4 pounds boneless country-style pork ribs
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup orange juice
1/2 cup balsamic vinegar
1/4 cup reduced-sodium soy sauce
2 tablespoons minced fresh gingerroot
2 tablespoons honey
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Sprinkle ribs with salt and pepper; place in a 5-qt. slow cooker. In a small bowl, whisk orange juice, vinegar, soy sauce, ginger, honey, garlic and pepper flakes; pour over ribs. Cook, covered, on low 4-5 hours or until meat is tender., Remove ribs to a serving platter; keep warm. Transfer cooking juices to a small saucepan; skim fat. Bring cooking juices to a boil. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir until thickened. Spoon over ribs.

2 racks St. Louis-style spareribs (3 to 3 1/4 pounds each)
2 tablespoons scotch, whiskey or bourbon (optional)
2 tablespoons packed light brown sugar
Kosher salt and freshly ground pepper
1 tablespoon ground ginger
1 tablespoon smoked paprika
2 tablespoons vegetable oil
1 small onion, chopped
2 cloves garlic, chopped
1 teaspoon minced fresh ginger
2 tablespoons scotch, whiskey or bourbon (optional)
3/4 cup ketchup
1/2 cup packed light brown sugar
1/2 cup apple cider vinegar
1/4 cup low-sodium soy sauce
1 tablespoon yellow mustard
1 tablespoon Asian chili-garlic sauce
Freshly ground pepper

Steps:

  • Prepare the ribs: Place the ribs bone-side up on a work surface. Starting at one end, insert the tip of a knife between the membrane and the bones to loosen the membrane, then pull it off. Flip the ribs so they are meat-side up. Rub each rack with 1 tablespoon scotch, if using. Combine the brown sugar, 5 teaspoons salt, 1 teaspoon pepper, the ground ginger and paprika in a small bowl. Rub the ribs on both sides with the spice mixture. Wrap each rack in heavy-duty foil, then wrap in another layer of foil, making sure the seam is on the opposite side to prevent leaking. Refrigerate 8 hours or overnight.
  • Preheat a grill to medium low (350 degrees F on gas or 335 degrees F on charcoal). Put the foil-wrapped ribs meat-side down on the grates. Grill, carefully flipping the ribs every 30 minutes, until the meat is tender but not falling apart and the tip of a paring knife inserted into the ribs meets slight resistance, 1 to 1 1/2 hours. (If using charcoal, add more coals as needed so the temperature stays between 300 degrees F and 325 degrees F.)
  • Meanwhile, make the barbecue sauce: Heat the vegetable oil in a medium saucepan over medium heat. Add the onion, garlic and fresh ginger and cook, stirring often, until just beginning to brown, 5 to 6 minutes. If using the scotch, remove the pan from the heat and stir in the scotch, then return to the heat and cook until almost dry, 1 to 2 minutes. Stir in 1/2 cup water, the ketchup, brown sugar, vinegar, soy sauce, mustard, chili-garlic sauce and 1/2 teaspoon pepper. Bring to a simmer and cook, stirring occasionally, until thick and glossy, about 30 minutes; you should have about 1 1/2 cups sauce. Transfer to a blender and puree until smooth. (You can make the sauce up to 1 day ahead; refrigerate until ready to use.) Divide the sauce between 2 bowls-half for cooking and half for serving.
  • When the ribs are ready, transfer to a baking sheet. Unwrap and discard the foil and any accumulated juices. Brush the meat side with the barbecue sauce and return to the grill, meat-side up. Cover and grill, moving the ribs around to prevent flare-ups, until the sauce cooks in, about 5 minutes. Brush the ribs with more sauce, flip and cook until lightly charred, 2 to 3 minutes. Flip the ribs so they're meat-side up again, brush with more sauce and grill 5 more minutes. Flip the ribs again and brush the bone side with sauce, then flip again and brush the meat side one last time. Transfer to a cutting board and let rest 15 minutes.
  • Cut the racks into individual ribs. Serve with the reserved barbecue sauce.

