CRANBERRY CHICKEN I
This is an incredibly easy recipe - and delicious! Just mix it up before going to work, then pop it in the oven when you get home in the evening. The sauce that forms while baking tastes great on rice.

Steps:
- Place the chicken breasts in a glass or non-reactive baking dish.
- Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove plastic wrap from the baking dish, and cover loosely with aluminum foil.
- Bake chicken in preheated oven until top is bubbly and slightly browned, about 1 hour and 15 minutes.

- In a large nonstick skillet, saute chicken in oil until browned on both sides. , In a small bowl, combine the salsa, cranberries, water, honey, garlic, cinnamon and cumin; mix well. Pour over chicken. Cover and cook over medium-low heat for 10-15 minutes or until a thermometer reads 170°. Serve with couscous. Sprinkle with almonds.

- Chop cranberries coarsely (can do this in food processor if desired), and place in a mixing bowl.
- Add all other ingredients and stir to combine.
- Check salsa for seasoning (salt) and spice (chiles).
- Cover, and refrigerate several hours to develop flavors fully.
CHICKEN BREASTS WITH CRANBERRY SALSA AND CILANTRO CREAM
Very fast and very easy, but oustanding flavor! The flavors of the cranberry salsa with the cilantro cream are a surprisingly good combination. One word of advice: the cilantro is a standout flavor in this dish, so if you don't like the herb, you may not like this one.

Steps:
- Combine green onions, jalapeno, vinegar and cranberry sauce in a medium sized bowl.
- Stir in 1 tbsp of the cilantro, and 1 tbsp of the lime juice.
- Set aside.
- Combine the remaining cilantro and lime juice with the cream cheese in a small bowl, combining well.
- Set aside.
- Put each chicken breast half between plastic wrap, and flatten to about 1/2 inch thickness using a mallet or rolling pin.
- Sprinkle chicken with salt and pepper.
- Heat medium skillet over medium high heat, cook chicken 4-5 minutes on each side, till done.
- Spoon cranberry salsa evenly into 4 serving plates.
- Top with chicken breasts, and add a dollop of cilantro cream over each chicken breast, then serve.

- Place the first 6 ingredients in a food processor. Finely grate enough zest from lime to measure 2 teaspoons. Cut lime crosswise in half; squeeze juice from lime. Add zest and juice to food processor. Process until coarsely chopped. Transfer to a bowl. Stir in diced tomatoes and green chiles, sugar, salt and cayenne. Refrigerate, covered, at least 4 hours., Arrange cream cheese on a serving platter; top with cranberry salsa. Serve with crackers.

- In a sauce pan, heat oil over medium-high heat; add onions and saute for 2 minutes, making sure not to brown. Stir in cranberries, pears, pear juice, vinegar, and red pepper and bring to a boil; reduce heat and simmer 20 minutes or until glazed.
- Remove from heat and stir in cilantro. Bring to room temperature. Cover and refrigerate until ready to serve.
- For each sandwich, lay out wrap on clean, flat, dry surface. Spread each wrap with 1 Tbsp mayonnaise. Top with 1/4 cup lettuce, 2 oz chilled chicken meat and 2 Tbsp Cranberry Salsa. Fold up and secure. Cut in half and seal. Keep chilled until ready to serve.
- One serving provides 1 1⁄2 oz. eq. grains, 2 oz. eq. meat/meat alternate, 1⁄8 cup fruit, 1⁄8 cup dark green vegetables
