COTTAGE CHEESE QUICHE
This recipe has been in our family for so many years, I no longer remember where it came from. It's easy and quick and people seem to really enjoy it.

Steps:
- Bake pie shell at 400 degrees for about 3-5 minutes.
- Combine rest of ingredients except fried onions.
- Stir to mix.
- Place mixture in pie shell and bake at 350 degrees for 30 minutes.
- Sprinkle with fried onions (or breadcrumbs).
- Return to oven and bake 15 minutes longer.
- Remove and let stand for 5 minutes.
COTTAGE CHEESE QUICHE LORRAINE
This quiche has a totally different texture than normal ones. Even quiche and cottage cheese haters love it!

Steps:
- Cook "bacon" until crispy. Lay pie crust in pie pan and cover with swiss cheese. Crumble bacon on top. Beat eggs and then mix with cottage cheese. Pour over bacon and swiss in pie shell. Bake 40-50 minutes at 350°F Quiche will appear a tad liquidy (but not jiggly), but it's done and moisture will disappear after sitting to cool a bit.
- Alternative use 3 pieces of bacon in the quiche and keep 3 to crumble on top of quiche after removing from the oven.
QUICHE LORRAINE
A good quiche makes a marvelous supper dish or brunch with a green salad or, if cut in smaller wedges, a good appetizer before the main course. For Shrimp Quiche, substitute one cup of small shrimp for the bacon.

- Use 9 or 10 inch pie plate or quiche pan.
- Cook the bacon until crisp, remove it from the pan, and cook the onion in the drippings until soft. Sprinkle bacon, onion and cheese in pastry shell. Lightly beat the eggs with the cream, salt and pepper and add to the bacon, onion and cheese mixture. Bake (on rack below centre of oven) at 425°F for 15 minutes. Reduce heat to 350°F and bake for a further 15 minutes or until a knife inserted in the centre comes out clean. Serve warm. Makes from 4 to 6 servings.

- Cook spinach in salted water according to package directions.
- Drain well.
- Sauté onion and celery in butter until onion is soft.
- Into a deep pastry shell spread cottage cheese over bottom.
- Mix spinach with onion mixture and spread over cottage cheese.
- Sprinkle Swiss cheese over top.
- Combine eggs, milk, and seasonings and pour over all.
- Bake at 350° for 40-45 minutes or until set.

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9 inch pie or quiche pan.
- Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off any remaining liquid. Stir in green onions, eggs, cottage cheese and Cheddar cheese. Pour mixture into prepared pan.
- Bake uncovered in preheated oven for 45 minutes. Remove from oven and sprinkle with crushed croutons. Return to oven and bake for an additional 15 minutes, until eggs are set.

- Heat oven to 350'. Spray Pam in 9" pie pan. (Ok to use 9-inch square pan then cut into squares for appetizers.).
- Squeeze water from defrosted spinach and spread the spinach on the pan.
- Beat sour cream, cottage cheese, baking mix, melted margarine and eggs until smooth, 15 seconds in blender on high, or 1 minute with electric mixer. Pour into pie pan on top of spinach. Top with tomatoes; sprinkle with Parmesan cheese.
- Bake until knife inserted between center and edge comes out clean, about 30 to 40 minute Cool 5 min and serve.
QUICHE LORRAINE

- Heat the oven to 180C/fan 160C/gas 4.
- Heat 1 tbsp olive oil in a frying pan and fry 6 chopped rashers of bacon for a minute or so until lightly cooked.
- Beat 5 large eggs, a 284ml carton of single cream and 150ml milk together with a fork then add 140g finely grated gruyère cheese, a generous grating of nutmeg and plenty of seasoning.
- Stir in half the bacon and carefully pour the mixture into the deep 24cm blind-baked pastry case then scatter over the remaining bacon.
- Bake for 35-40 minutes until the filling is set, starting to turn golden and slightly puffed up above the pastry case.
- Allow to cool a little before removing from the tin. Serve warm or at room temperature, with a green salad.
