CRAB AND ROASTED RED PEPPER STRATA

Steps:
- Butter 10-inch-diameter cake pan with 2-inch-high sides. Whisk eggs and half and half in medium bowl to blend. Melt butter in heavy large skillet over medium-high heat. Add onion and celery; sauté until soft, about 5 minutes. Add peppers and garlic; sauté 2 minutes. Remove from heat. Stir in green onions, parsley and thyme. Transfer mixture to large bowl. Add crab and bread cubes and toss to combine. Add egg mixture, salt, and pepper; mix until well combined. Transfer to prepared baking dish. Let stand 30 minutes or cover and refrigerate overnight.
- Preheat oven to 350°F. Sprinkle strata with cheese. Bake until brown and puffed, about 1 hour. Cool on rack 30 minutes (center will fall). Using sharp knife, cut around edge to loosen. Cut into wedges and serve.

- Saute mushrooms in 1 tablespoon of oil. Season with salt and set aside.
- Whisk half-and-half, eggs, salt and pepper until smooth. Spray a 9-by-13-inch Pyrex or ceramic baking dish with vegetable cooking spray.
- Line bottom with 6 slices of bread. Scatter half of the ham, and half of the mushrooms over the bread, then sprinkle with half of the scallions and cheese. Pour 1 cup of egg mixture over the top. Repeat layers with remaining bread, ham, mushrooms, cheese and scallions. Slowly pour remaining egg mixture evenly over top. Cover with plastic wrap, then weight down casserole with 3 16-ounce cans for at least 15 minutes to submerge ingredients. (Can be refrigerated overnight, but return to room temperature before baking.)
- Adjust oven rack to middle position. Bake in preheated 325-degree oven until custard is just set, about 50 minutes. Turn on broiler and broil until strata is spotty brown and puffy (watch carefully), about 5 minutes longer. Let stand for 8 to 10 minutes, then serve immediately.

- Spray 2-quart casserole with cooking spray. In casserole, mix bread cubes, crabmeat, cheeses, capers and onions.
- In medium bowl, beat eggs with wire whisk. Beat in milk, sherry, mustard and Worcestershire sauce; pour over bread mixture. Cover tightly; refrigerate at least 2 hours but no longer than 24 hours.
- Heat oven to 350°F. Bake uncovered about 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Sprinkle with additional onions and bell pepper.

MEXICAN CHORIZO STRATA

- Heat a drizzle of EVOO in a skillet. Add the chorizo and cook, crumbling with a wooden spoon, until browned. Drain off the fat.
- Arrange the bread in a casserole dish. Top with the chorizo and then the roasted chiles.
- Whisk together the milk, butter, hot sauce and eggs in a bowl and sprinkle with salt and pepper; pour over the chiles. Top with the cheese. Cover and refrigerate at least overnight and up to 2 days.
- To serve, bring the strata to room temperature and preheat the oven to 325 degrees F. Bake the strata for 1 hour.
- Meanwhile, whizz together the sour cream, avocado and lime juice in a food processor and season with salt and pepper.
- Top the strata with tomatoes, cilantro and dollops of the avocado sour cream.

- Grease the bottom of a large casserole dish (13X9 works well).
- Place a single layer of bread in the pan, using 1/2 the bread.
- Cover with 1/2 asparagus, cheese, tomatoes, chives and pine nuts.
- Repeat layers, starting with bread.
- In a large bowl, combine eggs, milk, garlic, salt and pepper.
- Pour evenly over layers.
- Cover and Refrigerate overnight.
- Preheat oven to 350 degrees.

- Preheat oven to 375 degrees F. In a heavy-bottomed 2-quart sauce pan, melt butter over medium-high heat. Add onions, celery, red and yellow bell peppers and garlic.
- Sauté 3 to 5 minutes or until vegetables are wilted.
- Be careful not to brown vegetables.
- Add 1/2 pound crawfish tails and saute 3 additional minutes. Sprinkle in flour, blending well into the mixture.
- Using a wire whip, whisk cream into sauce pan stirring constantly until thick cream sauce is achieved.
- Reduce heat to simmer, add white wine, lemon juice and hot sauce. Sprinkle in half of the cheddar cheese stirring the mixture constantly. Season to taste using salt and pepper.
- Add green onions and parsley for color. If mixture becomes too thick, add a small amount of hot water or whipping cream.
- Place equal parts of remaining crawfish tails in the bottom of six au gratin dishes, top with sauce and sprinkle with remaining cheddar cheese.
- Bake for 15 minutes or until cheese is bubbly.

- Spread English muffin halves with the 3 tablespoons butter.
- Line a greased 2 quart rectangular baking dish with half the muffins, buttered side up.
- In a medium bowl combine the crabmeat and cheeses and layer this mixture over the muffins in the dish; sprinkle with capers and top with remaining muffins; buttered side up.
- In a large skillet, cook onions in the 1 tablespoons butter over medium heat for 5 minutes or until l tender.
- Stir in sherry and Worcestershire sauce.
- Bring to just boiling and remove from heat.
- In a medium bowl, combine eggs, milk, mustard, parsley, and salt and pepper to taste (dash of each).
- Stir in onion mixture.
- Carefully pour over muffin layers in baking dish and press muffins lightly with back of a large spoon to moisten tops.
- Cover and chill overnight.
- Preheat oven to 350°F and bake uncovered for 50 minutes or until muffins are browned and knife comes out clean when inserted in the middle.
- Let stand 10 minutes before serving.

CRAWFISH STRATA
Louisianians will add seafood to almost anything. This is a wonderful breakfast and brunch dish. This dish must sit 8-10 hours before baking, so adjust your menu accordingly.

- Saute vegetables in butter until just soft.
- Add the crawfish tails and simmer for 7 minutes.
- Drain this mixture, reserving the liquid.
- Season with salt and pepper to taste.
- In a 9X13 inch baking dish which has been lightly greased, place 1/2 of the cubed bread.
- Cover the bread cubes with the crawfish mixture and sprinkle 1/2 of the cheese on top.
- Cover this with the remaining bread cubes.
- In a one quart measuring cup, place the liquid drained from the crawfish-veggie mixture and the beaten eggs. Add milk until it reaches the 4 cup mark.
- Mix in the dry mustard and whisk well.
- Pour this liquid mixture over the bread mixture and sprinkle remaining cheese on top.
- Cover and REFRIGERATE OVERNIGHT or at least 8 hours.
- Preheat oven to 350 degrees.
- Bake, uncovered, for 45-50 minutes.
- You can tell this is done when a knife inserted into the middle comes out clean.
- If the top begins to brown too quickly, place a sheet of foil over the top for the last 15 minutes of cooking.
- Let sit for 15 minutes before serving.
