CRAB AND CHEDDAR QUICHE
Easy crab quiche. Great for any meal or occasion.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat eggs, mayonnaise, milk, flour, and 1 teaspoon seafood seasoning in a bowl until smooth and creamy; stir Cheddar cheese and parsley into egg mixture. Gently fold crabmeat into the filling.
- Pour crabmeat filling into the pie crust. Sprinkle a pinch of seafood seasoning over the quiche.
- Bake in the preheated oven until a knife inserted into the center of the quiche comes out clean and the top is lightly browned, 40 to 45 minutes.

WINNING CRAB QUICHE
Crabmeat is very plentiful here in Maryland, and this dish is one of my favorite ways to eat it. My sister-in-law Darlene gave me this recipe, and that simple gesture helped make me feel part of the family.

My husband loves quiche and he asked me if I could try to make him one. I decided to try a crab quiche, and it was gone in one sitting. You won't be disappointed!

- Preheat the oven to 350 degrees F (175 degrees C). Bake the pie crust for about 10 minutes, until just starting to brown. Remove from the oven, and allow to cool.
- In a large bowl, whisk together the eggs, cream, salt, pepper, and hot sauce. Stir in shredded cheese, onion and imitation crab. Pour into the pie shell.
- Bake for 25 to 30 minutes in the preheated oven, then turn off the oven, but leave the door closed. Leave quiche in the oven for an additional 20 to 30 minutes until firm. This will give it a smoother texture.

- Preheat oven to 400 With a knife, make small slits in thawed pie crust and bake for about 5-7 minutes or until just lightly browned. You don't want to pre-bake it too much since it will be going back into the oven after all of the ingredients have been placed into the pie shell. In a small to medium sized skillet on medium heat, begin to cook the chopped bacon and add the spinach about 2-3 minutes into cooking the bacon. Continue cooking until the bacon is cooked through and crispy and the spinach has wilted slightly. Place the spinach and bacon mixture onto the bottom of the pre-baked pie shell. Make sure your crab meat has been picked over for shells and place on top of the spinach and bacon mixture. Prepare your milk and egg base by combining the milk, egg, and Old Bay. Add a dash of salt and pepper for taste. Pour the egg and milk mixture over the crab and spinach. Top with Monterrey Jack cheese and bake at 400 for 20-25 minutes, or until the milk and egg mixture is set and no longer jiggles like jello.

Steps:
- Clean mushrooms with a moist towel and rinse & dry green onions.
- Cook bacon in a frying pan or buy precooked.
- Drain bacon on a papertowel covered plate, if you fry.
- Chop mushrooms, green onions, garlic, and bacon.
- In the same frying pan, pour 1-2 tbsps of olive oil and saute mushrooms, add garlic when mushrooms are almost done.
- Cook for 3 more minutes, stirring for even cooking.
- Drain mushroom mixture on a papertowel covered plate.
- In a large mixing bowl, add eggs, evaporated skim milk, tabasco, and all seasoning. Add the bacon, mushroom mixture, green onions, and cheese last. Mix until blended and pour into a greased 11 x 7 or 8 x 8 glass dish or pie plate. Bake @ 350 for 40 minutes.

- Preheat oven to 400 degrees F.
- Partially bake crust for approximately 8 minutes on lowest rack in oven.
- Remove and turn temperature down to 350 degrees.
- Spread filling (over bottom of shell).
- Poor in the egg mixture and cook for 35 to 40 minutes.
- Let stand for 5-10 minutes prior to serving.

- In a large skillet over medium to medium-high heat, cook bacon until evenly browned, taking care to not over cook. Remove from skillet to a paper towel lined plate to cool a bit. Then chop into 1/4″ to 1/2″ sized pieces.
- Lightly butter a 9″ pie pan. Add Swiss cheese, Monterey Jack cheese, and then bacon to bottom of pie pan, distributing evenly.
- In a large bowl, whisk together cream and flour. Then whisk in eggs, Parmesan cheese, minced shallots, chives, parsley, cilantro, 2 tablespoons of the melted butter, Old Bay seasoning, kosher salt, and black pepper. Gently fold in the lump crabmeat. Pour mixture into pie plate and top with shallot rings. Bake until set, about 50 to 55 minutes. Remove from oven and let rest for about 15 minutes before slicing into wedges. Serve hot, with a sprinkling of chopped fresh chives over the top if desired.
