Steps:

  • Soak cashews in a bowl of water, 8 hours to overnight.
  • Drain cashews and discard water. Place cashews, nutritional yeast, and salt in the bowl of a food processor; blend until smooth and creamy, 10 to 15 minutes. Add yogurt; mix until well combined. Stir in chopped chives. Let sit at room temperature for 1 hour before refrigerating.

1 cup raw cashews, soaked beforehand (longer the better! preferably overnight but 30 mins will do)
1/4 cup water
1 tablespoon nutritional yeast (can be omitted)
1 teaspoon salt
1 dash black pepper
1 small garlic clove
1 tablespoon chopped fresh chives (and more for garnish)
1 -2 tablespoon fresh lemon juice

Steps:

  • Drain your soaked cashews and then blend them up with all of the ingredients bar the water.
  • Scrape down sides and add water.
  • Blend with a high-powered blender, scraping down sides as you go, until its smooth.
  • Scrape contents into a bowl/contained. Add the remaining chives on top and cover and refrigerate.
  • Can be eaten immediately but thickens up when in the fridge.
  • Can keep for probably up to 5-7 days but unlikely it will last that long!

  • Process, off and on, until the mixture is smooth. If you would like it a little thinner add some more water. I can't imagine you would need over 4 tablespoons water total.

  • Making Vegan Cream Cheese 1. While the garlic is roasting, boil the kettle. 2. Measure out the raw sunflower seeds and pour them into a bowl. 3. Cover the sunflower seeds with hot water from the kettle and allow to soak for 15-20 minutes. (See notes) 4. Drain the sunflower seeds and add to a blender with the roasted garlic cloves and the rest of the ingredients. 5. Blend on high for about a minute, then stop to scrape down the sides of the blender with a spatula. Add another tablespoon or two of plant milk if your blender is struggling. 6. Continue blending until you've reached the desired consistency. The longer you blend, the smoother the cream cheese will become. 7. Use a spatula to transfer the cream cheese to a dish with a lid for storage. Will keep up to 5-7 days in the fridge.
