BREADED PORK CHOPS FOR FOUR
These pork chops were a much-requested dish by customers in the small cafe I owned years ago. I still like to collect recipes and experiment as often as I can.

- In a shallow bowl or large resealable plastic bag, combine the first seven ingredients. Dip pork chops into milk, then into the cornmeal mixture. Place on a rack in a shallow baking pan. Bake, uncovered, at 425° for 30-35 minutes or until juices run clear.

CORNMEAL CRUSTED PORK
A light dusting of cornmeal makes a tasty crust for pork. Serve with beans and zucchini or summer squash for a colorful and healthy meal.

- In a shallow dish combine cornmeal, salt and pepper. In another shallow dish combine egg and water. Dip pork in egg mixture and then in cornmeal mixture to coat.
- Heat oil in a very large skillet over medium-high heat. Add pork and cook 2 minutes per side or until no pink remains. Remove to serving platter. Add beans and zucchini to skillet; cook and stir 6 to 8 minutes or until crisp-tender. Add salt and pepper to taste; toss. Serve along side pork. Sprinkle with oregano leaves. Makes 4 servings.

CORN MEAL CRUSTED COD
The cornmeal crust provides a great crunch and the perfect contrast in texture to the soft and buttery texture of the cod. This is an easy dish that can make you look like a seasoned home cook!

- Pre-heat oven to 375º F
- Combine all of the crust ingredients together in a mixing bowl and stir until combined and then press and compact with your hands.
- Season the cod on both sides with salt and fresh black pepper and place on a lightly greased pan.
- Now cover each piece of cod with a thin layer of the crust and gently push into the fish until set in place.
- Place in the oven and bake for about 10-12 minutes until fish is cooked. If the crust is not browned enough, turn oven onto the broil setting and place the fish on the top rack until crust is lightly browned.
- Now pre-heat a large pan on medium heat, add the oil, sui choy and the peppers and sauté until sui choy begins to brown.
- Add the tomato, curry powder and salt and cook for 8 minutes or so, stirring occasionally.
- Plate veggies first with the cod on top, serve and enjoy.
CORNMEAL-AND-CHILE-CUMIN COATED PORK LOIN

- Preheat oven to 350°F.
- Pat pork dry and season with salt and pepper. Stir together cornmeal and cumin and transfer to a plate. Turn pork in cornmeal mixture to coat well and discard any remaining mixture.
- Heat oil in a 10-inch nonstick skillet until hot but not smoking and brown pork, turning, about 3 minutes. Transfer pork to a shallow baking pan and roast in middle of oven until a thermometer inserted diagonally at least 2 inches into pork registers 155°F, 30 to 45 minutes. Let stand, loosely covered, 10 minutes. Cut pork into 12 slices (about 1/4 inch thick).
CORNBREAD-CRUSTED FRIED PORK CHOPS

- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper and top with a cooling rack.
- Sprinkle both sides of the pork chops liberally with salt and pepper. Combine the buttermilk and hot sauce in a large mixing bowl. Put the pork chops in the buttermilk mixture, being sure that all 4 are submerged. Set aside to rest for 30 minutes. Meanwhile, put the cornbread crumbs into a shallow dish.
- Pour the vegetable oil into a large (10-inch) cast-iron skillet or heavy-bottomed pan. Clip a deep-frying thermometer to its side and heat the oil to 350 degrees F.
- Lift a pork chop out of the buttermilk by its top bone using tongs, and allow any excess to drip off. Lightly dredge both sides of the pork chop in the cornbread crumbs. Carefully lower the coated chop into the hot oil. Repeat this process with a second chop. Cook the chops until crispy on one side, 3 to 4 minutes. Gently turn the pork chops and fry until golden brown, an additional 3 to 4 minutes. Transfer the crispy chops to the prepared cooling rack. Sprinkle the chops with additional salt and transfer to the oven to stay warm while the remaining chops are fried. Repeat this process with the remaining pork chops.
- For the white gravy: Reserve 2 tablespoons of skillet oil for the gravy, then drain the remaining oil from the skillet, being sure to remove any bits of fried cornbread left behind. Add the butter to the skillet, pour in the reserved oil and heat over medium heat until the butter melts. Sprinkle in the flour, whisking, and cook until a smooth paste is formed, about 1 minute. Pour in the milk, whisking continuously. Cook, whisking occasionally, until a thick sauce is formed and the gravy coats the back of a spoon, 3 to 5 minutes. Stir in the hot sauce and season the gravy with salt and pepper as desired.
- Transfer the crispy pork chops to a serving platter. Spoon the white gravy over the chops and garnish with parsley. Serve immediately.

- Preheat oven to 375 degrees F. In a medium skillet, cook onion and garlic in hot oil over medium heat until tender; remove from heat and cool slightly. In a large bowl, beat egg. Stir in milk, thyme, sage, salt, pepper, and onion mixture. Add ground pork and turkey; mix well. Divide mixture into thirds. Pat one-third of the mixture into a 9x5x3-inch loaf pan. Layer with half the salami. Repeat layers; top with remaining pork mixture. Cover with foil.
- Place loaf pan in a shallow baking pan. Pour hot water around loaf pan to depth of 1 inch. Bake about 1-1/2 hours or until internal temperature of meat loaf registers 165 degrees F on an instant-read thermometer. Uncover meat loaf and let stand on a wire rack for 15 minutes. Pour off excess fat. Invert meat loaf onto a rack set in a shallow pan or tray. Pat dry with paper towels. Cover and chill for 4 hours or overnight.
- Preheat oven to 400 degrees F. Prepare Cornmeal Crust. In a small bowl, combine egg yolk and water; set aside. Roll out crust on a lightly floured surface to a 15x12-inch rectangle. Pat the chilled meat loaf with paper towels to remove excess fat. Place the meat loaf in center of the crust. Fold long sides of crust up and over loaf to enclose, trimming excess pastry if necessary. Press sides of crust tightly onto ends of loaf, wrapping it like a package. Brush edges of crust with egg yolk mixture. Fold ends of crust like wrapping a package. Place wrapped loaf on a lightly greased baking sheet. Cut slits in top for steam to escape or use a small leaf-shaped cutter to cut out several leaves from the top. With the tip of a small knife, draw a stem down the center of the loaf. Brush top of crust with egg yolk mixture. Place leaf cutouts to top of loaf and brush top with egg mixture.
- Bake for 30 to 40 minutes or until golden. Cool on wire rack for 1 hour; loosely cover and chill overnight. Let stand at room temperature 30 minutes before serving. Slice to serve. If desired, serve with sliced pears. Makes 16 servings.
