Steps:
- Preheat oven to 325 degrees. Pulse butter, cheddar, flour, salt, cayenne pepper, and paprika in a food processor until mixture resembles coarse crumbs. Add heavy cream; pulse until just combined.
- Divide dough into 4 pieces; shape into rectangles. Wrap each in plastic. Refrigerate until firm, about 30 minutes.
- Working in batches, roll out each rectangle on a lightly floured surface to a 1/4-inch thickness, and cut into 1-inch squares. Transfer to a baking sheet leaving at least 1/4 inch between each. Refrigerate until chilled and firm, about 20 minutes. Bake until pale golden, 15 to 17 minutes.
CHEDDAR CRACKER APPETIZER BITES
Steps:
- Combine flour, butter, salt and cayenne in bowl; beat at medium speed until dough forms. Add cheese; mix until ball forms. Shape dough into disk; wrap in plastic food wrap. Refrigerate 2 hours or overnight. While dough is refrigerating, prepare toppings below.
- Heat oven to 350°F.
- Roll out dough on lightly floured surface into 11 1/4x8 3/4-inch rectangle, about 1/8- to 1/4-inch thickness. (It will be hard to roll at first, but will soften. Press together any cracks that form on edges of dough.) Cut dough into 1 1/4-inch squares. Place, 1 inch apart, onto ungreased baking sheets. Bake 14-16 minutes or until lightly browned around edges. Immediately loosen on pan; let cool on pan.
- For Smoked Salmon Topping: Combine cream cheese, parsley and lemon juice in medium bowl. Beat until well mixed and fluffy. Top crackers with 1 teaspoon cream cheese mixture, smoked salmon, a few capers and thin slice of red onion.
- For Candied Bacon Topping: Cook bacon and brown sugar in 10-inch skillet over medium heat until bacon is cooked and brown sugar is caramelized. Set aside. Combine goat cheese, olive oil and parsley in medium bowl until well combined, light and fluffy. Top crackers with 1 teaspoon goat cheese mixture, a few pieces of candied bacon and 1 slice jalapeño.
- For Caprese Topping: Heat oven to 425°F. Line 15x10x1-inch baking sheet with parchment paper. Toss tomatoes, balsamic vinegar, olive oil and pepper together in bowl. Spread onto prepared baking sheet. Bake 10-15 minutes or until tomatoes are softened and roasted. Top cracker with 1 mozzarella cheese pearl, about 2 pieces tomato and sprinkle of chopped basil.

- In a food processor fitted with the blade attachment, add the butter and cream cheese. Process until fully combined. Add the cheese, milk and mustard powders. Process again until smooth, 30 seconds to 1 minute, scraping down the sides with a rubber spatula as needed.
- Transfer to a piping bag fitted with a small star tip. Pipe onto the crackers and serve immediately. Can be made a few days ahead and stored in the refrigerator, but let sit on the counter until it's soft enough to put into the piping bag before using.
HOMEMADE CHEDDAR CRACKERS

- Put the Cheddar, flour, butter, salt, seasoned salt and cayenne in a food processor and pulse until the mixture resembles sand. Add the ice water and pulse until the dough comes together. Form the dough into a ball, wrap in plastic and refrigerate for 1 hour.
- Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat.
- Roll out the dough to 1/4-inch thickness and cut into squares with a pizza cutter. Use a wooden skewer to poke a small hole in the center of each square. Transfer to the prepared baking sheet and bake until golden brown, 15 to 17 minutes. Allow to cool before packing up.

- In a food processor, or by hand, crush ½ a box of Triscuits. Set aside.
- Combine all of the filling ingredients in a large bowl.
- Pinch off bite sized balls of filling and roll between your hands (about 1 oz or 28g each).
- Roll the balls in the crushed Triscuit mixture, then coat it in beaten egg, then again in Triscuit mixture.
- Heat a sauce pan of vegetable oil to 350˚F (180˚C). Line a tray with paper towel to drain the fried bites.
- Fry each bite until Triscuit coating turns a light brown, about 45 seconds.
- NOTE: If they're fried too long, the cheese filling will escape and you'll be left with a sad shell of a former cheese bite.
- Garnish with more chopped dill and a squeeze of lemon. Serve immediately.

- Combine flour, butter, salt and red pepper in medium bowl; beat at medium speed until dough forms. Add cheese; mix until a ball forms. Shape dough into circle; wrap in plastic food wrap. Refrigerate 2 hours or overnight.
- Heat oven to 350°F Roll out dough on lightly floured surface to 1/4-inch thickness. (It will be hard to roll at first, but will soften. Press together any cracks that form on edges of dough.) - Line a baking sheet with aluminum foil and lightly grease with vegetable oil.
- Place butter into a mixing bowl; add Cheddar cheese, Parmesan cheese, paprika, cayenne pepper, and salt. Mix together with the back of a spatula until thoroughly combined.
- Mix flour into cheese mixture with a fork until crumbly. Sprinkle in cold water, 1 or 2 drops at a time, and mix with spatula until it comes together in a dough that holds its shape when squeezed.
- Transfer dough to a work surface and press into a thick, flattened disk. Wrap in plastic wrap and refrigerate 30 minutes.
- Preheat oven to 375 degrees F (190 degrees C).
- Roll dough out on a floured work surface to about 1/8-inch thick. Use a pizza cutter to cut 1-inch wide strips from the dough. Cut strips crosswise into rectangles about 1 1/2-inches long. Use the back of a bamboo skewer to punch 5 small holes into each cracker. Arrange crackers onto prepared baking sheet.
- Bake in the preheated oven until crackers are browned and crisp, about 15 minutes. Let stand about 3 minutes for crackers to cool and release from the foil. Let cool completely before serving.

- Preheat the oven to 375 degrees. Line two baking sheets with parchment. Sift together the flours, salt and sugar, and place in the bowl of a food processor fitted with the steel blade. Add the butter, and pulse until the mixture is crumbly. Add the cheese, and pulse several times to distribute it evenly throughout the flour mixture. Turn on the food processor, and add the olive oil and eggs. Stop the machine when the dough comes together. It will be soft and somewhat sticky. If it seems very moist, add another tablespoon of flour and pulse until incorporated.
- Lightly flour your hands and your work surface. Scrape out the dough and form two equal pieces. Shape into rounds, wrap in plastic and let rest for 15 minutes.
- Roll out each piece of dough between pieces of lightly floured parchment. Cut into squares or rectangles, and place on the parchment-lined baking sheets. Bake 15 to 20 minutes, switching the pans after the first 10 minutes from front to back and top to bottom. They will foam in the oven because of the cheese, but that will subside and they will bake crisply. The crackers are done when they are lightly browned. Remove from the oven, and cool on racks. Store in an airtight container.
