutabaga (, peeled and diced in 1/4 inch cubes, or slice them according to personal preference )
7 ounces (195 grams) yellow onion (, chopped)
salt and pepper to taste
unsalted butter ((for cutting in slices to lay inside the pasties))
all-purpose flour ((for sprinkling inside the pasties))
1 large egg (, lightly beaten)

Steps:

  • To Make the Shortcrust Pastry: Place the flour and salt in a food processor and pulse a few times until combined. Add the cold butter and lard and pulse a few more times until the mixture resembles coarse crumbs. Add the water a little at a time, pulsing between additions, until the mixture begins to come together. DO NOT over-mix the dough or the pastry crust will be tough and won't be flaky. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 3 hours before using (this is crucial). (Can be refrigerated for a few days or frozen for up to 3 months.)
  • To Make the Cornish Pasties: Preheat the oven to 350 degrees F.Cut it into 6 equal pieces (rolling the dough into a log and then cutting makes this easier). Wrap and keep the other 5 pieces chilled in the fridge while you're working on one at a time. Roll the dough out on a lightly floured work surface to a 8 inch circle that's about 1/8 inch thick. You can use an 8-inch plate as your guide and cut the dough around it to form your circle.
  • Layer the filling (see note at end): Put layer of potatoes down the center of the pastry circle, leaving about 3/4 inch space on the top and bottom edges of the pastry dough. Lightly sprinkle with salt and pepper. Next add a layer of rutabagas, onions and finally the beef, adding a light sprinkling of salt and pepper between each layer. Lay a couple pats of butter on top of the beef and sprinkle a little flour over the filling.
  • Wet the tips of your fingers and lightly moisten the edges of the pastry dough. For this next part work gently so that the filling doesn't puncture through the dough. If this happens, patch up the hole with some of the scrap pieces of pastry dough. Bring the sides up and seal the pasty down the middle. Turn the pasty onto its side and crimp the edges in traditional Cornish fashion (see blog post pictures as a visual).
  • Assemble the remaining pasties and lay them on a lined baking sheet. Use a sharp knife to cut a slit in the center of each pasty. Lightly brush each pasty with the beaten egg mixture.
  • Bake the Cornish pasties on the middle rack for 40-50 minutes until golden in color. Remove from the oven and let them sit for about 10 minutes (they will be very hot inside) before eating. They can be reheated in the oven (recommended for a crispier crust) or microwave. NOTE: Depending on how full you stuff the pasties you may have leftover filling. No worries, just fry it up together or add it to soup and enjoy it as a separate meal.

2.188 cups all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
½ cup butter, diced
½ cup water
1 ¼ pounds rump roast, cubed
1 onion, chopped
2 potatoes, peeled and diced
2 small carrots
salt and pepper to taste
2 tablespoons milk

Steps:

  • In a small saucepan, cover carrots with water. Bring water to a boil and cook until tender, about 10 minutes. Let cool and slice. Sift flour, salt, and baking powder together in a bowl. Add butter, and rub to the consistency of coarse crumbs. Mix in water. If dough is sticky, add more flour.
  • Roll dough out until about 1/4 inch thick. Cut out six circles, each about 5 inches round. Do not stretch the dough.
  • Mix meat and vegetables together, and salt and pepper to taste. Cover half of each pasty base with the filling. Moisten pastry edges, fold pastry over the filling. Press edges together with a fork. Transfer raw pasties to a baking sheet, brush tops with milk, and make a small slit in each top to allow steam out.
  • Bake at 450 degrees F ( 230 degrees C) for 10 minutes. Turn oven down to 350 degrees F (175 degrees C), and bake for 35 minutes.

This recipe was given to me by my Aunt, Carol Cron. My Great Grandfather Tretheway loved meat pies, and this recipe has been with us forever. You can use round steak if you wish. You may also make 1 large pie rather than 5 pasties.

3 cups all-purpose flour
1 1/2 teaspoons salt
1 cup shortening or 1 cup butter
7 -8 tablespoons ice cold water
2 -3 medium potatoes
1 lb corned beef, cut into small cubes
1 medium turnips or 4 medium carrots, cut into small cubes
1 medium onion, diced small
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For the pastry.
  • In a large mixing bowl stir together thoroughly the flour and the salt.
  • With a pastry cutter cut in the shortening till the mixture resembles coarse crumbs.
  • Using the 7-8 T.
  • ice water gradually all to dry ingredients, 1 T.
  • at a time, tossing the ingredients with a fork till the mixture holds together.
  • Form into a ball.
  • If desired, cover and chill the dough 1 hour.
  • Meanwhile, prepare the meat-vegetable filling.
  • Peel and coarsely chop the potatoes.
  • In a bowl combine the cubed corned beef, chopped potato, cubed turmip or carrot, onion,, salt and pepper.
  • Set aside.
  • Divide the dough into five equal portions.
  • On a lightly floured surface roll out each portion of dough to a 9 inch circle.
  • Place about 1 cup meat vegetable filling on one half of each circle of dough; fold the pastry over the filling to make a half circle.
  • Using tines of a fork, seal the pastry edge.
  • Cut slits in the pastry for escape of steam.
  • Carefully transfer pasties to an ungreased baking sheet.
  • Bake pasties at 400 degrees till golden brown about 45 minutes.
  • If desired, in a small sauce pan combine 1/2 cup ketchup with 1/4 cup water, heat through.
  • Serve with the pasties.

