COUNTRY OVEN FRIED FISH



Country Oven Fried Fish image

This sauce adds a little bit of kick and Mexican flair to your oven ride fish. It's a bit spicy and has a lot of attitude.

Number Of Ingredients 24

1 lb fresh or frozen (thawed) fish fillets, boneless and skinless
4 teaspoons vegetable oil
4 tablespoons of seasoned breadcrumbs
1 tablespoon lemon juice
½ teaspoon paprika
¼ teaspoon salt
¼ teaspoon pepper
Lemon wedges
½ slice of lime
1 jalapeno
½ tsp capers
¼sp chipotle powder
⅓ tp cumin
½ tsp ground coriander
½ cup mayonaise12 cup sourcream
½ tsp dried oregano
You would need the following:
¼ cup parsley or cilantro
¾ tsp salt
⅕ tsp ground black pepper
1 ¼ crushed tomatoes in puree
1 ½ tsp grated ginger
1 chopped onion
1 tbsp cooking oil

Steps:

  • Preheat oven to 450 degrees F
  • In a shallow dish, mix oil and lemon juice
  • In another plate or dish, mix breadcrumbs with salt, pepper and paprika
  • Gently place each fish fillet in oil mixture, then into breading mixture. Coat each fillet well.
  • Place breaded fish fillets on a greased baking sheet and bake on center rack for 6-10 minutes or until breading is golden brown.
  • Serve with lemon wedges.
  • Just mix it all together. If it's a bit thick, you may add more lime.
  • Heat the oil over a medium heated pan. Then add in the onions and cook for 2 minutes.
  • Pop in the ginger and cook for 2 minutes. Then stir in tomatoes and salt, allow to simmer. You may sprinkle with black pepper to taste. Adding fresh cilantro or parsley on top will add a sweeter taste. Pour over your freshly baked fish!

2 tablespoons butter
1/2 cup crushed wheat crackers or seasoned dry bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon dried parsley flakes
1/2 teaspoon Italian seasoning

Steps:

  • Place fish in a greased 13-in. x 9-in. baking dish. Brush with butter. In a small bowl, combine the remaining ingredients; sprinkle over fish. , Bake, uncovered, at 425° for 10-15 minutes or until the fish flakes easily with a fork.

The other day, my husband was asking for fish and chips but with my high cholesterol, I have to avoid things like that. I found in a magazine at the doctor's office this recipe for oven fried fish, which is nice and crispy like the deep fried kind but without all the fat. This is excellent served with evelyn/athens' Spicy Oven Fries and your favourite cole slaw recipe.

4 (6 ounce) tilapia fillets
1 egg white
1/2 cup buttermilk
1/2 cup all-purpose flour
1/2 cup dried breadcrumbs
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 tablespoon vegetable oil

Steps:

  • Position rack on top shelf in oven.
  • Preheat oven to 500 degrees F.
  • Line a rimmed baking sheet with foil and set a wire rack on top.
  • Lightly spray or brush rack with vegetable oil.
  • Pat fish dry with paper towels.
  • Slice fillets in half lengthwise to form long pieces.
  • In a pie plate or wide shallow dish, whisk egg white with buttermilk.
  • In another dish, stir flour with bread crumbs, paprika, cayenne and salt.
  • Working with 1 piece of fish at a time, lightly coat with flour mixture.
  • Shake off excess flour, then dip into buttermilk mixture.
  • Turn to evenly coat.
  • Shake off excess liquid.
  • Coat fish in flour mixture again.
  • Shake off excess coating, then place on rack.
  • Repeat with remaining fish, 1 piece at a time.
  • Discard any remaining buttermilk or flour mixtures.
  • Lightly spray fish with oil or, using a brush, lightly dab about 1 tbsp oil as evenly as possible over coating.
  • Do not skip this step -- it is essential for crispy fish.
  • Bake on top rack of preheated oven until coating is crisp and golden, 12 to 15 minutes.
  • Do not turn.
