CRANBERRY JELLY

1 pound cranberries (about 4 cups), thawed if frozen
2 oranges
2 cups sugar
1 teaspoon ground coriander
Kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Put the cranberries in a saucepan. Remove wide strips of zest from 1/2 orange with a peeler; add to the saucepan with the juice of both oranges (about 1/2 cup). Add the sugar, coriander, a pinch of salt and 1 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
  • Remove from the heat and remove the orange zest; stir in the vanilla. Transfer to a blender and puree until smooth. Strain through a fine-mesh sieve into a serving dish, pushing the sauce through with a rubber spatula. Refrigerate until set, at least 3 hours.

2 cups fresh cranberries
2 cups white sugar
3 tablespoons water, or more as needed

1 cup golden raisins
½ teaspoon ground ginger

Steps:

  • Place the cranberries, sugar, and water in a large saucepan, and bring to a boil. Reduce heat to medium, and cook until all the cranberries have popped, 8 to 10 minutes. Stir in the apple, celery, orange zest, orange juice, pecans, raisins, ginger, cloves, and salt, and cook over medium heat, stirring frequently, until the celery is tender and the sauce is reduced, about 35 minutes. Turn off the heat, cover the saucepan, and let the chutney stand to thicken, about 15 minutes. Serve warm.

1 large green apple, peeled, chopped
1 pound fresh (or frozen, thawed) cranberries
2 cups sugar, divided, plus more for coating
2 teaspoons pectin
1 tablespoon fresh lemon juice
Special equipment:
A candy thermometer

Steps:

  • Line an 8x8" baking dish with parchment paper, leaving overhang on 2 sides. Puree apple, cranberries, 1 1/2 cups sugar, and 1 cup water in a blender until smooth. Transfer to a large deep heavy pot fitted with thermometer and cook over medium heat, whisking occasionally, until mixture is very thick and bubbly (it will sputter and splatter as it cooks; reduce heat if needed), 8-10 minutes.
  • Whisk pectin and remaining 1/2 cup sugar in a small bowl, then gradually whisk into cranberry mixture. Reduce heat to medium-low and continue to cook, whisking often, until thermometer registers 200°, 15-20 minutes (mixture will be dark red and extremely thick).
  • Whisk lemon juice into cranberry mixture, then scrape into prepared pan; smooth top. Let cool until set (it should feel firm when you gently press it), at least 4 hours.
  • Just before serving, unmold jelly onto a cutting board and cut into 1" squares. Toss jellies in sugar to coat.
  • Do ahead: Jelly can be made 1 week ahead. Store in pan, tightly wrapped, at room temperature. Cut and roll in sugar just before serving.

4 pounds crab apples
6 cups water
3 cups sugar

Steps:

  • Wash and quarter apples; place in a 6-quart saucepan. Add 6 cups water; place over medium-high heat; bring to a boil. Reduce to a simmer; cook until very soft, 45 to 60 minutes; remove from heat. Pour into a bowl through a fine mesh strainer lined with two layers of damp cheesecloth. Gather cheesecloth; tie into a bundle. Suspend from a wooden-spoon handle set over bowl; drain, without pressing solids, 1 hour, to yield about 4 cups juice.
  • Place juice in a saucepan over medium-high heat; bring to a simmer. Cook for 10 minutes; skim foam. Add sugar; stir to dissolve. Clip on a candy thermometer; cook until the temperature reaches 220 degrees, skimming foam. Pour into jars, let cool, and keep refrigerated for up to 6 months.

1 quart apple juice
1 package (1-3/4 ounces) powdered fruit pectin
2 tablespoons bottled lemon juice
3 to 6 drops red food coloring, optional
5-1/2 cups sugar
1 teaspoon ground cinnamon

Steps:

  • In a Dutch oven, combine the apple juice, pectin, lemon juice and food coloring if desired. Bring to a full rolling boil, stirring constantly. Quickly stir in sugar; return to a full rolling boil. Boil for 2 minutes, stirring constantly. , Remove from the heat; skim off foam. Stir in cinnamon. Carefully ladle hot mixture into hot sterilized jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 5 minutes in a boiling-water canner.

4 Granny Smith apples, peeled and sliced
3/4 cup of leftover cranberry sauce or canned whole cranberry sauce
2 Tablespoons flour (if your cranberry sauce is runny)
1 cup all-purpose flour
1/2 cup old fashioned roll oats
1/3 cup white sugar
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter, melted (1 stick)

Steps:

  • Preheat oven to 350*F Combine apples and cranberry sauce. Mix well. If cranberry sauce is runny, add 2 Tablespoons Flour and mix well. Place sliced apples in a 8x8 casserole dish. In a separate bowl, mix 1 cup flour, oats, white sugar, brown sugar, cinnamon and salt. Add melted butter and mix well. Crumble oat mixture on top of apples. Bake for 35 - 40 minutes or until apples are cooked through and tender to a toothpick. Remove from oven and allow to cool for 5 - 10 minutes then serve.

1 package (1-3/4 ounces) powdered fruit pectin
6-1/2 cups sugar

a 12-ounce bag of cranberries, picked over
2 large Granny Smith apples (about 1 pound)
1 cup dry white wine
1 1/2 cups sugar
mint sprigs for garnish

Steps:

  • In a large saucepan combine the cranberries, the apples, chopped coarse (not peeled or cored), the wine, and the sugar, bring the mixture to a boil, stirring, and simmer it, covered, stirring occasionally, for 15 minutes. Simmer the mixture, uncovered, stirring occasionally, for 20 to 25 minutes more, or until it is very thick and is reduced to about 3 cups. Force the mixture through a food mill fitted with the fine disk into a bowl, spoon it into an oiled 3-to-4 cup decorative mold, and chill it, covered, overnight. Run a thin knife around the edge of the mold and dip the mold into warm water for 10 seconds. Invert the mold onto a serving plate and garnish the cranberry sauce with the mint sprigs.