EASY CORNISH PASTIES

1/2 pound ground beef
2 tablespoons all-purpose flour
1/2 to 1 teaspoon seasoned salt
1 tablespoon minced fresh parsley
1 teaspoon beef bouillon granules
1/4 cup water
1 cup diced peeled potatoes
1/2 cup diced carrots
2 tablespoons finely chopped onion
2 packages (11 ounces each) pie crust mix

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Add flour, seasoned salt and parsley; stir until well coated. Dissolve bouillon in water; stir into meat mixture. Add potatoes, carrots and onion. Cover and cook over medium heat until vegetables are crisp-tender. Cool. , Meanwhile, prepare pie crusts according to package directions. On a floured surface, roll each pie crust into a 12-in. square. Cut each square into four 6-in. squares. Place about 1/3 cup meat mixture in center of each square. , Moisten edges of pastry with water and fold over meat mixture to form a triangle. Press the edges with a fork to seal. Make a 1-in. slit in the top of each triangle. Place on 2 ungreased baking sheets. Bake at 400° until golden brown, 20-25 minutes.

VERY EASY CORNISH PASTY

An easy pasty that will taste just great, ideal made in advance for lunches.

Yield Makes Pasties

Number Of Ingredients 14

2 tbsp olive oil
1 large onion, roughly chopped
2 garlic cloves, crushed
4 springs of thyme
250g beef mince
1 medium size potato, diced (about 7x7x7mm)
1 large carrot, diced
1 tbsp flour
500 ml beef stock
salt, pepper
chopped parsley
1/2 cup frozen peas
500 g Ready roll short crust pastry
1 egg, beaten

Steps:

  • Heat the oil in a large frying pan.
  • Soften the onion for about 5 mins, then add garlic and thyme and fry for another 2 mins on high temperature. Add the mince and fry for about 10 mins until browned, add potato and carrot fry for a couple of minutes then add flour, stir well and pour the beef stock over, add a pinch of salt and a generous pinch of freshly ground black pepper and stir some more. Reduce the heat, partly cover and leave to simmer for 30 mins, stir occasionally.
  • When the filling is cooked, taste and add more salt and pepper if needed (make sure you add plenty of pepper )
  • Then leave it to cool.
  • Preheat the oven to 180C, line a baking tray with grease-proof paper.
  • Roll out the pastry and cut into 3-4 circles of about 25cm diameter.
  • Separate the filling in 3-4 portions and place each portion slightly to one side of each pastry circle, top it with few frozen peas. Apply egg around the edge, then fold it in a half and seal it. Place the pastries on the baking try and glaze them with egg.
  • Bake them in the oven for about 30 mins.
  • Cool them and enjoy warm or cold.

CORNED BEEF PASTIES



Corned Beef Pasties image

Flakey, golden pastry with a smooth but flavour full filling and so easy to make!

Yield Makes Pasties

Number Of Ingredients 8

- 2 packs ready to roll puff pastry
- 1 can corned beef
- 2 large (3 medium) potatoes
- 2 tbsp butter
- salt and pepper
- 1 beaten egg
- Greaseproof paper
- Flat baking tray

Steps:

  • Peel and cut up potatoes and boil until soft.
  • Finely dice them and finely dice the corned beef.
  • Heat the butter in a frying pan until melted and add the corned beef and potato. Warm through for 5-10 mins and then mash up. (Roughly. You do not need it completely smooth! Can leave it as a chunky as preferred)
  • Add salt and pepper and leave to cool.
  • Preheat the oven to 200degrees.
  • Roll out the pastry to approx 2mm thickness.
  • Cut around a small side plate or saucer (approx 6").
  • Fill one half of the circle with the mixture leaving a margin around the edge.
  • With a pastry brush paint egg around the margin and close the pasty by folding the other half of the circle over.
  • Seal shut by crimping (pushing down with your finger tips) all the way around the edges.
  • Place the finished pasty on a lined baking tray and brush the top with more egg.
  • NB: You do not need to prick holes.
  • I have been told you can't re-roll puff pastry, but I can't see waste, so I did and it all turned out fine! So, repeat as many times as you can and then scrunch all your leftovers together, re-roll and cut out as many more as you can! I managed 10, depending on the size of your cut outs you may get more or less.
  • Bake until golden brown (approx 20 mins) and then leave to cool on a wire rack.
  • These are just as yummy cold the next day as they are warm, fresh from the oven!

