4 Old El Paso™ flour tortillas for burritos (8 inch; from 11-oz package)
1 tablespoon butter, melted
8 slices (about 1 oz each) Irish Swiss cheese
1 cup chopped leftover corned beef
1/2 cup well-drained sauerkraut
Thousand Island dressing, if desired

Steps:

  • Heat nonstick griddle or large skillet over medium heat. Brush 1 side of each tortilla with melted butter; place tortillas, buttered side down, on griddle.
  • Top each tortilla with 1 cheese slice, 1/4 cup corned beef, 2 tablespoons sauerkraut and another cheese slice. Fold tortilla in half over filling. Cook 3 to 5 minutes, turning once, until golden brown and cheese is melted.
  • Cut each quesadilla into 4 wedges. Serve with Thousand Island dressing.

Steps:

  • Heat up a pan to medium low heat. Butter one side of each quesadilla. Place one buttered side tortilla down in hot pan. spread cheese and corned beef all over - allowing 1/2 in around edge to remain untouched. Place top tortilla on, butter side up. Once bottom tortilla browns and crisps, flip and cook on other side. When cheese is properly melted and gooey, remove from pan, slice up and consume!

On a road trip across country we stopped in a restaurant in New Mexico and tried these - I can't remember now what they called them but they were so good I asked for the recipe -- nothin' to it & the best use of your left over corned beef I can imagine!

1/4 cup corned beef, cooked & chopped
1/4 cup monterey jack cheese, shredded
1 tablespoon diced green chilis (I use Ortega)
2 flour tortillas

Steps:

  • Place 1 tortilla in skillet, arrange cheese, corned beef & chilies around surface, top with 2nd tortilla & cook over low heat until inside begins to melt & tortilla is lightly browned, flip over (I usually mash the whole thing down before I do this to avoid a mess) and brown other side until cheese is melted & meat is warmed through. You can add a smidge of oil to the skillet if you like a more browned tortilla, gives it a crispier finish.
  • Slice & enjoy! Of course you can make as many as you want, I just gave an example for one -- . These are so yummy and give you something to do with that left over corned beef! Enjoy!

I made these for my families lunch. When I made my future hubbies he had his on wheat tortillas. My future hubbies tortillas were 10-inch so I doubled the meat and cheese. I used deli corned beef. I also use thousand island salad dressing on our quesadillas. I recommend draining the sauerkraut really well before making these or having plenty napkins on hand as they are messy. We really liked these quesadillas my family thought they were so good. I got this recipe from Tops Market courtesy of the Texas Beef Council.

4 slices swiss cheese
1 cup sauerkraut
thousand island dressing
4 flour tortillas

Steps:

  • Preheat griddle or skillet over medium-high heat.
  • Spread one side of each tortillas with dressing.

1/4 cup mayonnaise
2 large flour tortillas
1 cup shredded Monterey Jack cheese
1 cup frozen roasted corn, thawed
1/2 cup crumbled Cojita
1/2 small avocado, diced
2 tablespoons chopped jarred jalapenos
2 tablespoons chopped fresh cilantro
1 teaspoon ancho chile powder
1/4 cup jarred salsa, for serving
1/4 cup jarred salsa verde, for serving
Tortilla chips, for serving

Steps:

  • Place a skillet over medium heat.
  • Spread half of the mayonnaise on one of the tortillas and place in the hot skillet mayonnaise-side down.
  • Top with half of the Monterey Jack. Add the corn, Cojita, avocado, jalapenos and cilantro. Sprinkle over the ancho chile powder and remaining Monterey Jack.
  • Spread the remaining mayonnaise on the other tortilla, then place on top mayonnaise-side up, and press. Cook until the bottom tortilla is golden and crisp, 2 to 3 minutes, then flip the quesadilla and cook until the second side is golden, an additional 2 to 3 minutes.
  • Transfer the quesadilla to a cutting board and slice. Serve with the salsas and tortilla chips.

2 cups grated Monterey Jack (about 1/2 pound)
1 cup cooked corn

Steps:

  • Arrange half the tortillas in one layer on a large baking sheet and brush them lightly with some of the butter. 1 cup fresh or frozen corn
3 green onions, thinly sliced

From the BBQ chicken to the Buffalo burrito, I've had them all, but they've got only one type of quesadilla. So I've decided to take one of my favorite burritos from there, the cheeseburger burrito and apply it to quesadilla form. Served with a side of fries and a Coke®, it's what I call my most recent of culinary triumphs. Serve with a side of ketchup, yellow mustard, and sweet relish.

½ small yellow onion, chopped

1 tablespoon Worcestershire sauce

Steps:

  • Heat a skillet over medium heat. Add olive oil. Cook and stir onions and red bell pepper until starting to soften, about 3 minutes. Add corn and serrano pepper; cook 2 to 3 minutes. Add garlic and cook 1 minute more.
