- Put the couscous in a large bowl and pour the boiling water over it. Cover with a lid or a plate and set aside for 5 minutes. Then remove the lid and fluff with a fork. Toss the finely chopped herbs with the couscous, as well as the sliced cucumber, onion, and lemon zest. Whisk together the lemon juice, olive oil, honey, chili powder, and cumin, then toss this dressing with the couscous. Stir in the pine nuts. Crumble the feta and stir that in as well. Taste and season generously with salt and pepper. Serve immediately, or refrigerate until ready to serve. Store leftovers in a covered container for up to 5 days. Per serving, based on 4 servings. A tasty alternative to the same old green salad, but prep work made easy using "bag salad" as the base.

Steps:
- Cut onion slices into quarters.
- Toss cucumber slices and onion together in a medium bowl.
- Stir sour cream, vinegar, salt and pepper into cucumber mixture until well blended.
- Let stand 5 minutes.
- Divide salad greens among four salad plates.
- Stir cucumber and onions again.
- Top each plate of greens with 1/4 of the cucumber mixture.
RED ONION AND CUCUMBER SALAD
Steps:
- Place the onions in a large bowl; set aside.
- In a colander, lightly salt the cucumbers and let drain for about 10 minutes.
- Meanwhile, whisk together the ginger, garlic, chives, and vinegar in a small bowl. While whisking, slowly add the oil and whisk until smooth. Add the pepper flakes, and season to taste with salt and pepper.
- Add the cucumbers to the onions and toss well. Add the dressing and toss well. Adjust the seasonings. Refrigerate for at least 30 minutes or up to 24 hours before serving. Serve chilled.

- In a small saucepan, bring water to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5 minutes. Fluff with a fork. - Bring chicken broth and 1/2 teaspoon salt to a boil in a saucepan. Stir in couscous. Remove from heat; cover and let stand until broth is absorbed, about 5 minutes. Uncover and fluff with a fork.
- Whisk 1/2 teaspoon salt, 1/2 cup olive oil, lemon juice, rosemary, and oregano together in a bowl to make dressing.
- Place chicken breasts in a shallow dish. Drizzle 1/4 cup dressing on top. Season both sides with salt and pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken breasts; cook until golden brown, about 3 minutes per side. Transfer to a large plate. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Place 3 tablespoons dressing in a large bowl; stir in sugar. Add tomatoes, cucumber, and red onion; toss to combine. Season with salt and pepper. Add feta cheese and toss again.
- Drizzle remaining dressing over couscous and fold in olives. Divide couscous among 4 plates. Slice chicken breasts and place on top. Serve tomato salad on the side. Sprinkle parsley over each plate.
