SLOW-COOKER APPLE CRANBERRY OATMEAL

- Spray 3 1/2- to 4-quart slow cooker with cooking spray. In slow cooker, mix all ingredients.
- Cover; cook on Low heat setting 6 to 8 hours. Serve porridge with brown sugar and milk or cream, as desired.

- For topping:
- Combine brown sugar, oats, flour, and salt in large bowl; toss to blend. Add butter and rub in with fingertips until mixture comes together in moist clumps. Cover; chill while preparing filling. (Topping can be prepared 1 day ahead; keep chilled.)
- For filling:
- Preheat oven to 375°F. Generously butter 13x9x2-inch glass baking dish. Combine cranberries, apples, sugar, and apple juice in heavy large pot. Bring to boil over medium heat, stirring often. Boil until cranberries are tender and juices thicken slightly, about 5 minutes. Transfer filling to prepared dish. Sprinkle topping over.
- Bake crisp until filling bubbles thickly and topping is crisp and deep golden brown, about 40 minutes. Let cool 10 minutes. Serve with ice cream.
CRAN-APPLE BAKED OATMEAL

- Preheat oven to 350°. In a large bowl, mix oats, baking powder, salt and cinnamon. In another bowl, whisk eggs, milk, sugar and oil until blended; stir into oat mixture. - Add chopped apples, cranberries, brown sugar, butter, cinnamon, ginger, nutmeg, salt, and 2 Tbsp water to a large saucepan over medium-high heat.
- Once simmering, let cook for 3-5 minutes, stirring occasionally, until apples are tender and cranberries are just starting to burst. Remove 3 Tbsp mixture to separate bowl (you'll use this as a topping).
- Add remaining 1 3/4 cups water to saucepan and let come to a simmer. Add oats and cook for about 5 minutes, stirring occasionally, until oats are cooked and mixture is creamy.
- Serve in bowls and top with reserved apple/cranberry mixture.
CRANBERRY APPLE OATMEAL
I made this one morning in an effort to use up leftover cranberries from Thanksgiving. It's filling, healthy, and delicious! If you generally make oatmeal with milk instead of water, don't! The acid in the cranberries will make the milk separate. I tried it. It will still taste okay, but it won't look very pretty.

- In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, milk and vanilla. - Preheat the oven to 180 degrees Celsius.
- Spray a few baking sheets with nonstick spray or smear with butter lightly.
- Mix the dry ingredients together: Sift the cake flour, salt and cinnamon and then stir in the oats, muesli and cranberries.
- Mix well.
- Beat the butter and brown sugar together until light and fluffy.
- Add the egg, then add the golden syrup and vanilla and blend well.
- Add the remaining wet ingredients: grated apple, bicarbonate of soda (dissolved in milk) and mix with the dry.
- Mix well and knead the dough throughly.
- Shape into small palm sized balls and place on the pre-greased baking sheets.
- Flatten with a fork to create a pattern on the top and bake for 12-15 minutes or until golden brown.
- Allow a few minutes for the cookies to cool on the baking sheets then transfer to wire racks to rest.
- Store in airtight containers.
