OLD FASHIONED CREAM CHEESE PIE
Extra Creamy and smooth, this Cream Cheese Pie recipe creates the most luxurious Icebox Pie. Very easy to make, this pie is wonderful on Holidays or as a summertime dessert.

Steps:
- Preheat oven to 350℉.
- Place graham crackers in a food processor and process until crumb are formed or place them in a zipped topped plastic bag and crush them with a rolling pin.
- Place crumbs into a medium sized mixing bowl. Add melted butter to crumbs and mix until well combined. Mixture will be granular and look similar to rough sandy.
- Transfer cookie crumbs into a 9 inch pie pan. Using the back of a 1/4 cup measuring cup press cookie mixture tightly into the bottom of the pie pan and up the sides.
- Bake for 10-12 mins. Remove from oven and set aside.
- To a stand mixer or large mixing bowl add cream cheese and beat until smooth.
- Add sugar, vanilla and lemon juice. Continue beating umtil well combined.
- Add 1 egg and beat until smooth. Scrape down sides of bowl and repeat with second egg.
- Pour filling into graham cracker crust. Bake for 15-20 mins.
- Pull from oven and let cool for 5 mins.
- Meanwhile, mix sour cream, sugar and vanilla together until smooth.
- Gently spread sour cream mixture over pie.
- Return to oven to bake an additional 10 mins.
- Let cool for about 10 mins and then place in refrigerator to chill for 5 hours before serving.

CREAM CHEESE PIE
Steps:
- Combine cream cheese, eggs, 1 cup sugar, and 1 teaspoon vanilla in the bowl of an electric mixer. Mix on low speed until smooth. Pour filling into graham cracker crust.
- Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove pie from oven. Raise oven temperature to 450 degrees F (230 degrees C).
- In a small bowl, blend sour cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla together. Gently spread mixture over pie.
- Bake for five minutes before serving.

STRAWBERRY-CREAM CHEESE PIE
An easy, fresh strawberry pie with a touch of something more... a layer of sweetened cream cheese. Top with whipped cream if you'd like.

- Beat cream cheese with an electric mixer until creamy. Add a little powdered sugar at a time, and beat slowly until incorporated. Mix in vanilla.
- Spread cream cheese mixture into the pie crust. Refrigerate until firm, 15 to 30 minutes.
- Meanwhile, combine 3/4 cup of the strawberries, sugar, water, and cornstarch in a blender. Blend lightly. Reserve remaining strawberries.
- Pour blended strawberry mixture into a saucepan over medium heat; stir constantly until boiling. Stir for an additional 2 minutes once it boils; it should thicken very quickly. Remove from the heat and stir a few times while cooling, about 3 minutes.
- Remove chilled pie from the refrigerator and arrange reserved strawberries on top of the cream cheese layer. Pour thickened sauce over top. Return to the refrigerator for at least 2 hours before serving.

MOM'S CREAM CHEESE PIE

- For the graham cracker crust: Preheat the oven to 350 degrees F.
- Combine the graham cracker crumbs, melted butter, confectioners' sugar and cinnamon in a small bowl. Press into a 9-inch pie pan. Bake for 10 minutes. Cool completely before filling. Leave the oven on.
- For the cream cheese filling: Put the cream cheese, granulated sugar, vanilla and eggs in a medium bowl and beat with a hand mixer on medium speed until smooth. Pour the filling into the cooled crust and bake until set, 15 to 20 minutes. Cool 5 minutes before topping; leave the oven on.
- For the sour cream topping: Combine the sour cream, granulated sugar and vanilla in a small bowl and mix until smooth. Spread onto the pie and bake 10 minutes. Cool to room temperature, then refrigerate until cold, about 4 hours. Slice and serve.
QUICK CREAM CHEESE PIE
Steps:
- Spread a thin layer of the fruit glaze onto the bottom and sides of the pie crust. Top with a single layer of fresh fruit.
- In a large bowl, beat cream cheese until smooth. Mix in milk until all cream cheese lumps are gone. Add pudding mix and beat until completely blended. Fold in 1/2 of the whipped topping until blended.
- Spoon 1/2 the mixture into the pie crust. Add another layer of fruit glaze and fruit, then the rest of the cream cheese mixture. Put on final layer of fruit glaze and fruit; top with remaining whipped topping. Decorate the top of the pie with remaining fresh fruit. Cover and refrigerate overnight.
