Crystal blue water, bright sunshine, and warm air redolent with lemon blossoms; this is the French Riviera! Bring just a little of that ambiance to any dinner with this gorgeous salad. The dressing is particularly wonderful on peaches, nectarines, berries and mixed greens, but you can use any salad combination you choose. Recipe adapted from an online source.

1/2 cup dry white wine
3 tablespoons honey, plus 2 teaspoons honey (see Homemade Lavender Honey)
2 tablespoons fresh lemon juice (preferably from Meyer lemons)
1/2 teaspoon finely chopped fresh lemon zest
2 tablespoons finely chopped fresh lemon verbena (optional)
1 tablespoon granulated sugar
mixed baby lettuce greens (4 generous handfuls)
1 fresh peach
1 fresh nectarine
1/2 cup fresh raspberry (or fresh berries of your choice)
lemon balm or mint leaf, for garnish

Steps:

  • To Make Dressing:.
  • Process all ingredients in a blender until the dressing is smooth. Chill for 20 minutes before serving.
  • Just Before Serving:.
  • Place a handful of greens on each salad plate. Slice the peach and the nectarine, arrange slices on each salad. Sprinkle with the raspberries and the chopped lemon verbena.
  • Drizzle each salad with honey lemon dressing, and garnish with fresh lemon verbena, lemon balm or mint leaves.

5 ounces red leaf lettuce, washed and torn into bite-size pieces
1 tablespoon canola oil
1 tablespoon freshly squeezed lemon juice
1 teaspoon honey
1 teaspoon lightly packed lemon zest
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Combine cucumber and lettuce in a bowl and, using clean hands, toss to mix thoroughly.
  • Mix remaining ingredients in a small jar with a tight-fitting lid, close, and shake until well combined. Pour over greens and toss until lettuce is well coated with dressing. Taste and adjust seasoning, as desired. Serve immediately.

3 radishes
1 package strawberry
2 spring onions
1 red pepper
2 tablespoons finely chopped coriander
1/2 cup vinaigrette (your favorite)

Steps:

  • Wash and dry the salad greens.
  • Break into bite-sized pieces.
  • Place in a plastic bag.
  • Wash, trim and grate the radishes.
  • Wash the strawberries.
  • Trim spring onions and slice finely.
  • Cut red pepper flesh into thin strips.
  • Add the grated radishes, strawberries, spring onions, red pepper and coriander to the lettuce.
  • Just prior to serving pour over the vinaigrette.
  • Toss to mix in bag and arrabge on a serving platter.