1/2 teaspoon salt

  • Sprinkle ribs with sugar and salt; rub into both sides of meat. Refrigerate for 2 hours. , In a small bowl, combine the soy sauce, ketchup, brown sugar and ginger. Get a double dose of ginger beer flavor in these sticky-sweet, fall-off-the-bone baby back ribs. We use the drink for both the marinade and the sauce. Fresh ginger brings its own spicy note.

Three 12-ounce cans nonalcoholic ginger beer
2 tablespoons low-sodium soy sauce
2 teaspoons Worcestershire sauce
2 large cloves garlic, thinly sliced
One 2-inch piece fresh ginger, peeled and thinly sliced
Zest and juice of 1 lime, plus wedges, for serving
3 racks baby back ribs (about 5 pounds)
Kosher salt and freshly ground black pepper
1/2 cup ketchup
Habanero hot sauce, for serving

Steps:

  • Combine the ginger beer, soy sauce, Worcestershire, garlic, ginger and lime zest and juice in a large resealable plastic bag. Add the ribs and tightly seal the top. Put in a bowl or baking sheet and refrigerate for 2 hours and up to overnight.
  • Preheat the oven to 275 degrees F.
  • Remove the ribs from the marinade and reserve 3 cups. Pat the ribs dry and place each rack on a double layer of heavy-duty foil. Sprinkle each with 1/2 teaspoon salt and a generous amount of black pepper. Tightly wrap each rack in the foil and put on a baking sheet. Bake until the ribs are tender and falling off the bone, about 2 hours.
  • Meanwhile, bring the reserved marinade to a boil in a medium saucepan over medium-high heat. Simmer until reduced to 1 cup, about 20 minutes. Strain the liquid and return it to the saucepan. Whisk in the ketchup and a generous amount of black pepper. Bring to a simmer over medium-high heat and simmer, whisking frequently, until slightly thickened, about 5 minutes.
  • Line a second baking sheet with foil and turn the oven to broil. Carefully remove the racks from the foil and transfer to the prepared baking sheet. Brush the ribs all over with the barbecue sauce. Broil until the sauce is caramelized, dark and slightly sticky, 3 to 5 minutes. Serve with lime wedges and habanero hot sauce.

GINGER HONEY PORK RIBS

The inspiration for this recipe come from one by Steven Raichlen (BBQ U fame). His recipe was far too peppery. These are Cambodian-style ribs. I made this with country ribs, that were cut much thinner than what I normally find in the market. They are bone-in, meaty, and fatty. I try to render most of the fat off on the grill. But watch those flare-ups! I did not like the dipping sauce, so just served lime wedges to squeeze onto the ribs.

1/4 cup fresh ginger, chopped
6 garlic cloves
1 tablespoon sugar
1 tablespoon kosher salt
1 teaspoon fresh ground black pepper (you can use up to a tablespoon to taste)

2 tablespoons fish sauce
1 1/2 lbs pork ribs, cut into individual ribs (bone-in meaty or fatty)

Steps:

  • In a food processor, combine ginger, garlic, sugar, 1 tablespoon salt, and pepper; puree to blend.
  • Add honey, soy sauce, and fish sauce; blend.
  • Place ribs in a large non-reactive container, pour marinade over, toss to combine; cover and let marinate, refrigerated, at least 4 hours up to overnight.
  • Bring to room temperature while heating up grill.
  • Cook over medium hot coals until done to your liking, about 4 minutes per side; a little char here and there never hurt anyone :wink:.
  • For the dipping sauce: Use 4 small bowls and place a teaspoon each of salt and pepper. Squeeze half a lime into each.

2 tablespoons vegetable oil
3 pounds well-trimmed pork spareribs, cut into individual ribs
2 garlic cloves, minced
1 tablespoon minced peeled fresh ginger
3/4 cup (packed) golden brown sugar
3/4 cup rice vinegar
1/2 cup reduced-sodium soy sauce
1 teaspoon cornstarch dissolved in 1 tablespoon cold water (optional)
Steamed white rice

Steps:

  • Heat vegetable oil in large wide shallow pot over medium-high heat. Working in batches, add ribs and brown on all sides, about 8 minutes. Transfer ribs to large bowl. Add garlic and ginger to pot; sauté 30 seconds. Add brown sugar, vinegar, and soy sauce. Stir to blend. Return ribs to pot. Cover pot and simmer over medium-low heat until meat is tender, turning ribs occasionally, about 45 minutes. If sauce is thin, gradually add cornstarch mixture to ribs and simmer until sauce thickens slightly, about 2 minutes. Serve ribs over rice.

