A delicious cheesecake that's so easy to make. Lower in calories, too!

¼ cup butter
1 cup graham cracker crumbs
2 tablespoons white sugar
¼ teaspoon ground cinnamon
2 cups cottage cheese
½ cup milk
2 eggs
3 tablespoons all-purpose flour
2 tablespoons lemon juice
1 teaspoon vanilla extract
⅔ cup white sugar
¼ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in an 8 inch square pan. Stir in graham cracker crumbs, 2 tablespoons sugar and 1/4 teaspoon cinnamon. Pat over bottom and onto sides of dish. Set aside.
  • In a blender, combine cottage cheese, milk, eggs, flour, lemon juice, vanilla, 2/3 cup sugar and 1/4 teaspoon salt. Blend until smooth. Pour into prepared crust.
  • Bake in the preheated oven for 60 minutes, or until filling is firm. Allow to cool completely.

1 (8 ounce) can minced clams, drained with juice reserved
3 tablespoons fat free sour cream
½ teaspoon grated onion
¼ teaspoon salt
2 teaspoons lemon juice
1 tablespoon clam juice
¼ teaspoon ground black pepper

Steps:

  • In a mixing bowl, mash the cottage cheese with a fork until it is smooth and creamy.
  • Combine the clams, sour cream, onion, salt, lemon juice, clam juice and pepper with the cottage cheese. Refrigerate the mixture and allow it to chill for 30 minutes, or until it thickens.

1/2 cup cream cheese, at room temperature
1 teaspoon prepared horseradish
1/2 garlic clove, sauteed
1 (4 g) envelope beef bouillon

1/3 cup milk
crackers or assorted fresh vegetable

Steps:

  • Blend all ingredients until smooth (add a little more milk if a thinner consistency is desired) and chill (about 2 hours).
