Bell Pepper Pakora Fritters with Ajwain Seeds image

Number Of Ingredients 8

1 tablespoon Basic Ginger Paste or store-bought
1/2 teaspoon Chaat Masala or store-bought
3 to 4 orange or red bell peppers, stemmed and seeded
1 recipe Basic Batter for Pakora Fritters
2 teaspoons ground coriander
1/2 teaspoon , coarsely ground ajwain, seeds
1/2 teaspoon , hot red pepper flake, , or to taste
1 1/2 to 2 cups oils for deep-frying

Steps:

  • 1. Prepare the ginger-garlic paste and chaat masala. Cut each bell pepper lenghtwise into 2 halves, then cross-wise into 1/2-inch thick half moons.2. Prepare the basic batter. Mix in the coriander, ajwain seeds, red pepper flakes, and ginger-garlic paste.3. Add the bell peppers slices to the batter. Heat the oil and fry the bell pepper slices as per directions in INFORMATION AND SPECIAL TECHNIQUES: __Frying Fritters (Pakorae Talna). Whip up these tasty fritters made with cottage cheese, spinach and cherry tomatoes in just 20 minutes. Perfect for brunch, or lunch served with a salad

300g fat-free cottage cheese
100g cherry tomatoes , chopped
½ lemon , zested
50g parmesan (or vegetarian alternative), grated, plus extra for serving
25g fresh mixed herbs (basil, parsley and thyme work best), chopped, plus extra for serving
50g spinach , finely chopped
75g plain flour
1 tbsp olive oil

Steps:

  • In a bowl, combine all ingredients except the flour and oil. Mix well, then stir in the flour.
  • Heat the oil in a large frying pan over a medium heat. Working in batches of two or three (the mixture should make six fritters), spoon large blobs into the pan and flatten with the back of the spoon to make thick discs. Turn when crisp and golden on the bottom. When both sides are cooked, remove from the pan and keep warm in a low oven while you fry the next batch.
  • Serve hot, sprinkled with parmesan and herbs.
