CRANBERRY MEATBALLS AND SAUSAGE
Years ago, I found a version of this sausage and meatballs recipe in a cookbook. At first taste, my family judged it a keeper. The tangy, saucy meatballs are requested by our friends whenever I host card night. We also take the yummy dish on camping trips. -Marybell Lintott, Vernon, British Columbia

SPICY CRANBERRY SAUSAGE BALLS
Add some sweet/spicy flair to your appetizer spread! These zippy sausage balls use bulk Italian pork or turkey sausage and dried cranberries to use on a party buffet spread, or for watching the game. I just love finger foods that are just a bite or two, and these fill the bill. Add some extra heat with optional red pepper flakes, or dial down the heat and use sweet Italian sausage instead of the hot, if you prefer. Either way, you will enjoy the tangy sweetness the cranberries bring!

CRANBERRY STUFFING BALLS
Meet the Cook: If you're looking for a different stuffing this year, you'll find these balls are both tasty and easy to prepare. Cooking has been a favorite pastime of mine since my husband and I retired (I used to operate a beauty salon). We had 80 acres and kept 2-1/2 of them to build our new country home on. -Bernadine Dirmeyer, Harpster, Ohio

- To make the sausage, in a large mixing bowl stir together the pork, cranberries, sage, salt, brown sugar, thyme, chipotle chile powder, nutmeg, and cayenne. To test the flavors, heat up a small skillet on medium-low heat and add smidge of vegetable oil. Add a marble-sized ball of the sausage to the skillet and heat it for about 4-5 minutes, flipping once. Turn off the heat and when cool enough to handle, taste the sausage. Make any spice adjustments as desired. The sausage can be used immediately or stored covered in the refrigerator for 4 days.
- To make the sausage balls, preheat the oven to 350°F and line a baking sheet with parchment paper.
- Whisk together the flour, cornmeal, baking powder, rosemary, sage, salt, and cayenne until well combined. Work in the butter with a pastry blender or your hands until well distributed. Stir in the cheese, sausage, and milk, and then mix until well combined. The dough should be soft enough to form into small balls, though if it’s too dry, you can add more milk a teaspoon at a time until the dough can be easily shaped.
- Scoop out a tablespoon of the dough and then roll it into a round ball. Place the balls 1/2-inch apart on the baking sheet, and bake for 15-20 minutes or until the sausage is cooked and the cheese has melted. Serve warm.

- 1. Preheat oven to 200C fan-forced (220C conventional) and line a baking tray with baking paper. Blitz the bread in a small food processor to produce coarse breadcrumbs.
- 2. Heat a small frypan over medium heat and add the butter, onion and garlic. Fry for about 3 minutes, until the onion is softened but not browned. Combine the onion mixture (including any butter in the pan) with the breadcrumbs, mince, bacon, cranberries, parsley and thyme, along with a few tablespoons of water, and season very well with salt and pepper. Divide mixture evenly into six portions.
- 3. Cut each puff pastry sheet in half and spoon one portion of the mince mixture along the long side of one pastry half, shaping into a long sausage shape. Brush a little water along the opposite long edge and roll up each sheet to contain the filling, pressing to seal. With the seam side down, cut each roll into quarters with a sharp knife, then brush with beaten egg and place on the prepared tray.
