GREEN SALSA WITH AVOCADO
This avocado green salsa is made with raw ingredients and is very common in central México where it is used for tacos "Al Pastor" or other grilled meats. It is a very refreshing version of the cooked tomatillo salsa. I hope you enjoy this delicious recipe.

Steps:
- Place the tomatillos in the blender with the chopped onion, serrano peppers and water. The process to a coarse texture.
- Add the cilantro and the pulp from the avocado. Process again to desired texture, either smooth and creamy or chunky. Add salt to taste creamy avocado green salsa.

- Add everything to a food processor or blender and pulse to desired consistency. I like mine smooth and creamy but it is also delicious as a chunky salsa.
- Taste and adjust flavor if needed. Add more avocado if it is too spicy. Add more jalapeno if it isn't spicy enough. Add lime juice or cilantro for more flavor. Also make sure to use enough salt since it really brings out all the flavors.

CREAMY SALSA VERDE
One of my new coworkers, Maria, brought me a zip-top bag of washed and prepped ingredients and told me to just throw it all in a blender. In a matter of seconds, this delicious salsa verde was born! The salsa gets its creaminess from the addition of avocado. For a mild salsa, remove the seeds and membranes from all 3 jalapenos; for extra spicy, leave them all in. I prefer to leave the seeds in only 1 jalapeno.
