- In a large skillet coated with cooking spray, brown sausage. Transfer to a 5-qt. slow cooker. Stir in beans, tomatoes, vegetables, garlic and seasonings., Cook, covered, on low until vegetables are tender, 6-8 hours. Serve with rice.

BAKED BEANS WITH GROUND BEEF AND SAUSAGE RECIPE
Well-seasoned baked beans are taken to a new level with the addition of ground beef, hot sausage, and bacon.

Steps:
- Preheat the oven to 350˚F. Fry bacon in a large skillet until crispy. Remove from pan and discard grease.
- In the same skillet, brown ground meat, then drain off the excess grease. Add onions and bell peppers. Cook until vegetables soften. Add pork and beans, barbecue sauce, ketchup, mustard, Worcestershire sauce, soy sauce, and brown sugar to the meat and simmer for 5 minutes.
- Transfer beans to a greased 2-quart dish. Crumble bacon over the top. Cover with aluminum foil and bake for 45 minutes. Remove foil and continue to bake for an additional 10 minutes. Allow the beans to stand an additional 10 minutes before serving.

RED BEANS AND RICE WITH SAUSAGE
This recipe was given to me by my sister. It's a hearty dish, and wonderful for the cold winter months. To make a little meatier, I cut up a small ham steak in cubes and add the cubed ham the last 20 minutes. Serve over cooked rice.

Steps:
- Pick over the dried beans, and soak them in water overnight.
- The next day, drain off the soaking water, and place the beans in a large pot or slow cooker. Cover with water, and stir in the dried garlic and onion, salt, bay leaf, sugar, cayenne pepper, celery seed, cumin, and crushed red pepper flakes. Push the ham hock down into the beans. Bring to a boil, reduce the heat, and simmer over low heat for 3 to 4 hours.
- Stir in the smoked sausage, simmer for 20 more minutes, and serve.

- In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

EASY MAPLE BEANS WITH SAUSAGE
Adapted from Woman's Day, with lighter ingredients. I like to use the baked beans with onions in them(even though there are onions in this recipe too). The amount of mustard is correct - in fact, if you like things a bit zestier, you might even want to add more at the end. This recipe is fairly mild & kid friendly.

This is one of my favorite bbq and potluck recipes that I have used over the past 30+ years. It has a nice balance of flavors and always receives nice compliments. I hope that you enjoy it too.

Steps:
- 1. Preheat oven to 375 degrees.
- 2. In a small saucepan, cook apple and onion in a small amount of boiling water for 5 minutes or until crisp-tender; drain.
- 3. In a large mixing bowl, stir together the cooked apple and onion, beans, sausage, raisins, ketchup, mustard, cinnamon and cayenne pepper.
- 4. Pour bean mixture into a 1-1/2 Qt. casserole that has been sprayed or wiped with oil.
- 5. Bake in oven, uncovered, for 1 hour, stirring once.
VIKKI'S RED BEAN SAUSAGE
I went to a great restaurant in Savannah one summer and had red beans and rice. When I came home, I tried to figure out just how they made it. I haven't figured it out exactly, but this recipe is a pretty good imitation. Serve with hot white rice, fried potatoes, and cornbread if desired.

- Heat oil in a large skillet over medium high heat. Add sausage and onion and saute until onions are translucent. Add bell pepper, garlic, parsley, paprika, cayenne pepper and ground black pepper. Saute all together, stirring occasionally, until bell pepper is a little tender (about 10 minutes).
- Drain and rinse kidney beans. Add all kidney beans, tomatoes and chile peppers. Stir to mix together, reduce heat to medium and let simmer for 25 to 30 minutes. Add salt to taste while simmering. Serve hot.
