WHOLE BLUE CRABS NEW ORLEANS-STYLE
Steps:
- Bring a large pot of lightly salted water to a boil. Add bouquet garni, crab boil, lemons, halved garlic, corn, and sausage. Add blue crabs and cover. Cook for 10 minutes or until crab is cooked through.
- In a small saute pan over medium heat, melt butter with the 3 peeled garlic cloves. Simmer the butter for 3 to 4 minutes. Remove from the heat and discard the garlic cloves.
- Remove the crabs, corn, and sausage from the crab boil and serve on newspaper, with butter sauce over top.
GRILLED DAB WITH GARLIC BUTTER

Steps:
- Heat the grill to high. Cut the frills away from the sides of the dabs using scissors. Lay the fish on a baking tray, dark skin up, drizzle with a little olive oil and sprinkle with some sea salt. Place under a hot grill for 5 mins, until cooked through and the flesh comes away from the bone when prodded.
- Meanwhile, heat the butter in a frying pan until it starts to turn brown, then add the garlic and cook until it just starts to change colour. Remove the pan from the heat, add the lemon juice and parsley, stir together and set aside.
- Wilt the spinach in a hot pan with a splash of water, then divide between 2 plates. Place 2 dabs on top of the spinach on each plate, drizzle with the butter sauce and serve.

- Remove any shell or cartilage from crab meat and chop into small pieces.
- Combine all ingredients except bacon, mix thoroughly.
- Chill 30 minutes.
- Portion crab mixture with a tablespoon, shape into small rolls.
- Wrap bacon around crab rolls.
- Secure with toothpicks.
- Broil about 4 inches from heating element 6-7 minutes or until bacon is crisp Turn carefully, broil 4-5 minutes longer until bacon is crisp.

CRAB DABS
Steps:
- Step 1. In large mixing bowl combine cream cheese, mozzarella cheese, onion, lemon pepper, garlic salt, lemon zest and juice.
- Step 2. Pull apart crab meat into small shredded pieces and add to mixture. Mix all together, being sure to incorporate all of cheeses.
- Step 3. Make small balls and place a half piece of bacon around each ball. Place on broiler pan, seem side down. Fill pan leaving half an inch in-between each ball.
- Step 4. Bake 375* for 30 minutes or until bacon is golden brown. Let cool for 5 minutes and place on serving tray.

- Remove cartilage from crab meat. Combine all ingredients except bacon.
- Mix thoroughly.
- Chill for 30 minutes.
- Portion crab mixture with a tablespoon.
- Shape into small rolls.
- Wrap bacon around crab rolls and secure with a toothpick.
- Place crab rolls on a broiler pan.
- Broil about 4 inches from source of heat for 8 to 10 minutes or until bacon is crisp.
- Turn carefully.
- Broil 4 to 5 minutes longer.
- Makes 30 hors d'oeuvres.