Another recipe adapted from my favorite cookbook - The Creative Cooking Course by C. Turgeon. I hadn't made this in about 10 years before making it for friends recently. This is not only good hot, right out of the oven, but also cold the next day. I'll admit that my prep time is approximate as I didn't stop to watch the clock when I made it and does not include the time the dough is in the refrigerator. It takes a little work to prepare, but it's certainly well worth it.

4 cups self-rising flour
1/2 cup butter, softened
1/2 cup vegetable shortening
1 cup grated fresh parmesan cheese
1 teaspoon salt
1/4 teaspoon pepper
1 cup cold water
1 cup finely diced potato
1/2 lb ground beef
1/4 cup minced onion
salt & pepper
1 egg, slightly beaten

Steps:

  • Sift flour into a mound on a clean working surface.
  • Shape flour into a large ring, forming a high wall.
  • Place butter, vegetable shortening, cheese, salt and pepper in center of ring.
  • Add half of the water and work into the central mixture with two table knives using cutting motions.
  • Work the flour in carefully from the center of the ring, adding more water as needed.
  • Mix until all the flour is added and the dough holds together.
  • Gather dough into a ball and place in large plastic baggie, or place in bowl and cover with a towel.
  • Refrigerate dough for at least one hour before using.
  • Roll out dough on lightly floured surface to 1/8 inch thickness.
  • Cut six, 6-inch circles from the pastry, marking the center of each lightly.
  • Cook potatoes in boiling, salted water until crisp-tender, then drain.
  • Spread 1/6 of potatoes over half of each pastry circle, leaving 1/2 inch at the edge to seal.
  • Combine meat, onion, salt and pepper.
  • Mix well.
  • Spread 1/6 of meat mixture evenly over potatoes.
  • Moisten the edge of each pastry circle with cold water.
  • Bring unfilled pastry half over the filled side and pinch edges together firmly to seal.
  • Place on greased baking sheet, sealed side up.
  • Brush top of pasties with the egg.
  • Bake in preheated 400 degree oven for 10 minutes.
  • Reduce oven temperature to 350 degrees and bake about 25 minutes longer, or until well browned.

2 carrots, peeled and diced small
1 medium onion, peeled and diced small
2 medium potatoes, peeled and diced small
2 to 3 cloves garlic, chopped
1 1/2 pounds ground beef
Salt and freshly ground black pepper
2 teaspoons Irvine Spices Jerk Seasoning
4 tablespoons tomato paste
3 sheets puff pastry dough (often sold in 17 or 18-ounce packages containing 2 (9 or 10-inch square sheets puff pastry)
3 eggs, beaten, for egg wash

Steps:

  • Heat oil in a skillet and saute the carrots, onion, potatoes, and garlic until al dente. Add ground beef and brown. Drain fat from pan and season with salt and pepper and jerk seasoning. Stir in tomato paste to bind mixture, and let cool.
  • Preheat oven to 375 degrees F.
  • Roll out puff pastry dough and, using a circle cutter, cut out 16 to 24 (3-inch) diameter dough circles and place on a lightly greased baking sheet. Place a spoonful of meat mixture on 1 side of each pastry circle. Fold each into a half-circle and seal edges by pinching the dough together. Brush surface of pastry with egg wash. Bake until golden brown, about 6 to 8 minutes.

1 recipe pastry for a (10 inch) double crust pie
2 cups thinly sliced potatoes
½ cup sliced onion
½ pound boneless beef round steak, cut into thin strips
1 ½ teaspoons salt
1 pinch ground black pepper
2 tablespoons butter

Steps:

  • Divide pastry in three equal parts. Roll 1/3 to make 8x15 inch rectangle. Trim edges and cut to make two 7-inch squares. Place on baking sheet. Repeat with other two thirds of pastry.
  • Arrange layer of potatoes on half of each pastry square, top with layer of onion and then with beef. Sprinkle with salt and pepper and dot with butter.
  • Moisten pastry edges with cold water and fold over to make triangles; press edges together to make tight seal. A tight seal retains steam and makes juicy pastries.
  • Bake at 375 degrees F (190 degrees C) for 1 hour or until meat is tender. Serve hot with chili sauce, ketchup, or pickle relish or serve cold for sandwiches.
