Steps:
- Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper (best for clean-up) or a silicone baking mat. Place a baking rack on top of the baking sheet. Set aside.
- Cut the jalapeño peppers in half lengthwise; remove seeds and center membrane. Set aside.
- Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. You could also do this by hand using a rubber spatula. Salt to taste - I add just a pinch. Spoon filling equally among all 24 jalapeño halves.
- Wrap each stuffed jalapeño with a half slice of bacon and stick a toothpick through the center to assure the bacon stays in place. Place each on the baking rack and bake for 25-28 minutes or until the bacon is crisp to your liking. I like to turn the oven to broil for the last minute or two to get things extra crispy. Serve immediately. Cover leftovers and keep in the refrigerator for up to 4 days.

Steps:
- Preheat the oven to 375 degrees.
- On a cutting board, slice the heads off the jalapenos and discard. Slice the jalapenos in half lengthwise, remove the seeds and ribs and discard. Leave a little rib if you like them hot. Rinse the jalapenos in a strainer and set aside.
- In a separate bowl, combine the cream cheese and chives until well mixed. Spoon or pipe the mix into the halved jalapenos.
- Grab your 12 slices of bacon, and cut them in half. Wrap each jalapeno with half a piece of bacon.
- Obtain a baking sheet and square grate if you have one. Disperse all of the jalapenos onto the grate and bake in the oven for 35 minutes, or until the bacon is thoroughly cooked.
- *If you don't have a grate, line the baking sheet with foil and parchment on top of the foil. Bake directly on that.*
- Remove from the oven. Remove the jalapenos with tongs to a serving platter or plates. Enjoy! Optional - serve with ranch.

Steps:
- 1. Slice jalapenos in half and dig out seeds and veins. (I use the tip of a carrot peeler)
- 2. Fill the "cup" of the jalapeno with cream cheese (you can add cheddar cheese to the cream cheese too if you prefer)
- 3. If you have long slices of bacon, cut them in half. Then wrap bacon all the way around the jalapeno.
- 4. Place wrapped jalapeno on a pan covered with tin foil and sprayed with non stick cooking stray. (If you have a wire rack, place it on top of the pan to keep the jalapenos out of the grease)
- 5. Bake @ 300-350 until bacon is fully done.

CREAM CHEESE STUFFED JALAPENOS WRAPPED IN BACON
Delicious stuffed jalapeno recipe I got from my sister. Great for parties, especially barbecues. You can cook either in the oven or on the grill, but I prefer the grill. You can also substitute Anaheim peppers for a little less heat.

Steps:
- Wash and remove the seeds of the jalapenos by making a "T" cut in the jalapenos and scooping out the seeds. (A "T" cut is where you cut the pepper horizontal about half way and then in the middle of the slit, you cut a vertical slit forming a "T" cut in the pepper.).
- In a bowl, combine cream cheese, sun dried tomatoes, and garlic powder. Using a teaspoon "stuff" the jalapeno with the cream cheese mixture.
- Wrap jalapeno in bacon and secure with a toothpick. (If you are cooking on the grill remember to soak toothpick in water for 15 minutes before securing pepper with it, to ensure it doesn't catch fire on the grill).
- Cook on the grill or bake at 450° F for 15 minutes or until bacon is cooked through.
- Enjoy!

- Fire up. Prepare a smoker for indirect cooking. Alternatively, you can set up a charcoal grill for 2-zone cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grill's charcoal grate in order to create direct and indirect cooking zones. Adjust the smoker or grill vents to bring the temperature to about 225°F and add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 225°F on the indirect side.
- Prep. Cut the tops off of the jalapeños. Remove the seeds and ribs from the interior of the jalapeños with a jalapeño corer. Or use the handle end of a small kitchen spoon to scrape the ribs and seeds from inside the jalapeños.
- Combine the cream cheese and cheddar cheese in a medium mixing bowl and blend well. Stuff the peppers with the cheese mixture.
- Cut the bacon slices in half crosswise. Wrap each one with 1/2 slice of bacon and secure the bacon with a toothpick.

- Begin by preheating your oven to 350 degrees F. Line a sheet pan with aluminum foil and set a wire cooling rack on top of it. Lay out the bacon evenly. Bake for about 8 minutes. (The bacon will not be fully cooked; this is just to get it started.)
- In the meantime, prepare your jalapeños by slicing them in half. Then remove the seeds and white flesh with a spoon. (It's highly recommended that you wear gloves during this process.)
- In a medium bowl, mix together the cream cheese and Craisins. Then use a spatula to fill the jalapeño halves with the cream cheese mixture. The cream cheese should be level with the top of the jalapeño half.
- Next, wrap your filled jalapeños with the partially-cooked bacon. Depending on the size of the jalapeño, you can use a whole slice of bacon or cut it in half. A whole slice is recommended. Just tuck the bacon into itself or the jalapeño to keep it tightly wrapped.