Second in a series of my braze and glaze adventures :-) You often find country style ribs on some major sale, I got a big pack for 2 bucks so I created this.

2 lbs country-style pork ribs (1 small "rack")
1/4 cup table salt
1/4 cup sugar
1 quart cold water
2 teaspoons olive oil
1 can ginger ale
1 pinch sugar
2 tablespoons prepared mustard
1/2 cup ketchup
1/2 cup jelly or 1/2 cup preserves
1 tablespoon lemon juice
1 cup dark brown sugar (or so)
2 tablespoons butter
salt and pepper

Steps:

  • Make brine by dissolving 1/4 cup of sugar and salt in quart of cold water.
  • Rinse ribs off and place in a zip top bag with brine.
  • Let stand at room temperature for 30-45 minutes.
  • Preheat oven to 250 degrees.
  • Heat straight sided, oven proof, sautee pan over a medium/medium high heat.
  • Remove ribs from brine, discard brine.
  • Rinse ribs with cold water, pat dry, coat with olive oil, season with salt and pepper.
  • Sear both sides of rack, pour gingerale over ribs, sprinkle with sugar and cover tightly with heavy duty foil (don't touch meat!) Place in oven and braise for 2 hrs, remove from oven flip over, season/sugar, re-cover and braise for an additional 2 hrs.
  • Remove from oven, raise oven temp to 400 degrees F.
  • place ribs on a foil covered sheet pan.
  • Cover ribs with pan foil.
  • Bring pan liquid up to a full boil, reduce to about 1/3rd it's original volume, lower heat to simmer and add remaining ingredients.
  • Adjust taste to suit (may be too sweet for some!) Whisk until well combined.
  • Brush a coat of sauce on the ribs and bake in hot oven until glaze is browned and thick.
  • Re-coat with sauce and repeat as desired.
  • Allow to sit before cutting.

1 cup pure maple syrup

Steps:

  • In a small glass bowl or resealable glass jar mix all the marinade ingredients well.
  • Let sit to allow the flavors to blend while you prepare the ribs in step 2
  • With the back of a teaspoon begin lifting the membrane on the back of the ribs near a bone.
  • When you get enough of the membrane (also called 'silverskin') pryed up from the back of the ribs grasp it with a paper towel and peel it off the ribs.
  • This membrane should always be removed, if it's left on it can cause the ribs to curl when they're cooking and they'll also be a bit tougher to chew when left on.
  • Cut the two rib racks in half so you've 4 pieces.
  • Place the ribs meat side up (bone side down) in a glass dish.
  • Evenly distribute the marinade over the top of the ribs and rub to completely cover all the pieces.
  • Pierce the meat with a fork all over after you've spread on the marinade - this will help the flavor penetrate the meat.
  • Cover the ribs and refrigerate overnight.
  • Oil the grates of the BBQ and preheat to 400F - 450F.
  • When the grill is ready place the ribs meat side down (bone side up) and close the lid.
  • Let the ribs brown up and give them the charred grill marks - usually about 7 or 8 minutes should do.
  • Flip the ribs over (bone side down) and close the lid.
  • Reduce the temperature to 350F.
  • Let the ribs cook for 30 - 40 minutes and check on them.
  • The meat should be shrinking back from the bone 1/4" or so.
  • Keep checking on the ribs, you don't want them overcooked or they'll dry out.
  • Depending on the size of ribs you're using really determines how long to cook them. The bigger and meatier they are the longer they'll take.
  • Remove the bbq pork ribs from the grill and place on a cutting board.
  • Cut the ribs into individual pieces between the bones.
  • Its easier if you do this bone side up so you can see where to cut.
  • Serve this as is or with the bbq pork ribs dipping sauce described above.
